Toujours est-il que des farineux rev¨ºtent le caract¨¨re tr¨¨s particulier, autant dire vital, de support de bonheur jusque-l¨¤ r¨¦serv¨¦ ¨¤ la viande : ce sont des gateaux-semelle confectionn¨¦s en grand nombre pour la f¨ºte du nouvel an lunaire par tous les foyers. Chaque visiteur re oit en gage d¡¯hospitalit¨¦ un gateau-semelle qu¡¯il rapporte ¨¤ la maison. Ce gateau garantit du bonheur ¨¤ l¡¯h te qui l¡¯offre et au visiteur qui l¡¯emporte. L¡¯anthropologie des techniques et de l¡¯alimentation permet d¡¯¨¦tudier, ¨¤ partir des techniques de confection, des pratiques de distribution et de consommation d¡¯une patisserie, le transfert d¨¦concertant sur ces gateaux du support mat¨¦riel de bonheur qu¡¯¨¦tait la viande. L¡¯article fait appara tre que les modalit¨¦s de partage d¡¯une patisserie marquent l¡¯¨¦volution de l¡¯organisation sociale de la soci¨¦t¨¦ mongole. An odd soleshoe-shaped pastry: the new support of happiness of Buddhist halh Mongolians.Mongolian people present themselves as a nomadic herder people and as meat eaters. The fact remains that farinaceous foods take on a very particular nature, almost vital, and become a kind of support of happiness so far reserved to meat: soleshoe-cakes are made in large quantities for the lunar New Year feast in every household. Each visitor receives a soleshoe-cake as a token of hospitality and takes it home. This cake guarantees happiness to both host and visitor. The anthropology of techniques and food allows to study, from analyzing the techniques of confection and practices of distribution and consumption of this pastry, the disconcerting transfer from meat to these cakes as a material support of happiness.
