Análise físico-química e microbiológica do suco de laranja minimamente processado armazenado em lata de alumínio

Abstract: in this work, single-strength orange juice was pasteurized in a plate heat exchanger using three different temperatures: 82.5oc, 85.0oc and 87.0°c and holding times varying from 11 to 59s in order to obtain a minimally processed product. a comparison among orange juice samples stored in aluminium cans and in polyethylene bottles under refrigerated conditions for 21 days was carried out. degree of brix, acidity, ph, insoluble and total solids, and microbiological analyses were conducted soon after processing and during the storage period. the physico-chemical properties of the pasteurized orange juice showed differences due to variations in the raw material during the period of study. the most appropriate pasteurization temperature for orange juice was 87.0°c, with the holding time varying according to ph; ph 4.0 required longer holding times. according to the results, a shelf life of 15 days was determined for the processed orange juice, under the above conditions.

Abstract: Neste trabalho, suco de laranja natural foi pasteurizado em um trocador de calor a placas empregando três diferentes temperaturas de pasteuriza o: 82,5oC; 85,0oC e 87,0oC e tempos de reten o variando de 11 a 59s, para se obter um produto minimamente processado. Um estudo comparativo foi realizado no suco de laranja armazenado em latas de alumínio em rela o ao mesmo produto armazenado em garrafas PEAD, sob refrigera o, por um período de 21 dias. Análises de graus Brix, pH, acidez, sólidos insolúveis e totais e análises microbiológicas foram realizadas em amostras logo após o processamento e durante o período de armazenamento. As propriedades físico-químicas do suco de laranja pasteurizado apresentaram diferen as devido as diferen as detectadas na matéria-prima ao longo do período do estudo. O parametro de pasteuriza o mais apropriado para o suco de laranja natural foi 87,0oC e com tempo de reten o variando de acordo com o pH do suco. Para pH 4,0 o tempo de reten o requerido foi maior. De acordo com os resultados, uma vida-de-prateleira de 15 dias foi determinada para o suco processado nas condi es acima.

Abstract: eleven selected and trained panelists evaluated the appearance, odor and flavor of orange juice (oj) processed at nine different pasteurization temperature - holding time in comparison to fresh single-strength oj, by quantitative descriptive analysis (qda). a consumer test was conducted in laboratory with fifty non-trained panelists through the ratings: hedonic, natural odor and flavor intensity and buying intention. panelists for both tests received the samples in individual booths with red light, except for the appearance tests that they were conducted under daylight. samples were tested using a randomized complete block experimental design and the results analyzed by analysis of variance (anova). the qda showed significant differences concerning presence of pulp, orange natural odor and flavor, decreasing the intensity as the holding time increasing. however, there was no significant difference among non-pasteurized oj and processed oj samples, concerning yellow color, visual viscosity, fermented odor and flavor and essential oil flavor. the consumer test indicated that the oj pasteurized under more severe heat treatment (87.0°c/58.55s) was more accepted, exhibited more natural odor and flavor intensity and showed higher buying intention in comparison to a similar commercial pasteurized oj.

Abstract: Onze provadores selecionados e treinados avaliaram a aparência, aroma e sabor de amostras de suco de laranja natural processado em nove diferentes condi es de temperatura de pasteuriza o - tempo de reten o, e compararam com amostras do suco de laranja natural n o processado, utilizando a Análise Descritiva Quantitativa (ADQ). Teste de aceita o pelo consumidor foi conduzido em laboratório, com cinqüenta provadores n o treinados, utilizando as escalas: hed nica, intensidade de odor e sabor natural, e inten o de compra. Tanto os provadores, como os consumidores, receberam as amostras em cabines individuais iluminadas com luz vermelha, exceto para os testes de aparência, que foram conduzidos sob a luz branca do dia. As amostras foram apresentadas segundo delineamento experimental de blocos completos casualizados com duas repeti es e os resultados foram analisados aplicando a Análise de Variancia (ANOVA). A ADQ mostrou que houve diferen as significativas em rela o à presen a de partículas, aroma e sabor natural de laranja, diminuindo a intensidade com o aumento do tempo de reten o. Entretanto, n o houve diferen as significativas entre as amostras do suco n o processado e do suco processado, em rela o a cor amarela, viscosidade percebida visualmente, odor e sabor fermentado, e sabor de óleo essencial. O teste de consumidor indicou que o suco de laranja natural processado sob a condi o mais severa (87,0°C/58,55s) foi melhor aceito, apresentou maior intensidade de aroma e sabor de laranja natural e revelou maior inten o de compra em rela o a um suco de laranja pasteurizado de marca comercial.

Abstract: objective: to know the meaning of menarche for adolescents in schools in the region of saint edward, in the municipality of embu das artes, s?o paulo (brazil). methods: this was qualitative research, with data collected by a focus group technique and with the content of the narratives outlined by means of content analysis. results: the results were classified into five categories represented as: fertility; repercussions; menstruation and taboo; the fear of dying; and, misinformation and impact. conclusion: for the adolescents interviewed, menarche was reported as a negative experience, related to feelings of fear and anguish. this view was attributed to social, historical and cultural constructs that do not value dialogue and questions relating to the body. thus, it emphasizes the importance of demystifying the theme and recommends that sexuality education interventions should be expanded, to reach a larger number of participants beginning at the age of 9 years.

Abstract: summary the way in which the fluid waste management was dealt with in the evaluation of the environmental impact implemented in the country since 1995 was analyzed. the potentialities of this process to assure higher qualitative levels of conservation and protection of the environment as the economic and social development of the country is guaranteed are shown. methodological elements for the correct identification and assessment of the positive and negative impacts produced by the activities of treatment and final disposal of the fluid waste generated in the new development projects are given so that the sanitary engineering works be real measures to mitigate environmental pollution.

Abstract: Se analizó la forma en que se trató la problemática del manejo de residuales líquidos en la evaluación de impacto ambiental EIA, implementada en el país desde 1995. Se mostraron las potencialidades de este proceso para asegurar niveles cualitativamente superiores de conservación y protección del medio ambiente, en la medida en que se garantiza el desarrollo económico y social del país. Se brindaron elementos metodológicos para la correcta identificación y valoración de los impactos ambientales positivos y negativos que producen las actividades de tratamiento y disposición final de los residuales líquidos generados en los nuevos proyectos de desarrollo, para lograr que las obras de ingeniería sanitaria realmente constituyan medidas de mitigación de la contaminación ambiental. SUMMARY The way in which the fluid waste management was dealt with in the evaluation of the environmental impact implemented in the country since 1995 was analyzed. The potentialities of this process to assure higher qualitative levels of conservation and protection of the environment as the economic and social development of the country is guaranteed are shown. Abstract: There have been many changes in clinical trials methodology since the introduction of lithium and the beginning of the modern era of psychopharmacology in 1949. The nature and importance of these changes have not been fully addressed to date. As methodological flaws in trials can lead to false-negative or false-positive results, the objective of our study was to evaluate the impact of methodological changes in psychopharmacology clinical research over the past 60 years.

Abstract: vaginal myomas are very rare, generally asymptomatics, but could be presented with diverse symptoms regarding their localization and do not differ from their uterine counterparts. we present a clinic case of a 52 years old woman, asymptomatic, in whom a 1 cm sobreelevated, hyperpigmentated lesion was found on the posterior vaginal wall, which was removed with diathermical loop excision. her pathological result was vaginal leiomyoma with melanical hyperpigmentation of the basal layer of the epithelium. we also present a literature revision.

Abstract: Objetivo: Presentar un caso de mioma vaginal en una mujer de 52 a os. Caso. Paciente asintomática, que acude a la consulta para control ginecológico. Se detecta una lesión en cara posterior de vaginal, sobre elevada e hiperpigmentada de aproximadamente 1 cm de diámetro, la cual fue extirpada con asa diatérmica; se envió el material para estudio histopatológico y el resultado fue leiomioma en vagina con hiperpigmentación melánica en la capa basal del epitelio. La paciente evolucionó bien.
