Effect of Breed and Sex on Pork Meat Sensory Evaluation  [PDF]

This work had an objective to evaluate the sensory quality of two categories of pork meat from a commercial pork meat and a selected meat from the Portuguese black pork (Preto Alentejano breed). Sixteen animals were used, 8 females and 8 males from each breed. Animals had 80 - 100 kg of live weight. The longissimus muscle between the 5th thoracic vertebra and the 10th lumbar vertebra was used in the analysis. Sensory analysis was performed by a trained taste panel of 10 elements, in 5 sessions. All evaluation conditions were standardized, and the attributes studied were odor intensity, toughness, juiciness and flavor intensity. The taste panel found differences mainly between breeds. The panellists scored Preto Alentejano meat as being juicier, tenderer, and with richer taste than Commercial meat. The higher juiciness score of Preto Alentejano meat was probably attributable to the higher intramuscular fat content compared with Commercial meat. The Commercial pork was characterized mainly by high toughness.

The “Puzzle” of Water Behavior at Low Temperature

Abstract: Thermodynamic and transport properties of liquid water are not fully understood despite a large amount of research work both experimental and theoretical. The maximum of density and the enhanced anomalies observed at low temperatures are at the origin of several models that, in some cases, predict specific and unique behavior such as spinodal lines or critical points. We show that a careful analysis of the neutron quasi-elastic scattering data, both the incoherent spectra and the dynamic of the partials, is compatible with a polymer-like model, where the hydrogen bond dynamics explains the behavior of water in the non-accessible temperature region extending from ?30° C to the glass transition.

Abstract: comes a cutting of institutional research of evaluation of the repercussions of the extension project in the daily of all the participants. it leans on the concepts of community aprendente, to know to take care, sharing of you know. the object is constituted of the manners of to learn and to feel of participant women of an extension project in popular education in health, developed between 2004 and 2006 in the island of caratateua, belém. he/she researches qualitative that interviewed fifteen women in 2005 and it used the method of the collective subject’s speech. the collective speeches reveal intense association between the cognitive and the affectionate; they indicate that the ruled educational practices in the circles of dialogues promote repercussions in the daily of the participants’ life and they point changes of behaviors cares in knowing to take care. it is ended that the project favored not only crossings of you know, but a (with) existence of affections, that defined the permanence in the project and it marked the manners of to feel and to learn to produce health.

Effects of trade policy on total factor productivity

Abstract: this paper examines if trade policy can account for the difference in total factor productivity (tfp) across countries. a two-sector dynamic international-trade model is developed where technological progress is neutral and a coalition of workers can stop the adoption of new technologies. the key findings are the following: (i) with free trade, or tariff, the best technology is always used and tfp is always at its highest value. under a quota, this is not always the case and tfp is generally below its highest value; (ii) even controlling for difference of skilled labor (or human capital), workers from the quota economy have smaller productivity than workers from the free trade economy.

Abstract: the paper analyses iberê camargo's self-portraits, in particular his 1943 and 1984 paintings, in which the issue of time manifests itself both in the chronology which distinguishes the two conceptions of painting and in action which marks the rhythm and pace as enunciative categories of painting. in the self-portrait of 1943 the rhythm is soft, almost ethereal; in the 1984 painting, the abrupt action accelerates and disarrays the time of the painting, resulting in a fast pace and an effect of unfinishness and imperfection. it is the inscription of time in the pictorial matter which transforms representation, altering, in this way, the intersubjective relationship between the painter and the observer.

Abstract: some data and observations of primary production and hydrographic parameters have been made in the region of ubatuba (lat. 23o30's long. 45o06'w) during two seasons: summer and winter. the primary production varied from 1.01 mgc/m3 /h to 28.16 mgc/m3 /h in summertime and from 0.24 mgc/m3 /h to 16.24 mgc/m3 /h in wintertime. the phytoplankton production is believed to be controlled primarily by the quantity of nutrient salts and there is a possibility that relatively nutrient-rich deeper cold waters may increase the fertility of the region.

Abstract: some experiments on c-14 uptake and cell numbers were made with the purpose of comparing nannoplankton and net phytoplankton from surface sea-water samples collected at six stations in equatorial waters (fig. 1). the results of these experiments showed a pronounced difference between nanno and net phytoplankton in photosynthesis and in cell numbers (table i). the net phytoplankton represents an average of as little as 9.93% of total photosynthesis and 22.20% in numbers of organisms of total phytoplankton. the results obtained in coastal and in oceanic waters show that the effect of the proximity of land on standing stock and upon primary production is well marked (table ii). the results obtained are discussed and compared with data of earlier papers.
