Water Adsorption Isotherms of Amaranth (Amaranthus caudatus) Flour  [PDF]

Water sorption isotherms are unique for individual food materials and can be used directly to predict shelf life and determine proper storage conditions. In this context, the aim of this study was to determine the moisture adsorption isotherms of amaranth flour at 15℃, 25℃ and 35℃ in a range of water activity from 0.1 to 0.9. Experimental data were modeled using five equations commonly applied in the foods field. The goodness of the fit for each isotherm model was evaluated through the coefficient of determination, the variance due to error and the confidence interval of the estimated parameters. All models can predict the adsorption isotherms of amaranth flour, but the GAB equation gives a better understanding of the observed sorption behavior. Estimated adsorption monolayer water contents ranged from 6.4 g to 7.2 g of water per 100 g of dry material. It was observed by a weak dependence of water activity with temperature. For ensuring microbiological stability, water content in amaranth flour should not be higher than 13 g of water per 100 g of dry material.

Abstract: Recent studies have shown that choice does not require steady state performance to show sensitivity toreinforcement. This idea was further explored in a choice situation in which a changeover responserequirement was manipulated. The parameters of the generalized matching law (Baum, 1974) were usedto assess changes in preference due to an increasing fixed-ratio changeover-response requirement. Theratio of reinforcement provided by two levers (27:1, 9:1, 3:1, 1:1, 1:3, 1:9, 1:27) was manipulated betweensessions to prevent steady state concurrent performance. In different conditions, the changeoverrequirement took on values of 1, 4, 8, 16 and 32 responses. The results showed local effects of reinforcementon choice behavior; from one reinforcer to the next, the distribution of responses favored thealternative associated with the highest probability of reinforcement. Although sensitivity to reinforcementdid not increase with increasing changeover response requirements, as the rats experienced thedynamic reinforcing environment along the experiment the value of the parameter s stabilized above 1.0.

Abstract: Communication is an essential element in organizational life, thanks to this process, through which human beings share experiences, it is possible for persons to accomplish joint actions, generate agreements, commitments and participate in organizational change. The purpose of this investigation is to analyze -through open messages in the form of a poster- the influence of communications as strategies of power in organizational change.Resumen: La comunicación es un elemento esencial en la vida de las organizaciones, gracias e este proceso, a través del cual se ponen en común las experiencias y vivencias del ser humano, es posible que las personas realicen acciones conjuntas, generen acuerdos, compromisos y participen en el cambio organizacional. En esta investigación se tiene como propósito analizar -a través de las circulares abiertas en forma de cartel- la influencia que tienen las comunicaciones como estrategias de poder en el cambio organizacional.

Abstract: this article contributes information on participation levels of researchers in sonora to outreach activities and scientific and technological knowledge exchange. it also identifies the roles that personal and professional factors play in such activities. 13 7 people in research and postgraduate institutions in sonora were surveyed regarding their personal and professional characteristics, as well as about their different outreach and exchange. the researchers' participation levels were observed, as well as factors that facilitate or inhibit their participation in activities outside their institution. some of the results indicate that funding is one of the most influential factors on academic pursuits, as well as others such as gender, age, and employment status. however, academic degree, alma mater, membership in the sistema nacional de investigadores [national researchers system] and number of publications do not make a significant difference.

Abstract: this paper offers new empirical evidence on the role of researchers in their contribution to socioeconomical development through the analysis of interactions and knowledge flows that are established between these actors and social groups. the specific target of this study is to identify and quantify the precise modalities of knowledge transfer activities undertaken by researchers, as well as to identify those who participate to a greater or lesser extent in these processes, and why they do it. this research is based on a statewide survey conducted on september-october 2007, applied to academic researchers working in research and development organizations in the state of sonora.
