Abstract: an attempt was made to distinguish the various levels of determination of deficiency anemia, as a public health phenomenon, on the basis of the biological and social relationships which define this health-disease process. by correlating the analysis of the specific processes of a sample population of pregnant women to the general processes characteristic of life in greater s?o paulo (brazil), to which city the sample population belong, it was possible to observe how the conditions which lead to the occurrence of iron-deficiency anemia are linked to the social and economic conditions characteristic of the particular class contexts to which individuals are related, be it by qualitative and quantitative dietary deficiences, or by the poor conditions of environmental health, these factors typical of the areas inhabited by the lower social strata. in view of the singular biological processes involved and in order to bring into focus another hierarchical level of these determinations, the analysis of these deficiencies was applied to the concept of organic vulnerability, a concept taken as the concatenator of the distinguishing characteristics of specific biological groups in view of the differential risks of falling ill and dying through particular "causes" or processes leading to death, risks which are linked to the very conditions under which the social classes live. by characterizing the ultimate determining causes of iron-deficiency anemia on the basis of the low level of consumption of what the authors have decided to call "basic necessities", the analysis sought to identify characteristic elements of living standards in the city of s?o paulo, capable of providing data of the establishment of possible "critical levels of consumption", that is to say, of a particular living standard below which individuals, in this case pregnant women, separated into specific social groups, would be ascribed to particular situations, simultaneously of an organic and social nature, "d

Revista de Nutri??o , 2000, DOI: 10.1590/S1415-52732000000200001
Abstract: during the last decades the prevalence of cardiovascular diseases has increased progressively, becoming a serious public health problem. some studies have shown a positive association between saturated fatty acid intake and the prevalence of cardiovascular diseases, and a negative association with unsaturated fatty acids intake. these studies indicate a need to evaluate the different kinds of fatty acids (saturated, monounsaturated and polyunsaturated) and their effects, aiming at a better utilization and maintaining a suitable proportion in the diet in order to diminish the incidence of cardiovascular diseases. the objective of this paper is to accomplish a review of the medical literature regarding fatty acids and their effects on cardiovascular diseases, as well as the evolution of their requirements through time, consumption trends and future perspectives.

Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1979, DOI: 10.1590/S0034-89101979000100004
Abstract: adequate consumption of proteins of high biological value is related to cost and family income at different periods of time. the decrease of consumption of animal protein observed was caused by alterations in family budgets in which the portion allotted for buying meat, milk, and eggs was smaller in 1975 than in 1969. the "index of animal protein consumption (icpa)," estimated by the ratio - family income/cost of recommended animal foodstuff - is an efficient indicator of the consumption of such foodstuff and, indirectly, of nutritional status. its use, however, implies the classification of families as to their economic status because the portion of the budget allotted for buying animal foodstuff varies according to the period of time considered.
Diagnóstico de deficiência de ferro na infancia
Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1985, DOI: 10.1590/S0034-89101985000300009
Abstract: a comparison of diagnoses of iron-deficiency, using the index proposed by who (11.0 g/dl) and other parameters of great sensitivity, in a population of children of 60 months or less, was made. the inclusion of a great proportion of "positives" through the use of these standards is compensated for by the guarantee of adequate treatment for the majority of iron-deficient children. this is an important attitude in developing societes with high prevalence of iron-deficiency anemia and is also practical because of the low cost of iron supplement.
Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1983, DOI: 10.1590/S0034-89101983000400004
Abstract: a knowledge of the bioavailability of dietary iron is indispensable to the promotion of an iron fortification program. the quantification of that property was determined for three common meals, breakfast (bread, margarine, coffee with sugar), lunch (rice, beans, meat, coffee with sugar) and dinner (rice, beans, fried egg, coffee with sugar) served to 28 apparently healthy adults of both sexes. the bioavailable iron density (dfe b) found was: breakfast - dfe b = 0,23; lunch - dfe b = 0,73 and dinner - dfe b = 0,28. these results, insufficient to supply the iron required by women, suggest that fortification is not an effective strategy for control of iron deficiency anemia if applied to meals like those studied.
Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1985, DOI: 10.1590/S0034-89101985000500009
Abstract: in order to estimate the prevalence of anaemia among pregnant women receiving attention at the "program of attention to pregnant women" (pag) of the secretariat of health of the state of s. paulo, and also with a view to analysing the item of pag referring to iron supplementation, a probabilist sample of 4539, drawn from 15 health centers (hc), was studied. anaemia was observed in 35.1% of the women (hb < 11.0 g/dl), suggesting that iron deficiency is a considerable public health problem for the sample population. based on these results the introduction of hb determination as part of the "pag" routine is suggested. results should be related to gestational age. it is also suggested that, in some hc, efficiency of iron supplementation be evaluated.
Anemia ferropriva em parturientes e recém-nascidos
Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1974, DOI: 10.1590/S0034-89101974000400003
Abstract: the present paper was planned to study prevalence of iron deficiency in a group of women at delivery and newborn children of comparable social and economic status. the biochemical survey included hemoglobin concentration, packed cell volume, serum iron and iron binding capacity. the results showed a prevalence of anemia of 52,3% for the women and 21,0% for the newborn. iron administration, at specialized services would be a sound prophylactic measure.
Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1975, DOI: 10.1590/S0034-89101975000100008
Abstract: information on the relationship between hematological indices of mother and newborn is contradictory. in order to compare the mentioned indices, the present study was carried out. the results of our study show that the higher the hematologic indices in the mother the higher the hematologic indices in the newborn.
Monteiro,Carlos Augusto; Szarfarc,Sophia Cornbluth;
Revista de Saúde Pública , 1987, DOI: 10.1590/S0034-89101987000300010
Abstract: as part of a broad epidemiologic survey on the health status of children living in the city of s.paulo, brazil, a representative sample of under-fives was studied with regard to the prevalence and distribution of anemia. the prevalence of anemic children (hemoglobin < 11g/dl) was 35.6% and the prevalence of severe cases (hemoglobin < 9.5g/dl) was 14.7%. the highest rates of anemia were found between 6 and 24 months of age, a period in which more than half of the children surveyed were anemic and around 50% of the cases corresponded to severe forms of the deficiency. the prevalence of anemia tended to decrease with the improvement of the socioeconomonic status, but no segment of the population free from anemia was detected. compared to the situation verified in the city around 10 years ago, an impressive increase in the prevalence of anemia was observed: of more than 50% for the total of anemic children and of more then 100% for the severe cases. in the light of all the data produced by the survey, there are strong evidences that child anemia in the city of s.paulo is due rather to the unfavorable characteristics of the diet than to the presence of intestinal parasites.
