The farmers have a choice ¨C grow the traditional or alternative crops. The soft wheat (Triticum aestivum) have a bigger yealds but the grain price is low. So it is reason why is for farmers interrested to grow hulled wheat like emmer (Triticum diccocum), spelta (Triticum spelta) or einkorn (Triticum eincorn). They provide lower yields but on the better quality, which could be sold in higher prices.
