%X hina is rich in garlic resource. Garlic is considered as a kind of nutrientand healthy food. This paper introduces variety resources of garlic at home, reports analytical results of garlic nutrient components, including aminoacids, vitamines and trace elements. It also discusses physiological functions and medicalvalue of garlic and analyses its major chemical compositions that hacve bechnologydal and anticancer functions. In the last part of the paper, processing technologyfor deodorization and a series of garlic products are illustrated- The paper givesdetailed, systematic data for exploitation and utilization of garlic resource.
