%X On the basis of the reaction of 2-nitro-5-thiobenzoate with thiosulfinates, a convenient assay of allicin is introduced. One mole of allicin reacts with two mole of NTB producing two mole of disulfide derivatives and resulting in decrease at absorbance at 412 nm. By this method, the concentration of allicin can be readily determined.
