%X Lipase production by fermentation with immobilized Rhizopus arrhizus was studied, in which the lipase activity by perlite adsorbtion Rhizopus cells reached 125 U/ml, 8 times as that by fermentation without carriers. The immobilized Rhizopus arrhizus cells on carriers after fermentation also showed high lipase activity. Synthesis of monoglyceride by lipase and the immobilized cells on carriers after fermentation was tested, and proved to be an effective method for production of monoglyceride.
