As the ¡®actors of innovation¡¯ these people reinvent their relationship with tradition. This article is based on a study of three rural areas in the department of the Midi-Pyrenees: Southern Aveyron, Pays du Haut Rouergue (North Aveyron) and Pays d¡¯Armagnac in the Gers. It highlights three main profiles of innovators in the field of food heritage, each one corresponding to a form of organization that in turn flows from a particular relationship with the territory and its local players. It also highlights the importance of local perceptions and attitudes towards these innovators, demonstrating the pivotal role of local companies in the appropriation of innovative process. Les cultures alimentaires sont ¨¦volutives et font l¡¯objet de diff¨¦rentes formes d¡¯innovation. Qu¡¯ils soient artisans, industriels ou institutionnels, reconnus ou plus marginaux, les diff¨¦rents acteurs de la fili¨¨re agro-alimentaire portent ces mouvements d¡¯innovation, renouvellant ou inversant ainsi leur rapport ¨¤ la tradition . Cette derni¨¨re se trouve alors remani¨¦e dans le projet de valorisation. L¡¯¨¦tude fait ressortir trois principaux profils d¡¯innovateurs dans le champ de la patrimonialisation alimentaire. Chacun de ces profils correspond ¨¤ une forme d¡¯organisation, elle-m¨ºme inscrite dans un rapport particulier au territoire et au syst¨¨me d¡¯acteurs local. Cette typologie souligne par ailleurs l¡¯importance du regard de la population locale sur ces innovateurs ; elle montre le r le central des soci¨¦t¨¦s locales dans l¡¯appropriation des processus d¡¯innovation, participant ou non ¨¤ leur l¨¦gitimation. Si le processus d¡¯innovation a longtemps ¨¦t¨¦ port¨¦ par des groupes d¡¯acteurs structur¨¦s, reconnus par la soci¨¦t¨¦ locale, il est ¨¦galement, le fait de petits groupes ou acteurs en constellation et en d¨¦s¨¦quilibre social, anim¨¦s par une forte coh¨¦rence id¨¦ologique.
