Abstract: the matia foundation is a private social institution that focuses its activity on safeguarding and improving the quality of life of the elderly and the disabled. in recent years, an extensive process of organisational change has been carried out within the foundation, based on the development of the psychosocial and social-health model, the specialisation and personalisation of the care, the generation of new specialised resources and the development of three fundamental areas of intervention. these three areas correspond to the social health area, the psychosocial area and the social/community integration and participation area. all of this has been carried out in conjunction with the development of the most advanced management systems. the psychosocial intervention model works in an interdisciplinary and complementary way between the different disciplines involved, in addition to the contributions that behavioural gerontology offers for the ambient design, care and treatments, etc. with a population that displays a high prevalence of dependent situations, neurological and psychiatric pathology, sensorial deficiencies etc. one of the main objectives we aim to meet via this model is to complement the family and social relationship with a competent team of professionals, organised according to their disciplines, offering high quality, highly professional care, which is friendly, personalised and humane, by incorporating voluntary staff and taking into consideration the family as the central point of the intervention with the user and resident. as regards the residential care model, we have aim to ensure execution by following the strategic planning of the activities carried out in the gerontology and residential centres and units in order to achieve a better quality of life for the elderly people in our care along with their families, in addition to guaranteeing and promoting their rights in order to fully satisfy their expectations with the maximum effectiveness and

Abstract: introduction: cranio-cervical instability is, in some cases, the main surgical concern in posterior skull base tumors. we report on a case in which a solitary plasmacytoma of the skull base presented with cranio-cervical instability. vertebral artery was injured during surgery. the surgical anatomy is reviewed, with emphasis in vascular complications avoidance. case report: a 66 year-old woman was diagnosed of a cranial base solitary plasmacytoma and treated with radio and chemotherapy with complete remission. after receiving that treatment, she presented with tetraparesis and a cranio-cervical instability was diagnosed. she was operated on, under cranial traction, of posterior occipito-cervical instrumentation with c1 to c2 transarticular magerl screws. the right vertebral artery was injured during surgery without additional neurological deficit. two years after the operation she remains independent for daily activities. conclusions: transarticular screws at the c1 to c2 level of the cervical spine may provide rigid fixation in posterior cranio-cervical instrumentation for osteolytic lesions, but there is a risk of injury to the vertebral artery, specially when some variations in the surgical anatomy exist.
Obtención de Extractos Hidro-Alcohólicos de Limoncillo (Cymbopogon citratus) como Antioxidante Natural

Abstract: the antioxidant activity of hydro-alcoholic extract of lemongrass was determined using two methods: i) 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (abts); and ii) ferric reducing antioxidant power (frap). the content of phenols using the folin ciocalteu reactant was also determined and the in vivo effectiveness of this extract using lard as a parent oxidant and the rancimat method was evaluated. ethanol 50% v/v was the best solvent to extract the bioactive constituents capable of stabilizing the lipid material from pork fat and protect it against oxidation. according to the results lemongrass extract exhibits a high antiradical phenolic compound content and a high reducing power. regarding the antioxidant effectiveness it was found that lemongrass extract with a concentration of 250 ppm can double the time of induction with respect to the control fat.

Abstract: phenolic compounds from the rhizome of turmeric (curcuma longa) were extracted using ethanol at 75% concentration as solvent. the phenolic compounds presented a concentration of 176b.b mg/l expressed as gallic acid and were added to a lipid matrix. the antioxidant and potential activities of the natural product were determined and compared with the antioxidant potential of the synthetic antioxidant (bht) finding that turmeric extracts had antioxidant potential similar to that of bht, both tested at the same conditions. the study gives new information on the extraction of natural antioxidant compounds showing the benefits that they have over synthetic compounds.

Abstract: different formulations of tablets of bitter chocolate, white and milk, based on standard neial - 6737: 2006, have been manufactured and evaluated. hardness at 2 and 4 mm of penetration, consistency k calculated from mottram`s model, fracture stress and elastic modulus were determined. the results show that for hardness, significant differences (p ≤ 0.05) between the bitter pill and white were found. the values of consistency k were significantly different (p ≤ 0.05) indicating that there are differences in texture between the bitter chocolate bars, white and milk. for fracture, bitter and white tablets showed no significant differences (p ≤ 0.05) between them in terms of fracture stress or elastic modulus. but these, in turn, are fractured with significantly lower efforts than milk bars.

Abstract: the production of bread with added rice flour through 17 experimental formulas. this with the aim of finding a formulation for the production of bread that presents better physical and sensory properties and improved nutritional quality. baking was carried out with the necessary moisture to keep the mix with constant consistency. the sensory attributes of the bread were evaluated by a trained panel and the analysis was performed using response surface graphs for each of the variables evaluated. highly significant linear correlations were obtained between experimental hardness, elasticity and specific volume and hardness and the characteristics determined by the judges. it is concluded that the mathematical models developed in this work can replace the sensory evaluation of the studied properties and determine the best formulation for the production of bread.
