The milk serum is a by-product of the production of cheese, which has a high nutritional value, although it is considered an extremely troublesome pollutant due to its high organic load and volume generated. Studies were undertaken to draw up alternative means for production of bacitracin, using milk serum in substitution of glutamic acid - used in the original composition of the production, and adding different concentrations of glucose in temperatures of 28 oC and 37 oC. The detection of the antibiotic was carried out by biological method of formation of characteristic halos. The results showed that bacitracin produced at a concentration of 10 g of glucose at 37 oC had the highest inhibition zone (16 mm). The reuse of milk serum in the production of bacitracin appears as a new alternative to avoid the disposal of waste in the environment. %U http://www.redalyc.org/articulo.oa?id=81021138008
