%X Thefruitsof Litchi chinensis Sonn.cv.Huaizhiatmaturityof85%wereusedintheexperiment.7.5 kg of fruitswerepackedby0.05mmplasticfilmandstoredinsealedfoamboxes,in whichdifferent weightsof icewereaddedsurroundingthefruitpackage.After72hoursof storage,thefruitsweretaken outandplacedfor24hoursat ambienttemperature.Pericarpof thefruitswas observedby SEM.The resultsshowedthatice additioncouldeffectivelymaintainthe integrityof pericarpand postponethe breakdownof pericarptissue.The surfaceof smallemergenceson pericarpof lessmaturefruitswas smooth,whilethatof morematurefruitswasrugate.Rugatehoneycomb-likeconcavityappearedon pericarpof collapsingfruitsafterthe smallemergencesbeingdestroyed.The effectsof ice-addition percentagesandstoragedurationon thechangesinfruittemperaturewereanalyzed.Therelationshipbe-tweenpericarpstructureandpreservationof litchifruitsis discussed.
