Fighting Against Obesity and Overweight: Approach to Design a New Service in Nutrition Education  [PDF]

Overweight and obesity (O&O) are a global public health problem, which many scientists have named as the XXI century epidemic. Since the 80’s decade, the O&O world prevalence has increased both in children and adults, and Mexico is among the highest. Under this context, the main goal of this research is to develop a business model based on a service of nutritional education as a way to fight against O&O. This research proposes a new model founded on a strategic combination of Service Design and Competitive Intelligence methodologies. The aim is to generate a unique and innovative service tailored to customer needs.

The anti-tumor effects of calorie restriction are correlated with reduced oxidative stress in ENU-induced gliomas

Abstract: The anti-tumor effects of calorie restriction (CR) and the possible underlying mechanisms were investigated using ethylnitrosourea (ENU)-induced glioma in rats. ENU was given transplacentally at gestational day 15, and male offspring were used in this experiment. The brain from 4-, 6-, and 8-month-old rats fed either ad libitum (AL) or calorie-restricted diets (40% restriction of total calories compared to AL rats) was studied. Tumor burden was assessed by comparing the number and size of gliomas present in sections of the brain. Immunohistochemical analysis was used to document lipid peroxidation [4-hydroxy-2-nonenal (HNE) and malondialdehyde (MDA)], protein oxidation (nitrotyrosine), glycation and AGE formation [methylglyoxal (MG) and carboxymethyllysine (CML)], cell proliferation activity [proliferating cell nuclear antigen (PCNA)], cell death [single-stranded DNA (ssDNA)], presence of thioredoxin 1 (Trx1), and presence of heme oxygenase-1 (HO-1) associated with the development of gliomas. The results showed that the number of gliomas did not change with age in the AL groups; however, the average size of the gliomas was significantly larger in the 8-month-old group compared to that of the younger groups. Immunopositivity was observed mainly in tumor cells and reactive astrocytes in all histological types of ENU-induced glioma. Immunopositive areas for HNE, MDA, nitrotyrosine, MG, CML, HO-1, and Trx1 increased with the growth of gliomas. The CR group showed both reduced number and size of gliomas, and tumors exhibited less accumulation of oxidative damage, decreased formation of glycated end products, and a decreased presence of HO-1 and Trx1 compared to the AL group. Furthermore, gliomas of the CR group showed less PCNA positive and more ssDNA positive cells, which are correlated to the retarded growth of tumors. Interestingly, we also discovered that the anti-tumor effects of CR were associated with decreased hypoxia-inducible factor-1α (HIF-1α) levels in normal brain tissue. Our results are very exciting because they not only demonstrate the anti-tumor effects of CR in gliomas, but also indicate the possible underlying mechanisms, i.e. anti-tumor effects of CR observed in this investigation are associated with reduced accumulation of oxidative damage, decreased formation of glycated end products, decreased presence of HO-1 and Trx1, reduced cell proliferation and increased apoptosis, and decreased levels of HIF-1α.

Abstract: this paper mentions the evolution of patient rights and describes situations related to the terminally ill patient, the ethical dilemmas for doctors, patients, and family members; the patient autonomy for taking certain decisions, and finally, the religious conflicts for patients and their families. it does not intent to be a textbook on ethical issues, but only to express thoughts regarding these difficult moments for patients and families.

Abstract: En el presente trabajo, sin pretender ser un tratado sobre ética en el manejo del paciente terminal, se realizan reflexiones sobre la evolución de los derechos del enfermo, se describen situaciones del paciente terminal, dilemas éticos presentados tanto al médico de cabecera como al paciente y a los familiares, la autonomía del paciente para decidir conductas a tomar, la importancia de la comunicación, así como los conflictos que se presentan desde el punto de vista religioso tanto en los pacientes como en sus familiares. This paper mentions the evolution of patient rights and describes situations related to the terminally ill patient, the ethical dilemmas for doctors, patients, and family members; the patient autonomy for taking certain decisions, and finally, the religious conflicts for patients and their families. Desarrollo y transferencia tecnológica de pastas funcionales extendidas con leguminosas

Abstract: semolina pasta is a highly consumed foodstuff, the biological value of which is low because its protein is deficient in lysine. however, if the semolina is extended with legumes rich in this essential aminoacid, not only and aminoacid supplementation is produced, but also the dietary fibre and minerals are increased. in this work, pastas extended in 10% with a white variety of phaseolus vulgaris and with cajanus cajan were produced on a pilot plant scale, and this technology was transferred to a cooperative producing artisanal pastas. the cooking qualities and the physical, chemical, and nutritional characteristics of the pastas were evaluated, as well as the sensorial acceptability in institutionalized elderly people. the extension of the pastas with legume flours increased the optimum cooking time (15 to 20%), the weight (20% and 25%), and the loss of solids by cooking. similarly, the functional value of the pastas increased by increasing the contents of minerals and dietary fibre. the protein content, as well as the protein digestibility in vitro also increased; however, the parameters of colour l, a and b, and the total starch content of the pastas decreased. at consumer level, the pastas extended with legumes had a good acceptability, for what it was concluded that the extension of the semolina with legume flours in the manufacture of pastas is technologically feasible.

Abstract: mexico?s foreign policy is designed to protect national interests, as it happens with any other nation. its international policy serves as a powerful engine which main purpose is to reach such national goals as poverty eradication, to regain personal safety and to create opportunities, among others. throughout mexico?s history, the country?s foreign policy has set itself apart because of its high level of continuity. it is possible to understand this policy as one that has been guided by the self determination of the mexican people, by being noninterventionist, by the peaceful solution of controversial issues and the legal equality among the states. the estrada doctrine is just one example where it is easy to see how the relationship between mexico and the united states has influenced the way mexico defines its foreign policy. for the year 2009, mexican immigrants in the united states were 11.4 millions, a number not too different to the 11.6 millions in 2008 and the 11.2 in 2007. these figures illustrate the dependency that each nation has on each other. however nowadays there are different challenges that imply the creation of a new bilateral agenda that answers to terrorism threats, organized crime, migration and natural resources administration, among others. which are the main characteristics of mexico?s foreign policy in respect to the united states? what are the differences between the foreign policy the pri kept for 71 years compared to the one implemented during the last 12 years? which would be the future of the free trade agreement and that of an immigration reform?.

Abstract: from the viewpoint of aesthetic social psychology, that is, focused on perceptual and emotional processes, the following pages attempt to call attention to a dimension of daily life that is highly meaningful: food and eating, proposing some brief spatial and sensory notions to initiate roads toward its understanding and interpretation. the study takes the metaphor of a promenade through some (common) places through which foodstuffs pass from the moment they reach the hands of the cook; that is, from the moment they begin to be transformed into food, into a meal. once it is ready to eat, food travels on plates or trays to the table where a diner, with the help of cutlery and his own hands, incorporates it, brings it into his (her) body and soul in a type of sensual event. we will try to show that these rich and complex walks along with people, in their spaces and with their objects, involve aesthetic appreciations as well as ethical commitments. our reflexions are seasoned with the relationships that we suppose exist between wisdom and flavour, words that in spanish (sabor y saber) share their latin etymology: brief and luminous knowledge, traits implied in the ephemeral character of food.

Abstract: In diesem Beitrag wird für eine Forschungsorientierung pl diert, die die herk mmliche Subjekt-/Objekttrennung hinter sich l sst, da beide – Subjekt und Objekt – einander notwendig bedürfen. Allerdings wird in dem vorliegenden Beitrag die Seite des Objekts betont, um sich auf dessen Wert zu besinnen, der durch die Hypertrophie des Subjekts in den Hintergrund getreten ist. Es wird gezeigt, wie weitreichend die Untersch tzung des Objekts durch "offizielle Weltinterpretationen" mittlerweile ist, obwohl zeitgleich mit dieser Untersch tzung eine enorme "Verführungskraft" der Objekte wirksam war. Epistemologische, methodologische und ethische Implikationen, die mit der "Wiederentdeckung der Objekte" einhergehen, werden diskutiert. URN: urn:nbn:de:0114-fqs0302194 This paper defends a research attitude based on sensitivity, trying to overcome the secular opposition between object and subject by assuming that they need each other in order to exist. Nevertheless and as a rhetorical resource, objects are emphasized, while trying to recover the room, strength and dignity diminished by the hypertrophy of the subject. It is shown how extended this underestimation has been in hands of official interpretations of the world, even though this situation has coexisted with an enormous "seduction" by the objects. Epistemological, methodological and ethical implications from this recovery are suggested for social research. Sin embargo, y como mero recurso retórico, se hace énfasis en la sustancia objetual de la relación, buscando recobrar para ella el espacio, la fuerza y la dignidad disminuidas por la hipertrofia de la sustancia subjetual. Se muestra cuán larga ha sido la desvalorización de los objetos por parte de interpretaciones oficiales del mundo, aunque dicha desvalorización ( temor?) haya coexistido con una gran seducción por parte de los mismos.
