Abstract: This work had the purpose to evaluate the quality of the minimally processed snap bean in function of rinse and sanification operations. Snap bean cv. Itatiba 2 were selected, cleaned, processed and submitted to the following treatments: T1 – rinse in water only, T2 – rinse in water, followed by immersion in chlorinated solution (100 mg.L-1) for 5 minutes, T3 – immersion in chlorinated solution (100 mg.L-1) for 5 minutes and T4 – without rinse and without immersion in chlorinated solution (control). The minimally processed snap beans were assessed for appearance, color of the section surface and microbiological characteristics. About the color of the section surface, it could be noticed from the ninth day of storage that the snap bean of the Treatment 1 showed less darkening in relation to the other treatments, and also better accepted sensorially. It wasn’t detected Salmonella and neither coliforms at 45°C in any sample of the different treatments. In relation to the total coliform counts, it could be noticed reduction with the sanification (T2 and T3) on the processing day, and, in general, an increase in the coliform counts during the storage. The total bacteria count was > 105 UFC.g-1 in the snap bean of all treatments in the sixth day of storage, except in that one, which the snap beans were rinsed and sanitized. Therefore, this treatment is recommended and guarantee six days of shelf life for minimally processed snap bean, limited by the bacteria growth. Este trabalho teve como objetivo avaliar a qualidade de vagens minimamente processadas em fun o das opera es de enxague e sanifica o. Vagens cv. Itatiba 2 foram selecionadas, higienizadas, processadas e submetidas aos seguintes tratamentos: T1 - enxágue somente em água, T2 - enxágue em água, seguido de imers o em solu o clorada (100 mg.L-1) por 5 minutos, T3 - imers o em solu o clorada (100 mg.L-1) por 5 minutos e T4 - sem enxágue e sem imers o em solu o clorada (controle). As vagens minimamente processadas foram avaliadas quanto à aparência, colora o da superfície de corte e aspectos microbiológicos. Em rela o à colora o da superfície de corte, observou-se a partir do nono dia de armazenamento que as vagens do Tratamento 1 apresentaram menor escurecimento em rela o às dos demais tratamentos, sendo também melhor aceitas sensorialmente. Salmonella e coliformes a 45oC n o foram detectados em nenhuma amostra dos diferentes tratamentos. Abstract: O objetivo deste trabalho foi avaliar o efeito de diferentes embalagens com atmosfera modificada naqualidade microbiológica e sensorial de goiabas ‘Kumagai’ e ‘Pedro Sato’ minimamente processadas. Mix degoiabas ‘Kumagai’ e ‘Pedro Sato’, em rodelas, foram embaladas em diferentes materiais de embalagem earmazenadas a 5oC, 70%UR por seis dias. Os materiais de embalagem utilizados foram: embalagens de tereftalato depolietileno (PET); filme de polipropileno de 52μm de espessura (PP); filme poliolefínico da Cryovac de 58μm (PD-900); filme de policloreto de vinil de 17μm (PVC). Avaliou-se a contagem de microrganismos acidúricos, coliformestotais e à 45oC e presen a/ausência de Salmonella. Para avalia o sensorial aplicou-se o teste de aceita o. Asgoiabas minimamente processadas e acondicionadas em embalagem de PVC e PP obtiveram maior aceita osensorial referente ao atributo aparência. A aceita o sensorial referente ao atributo sabor das goiabas minimamenteprocessadas foi positiva em todos os tratamentos. A embalagem n o influenciou os aspectos microbiológicos dosprodutos, que apresentaram baixa contagem microbiana, em acordo com a legisla o vigente.The aim of this study was to evaluate the effect of different packaging with modified atmosphere onthe microbiological aspects and sensory acceptance of minimally processed ‘Kumagai’ and ‘Pedro Sato' guavas. Mixof ‘Kumagai’ and ‘Pedro Sato, in slices were wrapped in different packaging materials and stored at 5oC for six days.The packaging materials used were:polyethylene terephthalate containers; polypropylene bag 52 μm; polyolefin filmCryovac PD-900 58 μm; PVC stretch film 17 μm. Aciduric microorganisms, total coliforms and at 45oC and thepresence / absence of Salmonella were analyzed. For the sensory evaluation was applied to the acceptance test. Theguavas minimally processed wrapped PVC stretch film and PP film obtained greater acceptance for the sensoryattribute appearance. The acceptance for the sensory attribute flavor of minimally processed guavas was positive inall treatments. The packaging did not affect the microbiological aspects of products, which showed low microbialcount, in accordance with current legislation.

Abstract: the low productivity of yellow passion fruit is due often to the phytosanitary problems, being the collar rot caused by nectria haematococca, one of the main problems in the majority of the producing states of brazil. the disease control is basically preventive, avoiding the introduction of the pathogen in the area. so, the present work aimed at: a) evaluating the behavior of ungrafted yellow passion fruit cultivars 'afruvec', 'iac 275' and 'maguary' and 'afruvec' passion fruit grafted on five passiflora species (passiflora alata, p. maliformis, p. morifolia, p. mucronata and p. suberosa) in orchard where the disease is frequent; and b) evaluating the efficiency of chemical (copper oxychloride, prochloraz and thiabendazole) and biological products (trichoderma harzianum and trichoderma sp.) in the control of collar rot in 'afruvec' yellow passion fruit in field conditions. yellow passion fruit grafted on p. maliformis, p. suberosa and p. alata presented greater resistance to the collar rot in relation to the ungrafted yellow passion fruit. the chemical and biological products applied to the base of plants (500 ml of volume) in monthly or biweekly intervals were not efficient in reducing the disease occurrence.

Abstract: the present work focuses on a comparative study of the performance of fuzzy and conventional pid controllers applied to temperature control in the bromelain precipitation process from aqueous extract of pineapple wastes. a quantitative analysis of process nonlinearities was performed based on process reaction curves methodology. different sensitivity to control actions was detected at different batch times. the conventional controller was tuned by applying ziegler-nichols equations to the process parameters obtained at the beginning of the experiment, followed by fine tuning based on trial-and-error procedure. using the knowledge obtained from the reaction curves analysis, the fuzzy controller tuning consisted in changing the universe of discourse, the rule base and the support sets of membership functions. it was observed that the fuzzy controller outperformed the pid, showing the smallest value of integral of time multiplied by absolute of the error (itae), a great recovery of enzymatic activity and the smallest consumption of electric energy for the system refrigeration.

Abstract: on this article, the effects of gendering conception and gender roles practices on violence (physical, psychological and sexual) against spouses are explored. four women that had registered declaration of suffering physical abuse from their partners and that still live with them were interview based on a script with search for personal data and information about marital relationship, men and women conceptions. interviews were submitted to alceste software, that was the content analysis used as a complementary method analysis. data show that gendering traditional conceptions and insubordination acts share places (such as paid work, friendships, and judgments about sexual life). these aspects, signal of women empowerment, are related to partners' aggressiveness, which were excluded of feminist debates and are trying to protect their masculinity by using violence to suppress feminine manifestations of power.

Abstract: Este artigo tematiza a quest o da heterogeneidade no Discurso de Divulga o Científica (DDC). Este discurso, ao se articular na zona de contato entre o discurso científico (DC) e os dizeres dos “n o cientistas” (DNC), apresenta uma heterogeneidade que chamarei de discursiva (nos termos de GALLO, 2001) que se constitui n o só de n o-coincidências enunciativas (conforme AUTHIR-REVUZ, 1982), mas também de coincidências com sentidos pré-construídos. Desses confrontos entre sentidos pode resultar uma nova forma o discursiva, aquela do DDC, reordenando sentidos do DC e do DNC.

Abstract: we evaluate three bootstrap techniques for the statistical analysis of a non parametric production model for which a dea measure of efficiency is potentially affected by a set of exogenous factors. the application of interest relates to the assessment of the significance of the contextual variables income generation, processes improvement, intensity of partnerships, type and size on the technical efficiencies of embrapa's research centers. it is concluded that the bootstrap of the maximum likelihood estimator provides the best fit from the point of view of pearson correlation between observed and predicted values and is the most informative in regard to the significance of the variables considered. with the exception of size all contextual variables are statistically significant. income generation, processes improvement and intensity of partnerships are all positively associated with technical efficiency.

Abstract: this work aimed to present brazilian forecasts of production, consumption, exports and export average price of meat (beef, pork and poultry). forecasts were generated using the markovian representation (state space) model and an autoregressive integrated moving average (arima). annual growth rates were also calculated. series observed involve the period from 1972 to 2009 and the analysis of the forecasts involves the period from 2010 to 2020. the forecasts of the products are well adjusted to the observations. according to the results, brazil showed a growth trend in all the analyzed variables. it is concluded that the brazilian meat market indicates good perspectives of strengthening in world terms, especially for poultry.
Design of automatic control system for the precipitation of bromelain from the extract of pineapple wastes

Abstract: in this work, bromelain was recovered from ground pineapple stem and rind by means of precipitation with alcohol at low temperature. bromelain is the name of a group of powerful protein-digesting, or proteolytic, enzymes that are particularly useful for reducing muscle and tissue inflammation and as a digestive aid. temperature control is crucial to avoid irreversible protein denaturation and consequently to improve the quality of the enzyme recovered. the process was carried out alternatively in two fed-batch pilot tanks: a glass tank and a stainless steel tank. aliquots containing 100 ml of pineapple aqueous extract were fed into the tank. inside the jacketed tank, the protein was exposed to unsteady operating conditions during the addition of the precipitating agent (ethanol 99.5%) because the dilution ratio "aqueous extract to ethanol" and heat transfer area changed. the coolant flow rate was manipulated through a variable speed pump. fine tuned conventional and adaptive pid controllers were on-line implemented using a fieldbus digital control system. the processing performance efficiency was enhanced and so was the quality (enzyme activity) of the product.
