%0 Journal Article %T The Existing Studies on Biosynthesis of Poly( -glutamic acid) by Fermentation %J Food and Public Health %@ 2162-8440 %D 2013 %I %R 10.5923/j.fph.20130301.04 %X Poly( -glutamic acid) known as -PGA, is a polymer that releases the nonessential amino acid glutamic acid upon hydrolysis. The application of poly( -glutamic acid) has increased in past year, as has the research to optimise its production methods with less-expensive processes, for example, the use of new substrate carbon and nitrogen sources for the fermentation processes.
