%X Flavonoids include many of the most common plantpigments. They are consumed as part of the humandiet. Flavonoids can be divided into several classesdepending on their structure. They are responsible formuch of the flavor and color of fruits and vegetables.The flavones and flavonols give yellow or orange colors,the anthocyanins red, violet or blue colors. The auronesare golden yellow pigments while flavanones andflavanonols are either colorless or only slightly yellow
