%X The optimum conditions of hydrolysis of brerwer's grains by cellulase and the influence on the ratio of cellulose conversion and polysaccharide hydrolysis by means of pre treatment methods were studied. Under the optimum conditions, 10.8g reducing sugar(RS) could be produced from Per 100g brewer's grains. The hydrolysate will be used to culture yeast to extract ergosterol, the residual lees is raw material of production of feed containing the fungal protein.
