Impact of a Non-Saccharomyces Yeast Isolated in the Equatorial Region in the Acceptance of Wine Aroma  [PDF]

Abstract:

The aim of this work was to isolate and identify the yeasts prevalent in fresh grapes cultivated in the “São Francisco Valley” region (Brazil), as well as evaluating the cell growth of these indigenous yeasts during the fermentation of grape musts and their contribution to the improvement of wine aroma. The Chenin Blanc grape must fermented by H. opuntiae presented higher acceptance means at the three points analyzed (6.74, 6.78 and 7.30) and in the fermentation carried out by the yeasts H. opuntiae and S. cerevisiae, the highest mean acceptance (7.22) was observed after 120 hours, with no statistical difference from the sample fermented by H. opuntiae alone. Since these samples that showed higher acceptance means also receiving higher scores for purchasing intention, corresponding to the concepts of “definitely would buy” and “probably would buy”. The present study suggests that the fermentations of grape musts carried out by the yeast H. opuntiae and mixed cultures of H. opuntiae and Saccharomyces cerevisiae, positively influenced the sensory qualities of the wines and showed greater potential to increase the aroma of the musts and to develop specific wine styles.

Abstract: due to the lack of brazilian instruments that assess the quality of childhood settings, studies that examined the reliability of two american scales (early childhood environment rating scale-ecers and infant/toddler environment rating scale-iters) were conducted in brazilian institutions. each item of each scale (ecers-37; iters-35) is rated from 1 to 7 according to specific instructions observed during group activities. groupings from custodial, public, private and university institutions were assessed and obtained: (1) satisfactory inter-rater reliability (over 85%); (2) low quality level of care in both public and custodial networks (public better than custodial care); (3) satisfactory quality level in private pre-schools and high level in the university institution. the scales discriminated among different institutional models, differentiated playrooms between each other, and pointed out deficient and satisfactory aspects in each playroom. these aspects are very important for planning improvements of the quality of education provided.

Abstract: this study was performed to evaluate the effects of reduction of dietary crude protein level with supplementation of industrial amino acids on the performance and carcass yield of broilers between 22 to 42 days of age, under heat stress. it was used 280 cobb broilers with initial weight of 856 ± 7.41 g, distributed in a complete randomized experimental design, with five crude protein levels (21.6; 20.6; 19.6; 18.6 and 17.6%), eight repetitions and seven broilers per experimental unit. the temperature inside the rooms was kept at 32.2 ± 0.6oc, the relative humidity at 66 ± 3.2% and black globe temperature at 33.0 ± 0.7°c. the black globe-humidity index calculated for the period was 83 ± 0.9. there was no effect of crude protein levels on weight gain, feed intake and feed conversion of the birds. the reduction of dietary crude protein levels influenced the absolute weight of carcass and breast, and the level of 19.6% proportioned higher carcass and breast weights of the broilers compared to the level of 21.6% of crude protein. however, there was no effect of the reduction of levels of crude protein on absolute values of thigh and drumstick and also on breast, thigh and drumstick yields. the dietary crude protein level, formulated by using the ideal protein concept, can be reduced from 21.6 to 17.6% not negatively affecting the performance, absolute weight and noble cut yield of broilers under heat stress.

Abstract: the objective of this experiment was to evaluate the effects of dietary crude protein (cp) level reduction of ration formulated according to ideal protein concept and with supplementation of industrial amino acids on the performance and yield of noble cuts of broilers from 22 to 42 days of age kept under thermoneutral conditions. it was used 280 "cobb" male broilers with initial weight of 856 ± 6.48 g, distributed in a completely randomized experimental design, with five treatments (21.6; 20.6; 19.6; 18.6 and 17.6% cp) and eight replications with seven birds per experimental unit. temperatures inside the rooms were maintained at 21.6 ± 0.7°c, relative humidity at 74.4.0% and black globe temperature of 22.5 ± 0.7°c. black globe temperature and humidity index (bghti) calculated for a period of 70 ± 0.9. there was no effect of the reduction of the levels of cp on weight gain and on feed intake but feed conversion was influenced by the reduction of the cp levels, and the birds fed diet with 22.0% of cp presented a better result. the reduction of the levels of cp did not influence absolute carcass weight and absolute and relative weights of breast, thigh and drumstick. reduction of the level of dietary cp from 21.6 to 17.6% and formulated according to ideal protein concept worsens feed conversion of broilers kept in thermoneutral environment, not influencing the other studied variables.

Abstract: the agouti (dasyprocta aguti) is a wild rodent that, in the northeast region of brazil, is a species that is very used by the low-income population as an alternative protein source for human feeding. thirty-one male agouti were used, coming from the universidade federal do piauí (ufpi) - piauí state, and from escola superior de agricultura de mossoró (esam) - rio grande do norte state - brazil. the animals were divided in to age groups, from the birth to fourteen months old. the average diameter average of the nucleus was obtained by measuring 10 nuclei of the studied cellular type, in each testicle that was in the stage i of the seminiferous epithelium cycle. this was performed in animals that did not present an organized epithelium in well-defined periods due to the age, and measurements were made in transversal sections chosen only for the circular contour. the beginning of the asynchronism of the spermatogenic process was observed since the six months of age. the puberty of the agouti dasyprocta aguti was definitely established at nine months of age, because all the cellular types and free spermatozoa in the tubular lumen were present in a large extent of the testicular parenchyma.

Abstract: foodborne diseases have been deserving special attention by researchers of the whole world. viral etiology outbreaks of foodborne diseases have been improperly treated as less important than bacterial ones. rotavirus is the most reported cause of gastroenteritis and accounts for thousands of deaths annually. the present work reports a rotavirus-induced disease outbreak in a commercial establishment, where 51 employees related symptoms like diarrhea, vomits, nausea. water, food and beverages were analyzed microbiologically. no pathogenical bacterial contamination were detected, neither any modification on sensorial characteristics. according to the "attributable risk" of each food involved, bread and butter was considered suspicious food, and epidemiological approach pointed to the fact that the employee responsible for preparing this food was rotaviruses sicked just before the outbreak spreading.
