Production and characterization of cassava (manihot esculenta crantz) flours using different thermal treatments

Abstract: the aim of this study was to produce flours from the edible portion of cassava (manihot esculenta crantz) roots, treat them by heat in different forms (normal and pressure cooking, in limited and excess water conditions, and in the presence or absence of nacl) and characterize them in their chemical composition, physical and functional properties. the flour preparation procedure affected both the chemical composition and gelatinization profile. the control (raw flour) and heat-treated samples displayed a set-back reduction. pregelatinized flours showed decreased consistency and absorption indices, and augmented departure time, stability, tolerance index and time to breakdown values, as compared to control sample. these flours are suggested as potential ingredients in new or conventional product development.

Abstract: globalization attempts to establish a world order where economy, politics and culture share spaces. human interaction is essential and relevant for the construction of new knowledge capable of offsetting reductionism, the sense of exclusion, which results from the different degrees of development among the nations. this concern fostered our research with the objective to base, from the epistemological standpoint, the interaction and the construction of knowledge of the various social contexts. the research work was tackled from an hermeneutical perspective, which allowed a process of knowledge construction that would foster in its members, through education, qualitative transformations that would in turn promote competitiveness in the social sphere in which they interacted.

Abstract: abstract: the natural history of hiv infection has been described as an insidious and progressive decline of immune function generally agreed that the recognition of some oral manifestation; it is of great significance because they may represent the first sign of the diseases. the aim of this study was to asses types and prevalence of hiv-related oral lesion and opportunistic infections. method: this is a transversal, preliminary and exploratory study; the study group consisted of 208 patients with serological evidence of hiv infection, consecutively examined between november 1998 and july 2000. results: one hundred eight patients had oral lesions (66%), the most common were: candidiasis (48.7%), oral hairy leucoplakia (12.3%), herpes labialis (11.7%); other oral lesions were leucoplakia (11.7%) and mucosal pigmentation (4.5%).the opportunistic infections most common were hepatitis (14.9%), pneumocystis carinii pneumonia (11,5%), herpes zoster virus infection (8.6%) and toxoplasmosis (8.6%). conclusions: patients with hiv/aids infection have an ample spectrum of oral lesions and opportunistic infections; recognition, diagnostic testing, management and appropriate therapeutic are important to give to this persons a better life quality.

Abstract: education is a fundamental strategy in the political and social compromise that the health promotion has to the welfare and development of people. the education for get this purpose not only has to identify the factors and conditions that help the comfort and the health, but actuate as agent of change in the significant transformations of the society. the primary objective of the health education responses a continue action of education, efficient information and permanent epidemiology vigilance in order to improve health, to reduce at minimum the risk of present and possible danger, and so, work for the essential conditions for health and development of countries.

Abstract: La historia natural de la infección por VIH/SIDA ha sido descrita como un deterioro insidioso y progresivo de la función del sistema inmune; generalmente esto se acompa a con el reconocimiento de algunas manifestaciones bucales, las misma son de gran importancia porque podrían representar el primer signo de esta enfermedad. El propósito de este estudio fue determinar los tipo y la prevalencia de lesiones bucales asociadas a la infección por VIH/SIDA y de infecciones oportunísticas. METODOS: Este es un estudio descriptivo, transversal, preliminar y exploratorio que incluye un grupo de 208 pacientes con evidencia serológica de infección por VIH/SIDA, los cuales fueron examinados durante el período comprendido entre los meses de noviembre de 1998 y julio de 2000. RESULTADOS: Dentro de este grupo de pacientes 108 (66%) presentaron lesiones bucales. Las mas comunes fueron las siguientes: Candidiasis (48.7%), Leucoplasia Vellosa (12.3%), Herpes labial (11.7%), otras lesiones bucales vistas fueron Leucoplasia (6.5%), Hiperpigmentación melánica (4.5%). Las enfermedades infecciosas oportunísticas mas frecuentes fueron la hepatitis (14.9%), Neumonía por Pneumocistis carinii (11,5%), infección por el Virus del Herpes zoster (8.6%) y Toxoplasmosis (8.6%). CONCLUSION: Los pacientes con infección por VIH/SIDA presentan un amplio espectro de manifestaciones bucales e infecciones oportunísticas por lo tanto el reconocimiento, diagnóstico, manejo y tratamiento adecuado son importantes para el mejoramiento de la calidad de vida en estos individuos. Abstract: La Educación es estrategia fundamental en el compromiso político y social que la promoción para la salud tiene como propósito en el desarrollo y bienestar de los pueblos; el papel que corresponde a la educación para alcanzar esta meta, no es solo el de identificar los factores y las condiciones que favorecen al bienestar y la salud, es el de actuar como agente de cambio en las transformaciones significativas de las sociedades. El Objetivo primordial de la Educación para la Salud responde a un proceso constante de educación, eficiente información y vigilancia epidemiológica permanente para mejorar la salud, minimizar riesgos de da os existentes y posibles, para así, transformar los propósitos sociales de bienestar para todos y trabajar la solidaridad y la equidad social, condiciones indispensables para la salud y el desarrollo. Abstract: La Teoría de la Paz Democrática es una de las que mayor relevancia han alcanzado en Relaciones Internacionales, pues su alcance traspasa el ámbito académico al tener relevancia política. La adulteración y simplificación de la teoría de Doyle conforme a la visión de Russet permitió el traslado de esta teoría al ámbito del discurso político y a su aplicación en regímenes como los protectorados internacionales en casos de tanta actualidad como los de Afganistán y Kosovo. Los malos resultados obtenidos con esta política, basada en una teoría que nunca se pensó destinar al ámbito político, aconsejan su desaparición. The Democratic Peace Theory is one of the most relevant in International Relations. This relevance, however, is not only academic, but also political. The adulteration and simplification of Doyle′s original theory, which was based on the ideas of Russet or Rummel, has allowed for its adoption into political discourse and for its application to political regimes, such as the international protectorates currently in place in Kosovo and Afghanistan. The negative results obtained from the adoption of these policies, based on a theory never meant for political application, indicate why their elimination would be preferable
