%X Supersaturated coefficient is primary controlling parameter in crystallization of the syrup.A new Optronic measuring principle and method for on-line controlling supersaturated coefficient in the surup is presented in this paper.The theoretical model,system structure and applied result in crystallization technological process of the.monocl candy are described in detail.
