Les donn¨¦es pr¨¦sent¨¦es sont issues d¡¯une enqu¨ºte qualitative portant sur les processus de valorisation dans le d¨¦partement de la Dr me. Nous pr¨¦senterons la construction des normes internes au syst¨¨me d¡¯action de valorisation rep¨¦r¨¦ sur ce territoire ¨¤ travers trois de ses fondements : l¡¯adh¨¦sion ¨¤ des normes de production, l¡¯adh¨¦sion ¨¤ des normes de distribution ainsi qu¡¯¨¤ une inscription dans la vie culturelle locale. ¨¤ travers ces trois aspects, nous verrons se profiler la logique de valorisation caract¨¦risant ce syst¨¨me. Cette logique de valorisation transmet des valeurs sp¨¦cifiques aux productions et participe ainsi ¨¤ les l¨¦gitimer. La mise en relief de cette forme de l¨¦gitimit¨¦ est l¡¯objectif de la r¨¦flexion propos¨¦e. The aim of this article is to highlight the way in which local food products are given legitimacy, presenting qualitative data from a survey of product enhancement activities in the department of the Dr me. It describes the internal standards defined by three tenets underlying those activities: adherence to production standards; adherence to standards of distribution; and adherence to local cultural life.
