Abstract: The objective of this study was to evaluate the quality of cookies formulated with different pequi peel flour contents (FCP), replacing wheat flour (FT). A completely randomized design was used, with control plus four treatments (12.5%, 25%, 37.5%, and 50% of FT substitution by FCP), and four replications. The acceptability, color (brightness), nutritional composition, energetic value, and calcium, magnesium, copper, and manganese contents of each sample were analyzed. The data were evaluated by variance analysis and the averages compared by the Tukey test. When the FT substitution by FCP increased, cookies became darker, with higher dietary fiber, moisture, ash, magnesium, manganese, and copper contents, and lower carbohydrates, proteins, lipids, and energetic value contents. In terms of acceptability, cookies with up to 25% of FT substitution by FCP do not differ from those without FCP (control), reaching 52% of consumer purchase intention and 5.2% of ingredients cost reduction, as compared to control. Therefore, up to 25% FT replacement by FCP, for this kind of cookie, is a feasible option, with functional, economical, and ecological benefits. KEY-WORDS: Caryocar brasiliense Camb.; residue; product development; dietary fiber.

Abstract: Descriptive exploratory study, from quantitative approach, aiming at investigating factors that affecting on the behavior of adolescents during childbirth. It was conducted at maternity reference in gestation high risk at Recife Pernambuco (PE), Brazil, whose sample from 41 adolescents in labor answered a questionnaire, implemented from January to March 2007. The data were grouped into tables and pictures, analyzed and discussed according to literature. Among the main results, it was revealed that 48,8% of adolescents in childbirth were in the age group from 16 to 17 years; 56,1% were from Recife; 56,1% were with the fundamental teaching incomplete; 53,0% had partners/husbands; 65,9% without the family support; 58,5% had family income from one to two minimum salaries; 88,0% were the first pregnancy, 58,5% with presence of obstetric events, 93,0% no cases of abortions and 58,5% with unwanted pregnancy; 97,6% participated in the pre-natal, however, 61,0% were not informed about the labor. Given these results, the following conclusions were made: that the socio-demographic data and the first pregnancy may have implication with the timing of the childbirth; the gestation desire, the partner participation and family support contributed in a positive or negative way during the gestation cycle and childbirth, the problems prevalent was the preeclampsis; is in the prenatal that pregnant should be prepared for pregnancy and labor, childbirth, know where the major changes occurring in their bodies and the strategies used in development of childbirth, also. But mostly, the teenagers were not informed by health professionals, as one of the main contributing factors that affecting during childbirth.

Abstract: The aim of this work was to evaluate the physical and sensory quality of form breads type formulated with different levels of substitution of wheat flour (FT) by toasted rice bran (FAT). It was determined the centesimal composition, including the soluble and insoluble dietary fiber contents. It was applied whole randomized design with five treatments (0.0%, 7.5%, 15.0%, 22.5% and 30.0% of FAT in substitution to FT) and three repetitions. The color and the breadmaking test scores were evaluated for each treatment. Microbiological analyses were done to the treatment with FAT which reached the highest total score. The higher substitution level of FT by FAT, darker and lower specific volume of breads, because of the high level of dietary fiber content of FAT (29,2%), what increased the moisture retention in the final product. Among the treatments containing FAT, the bread with 7.5% of FAT had the highest score at the breadmaking test (83.5), which differed (P < 0.05) from control treatment only for specific volume and total score parameters, presenting an adequate profile for Salmonella sp, total coliforms, moldiness and yeast in relation to legislation limits, and so it can be recommended for commercialization.

Abstract: With the objective of evaluating leaf gas exchange and nutrient concentration in plants of Physic nut irrigated with wastewater of domestic origin an experiment was conducted in protected ambient adopting randomized block in factorial layout, to study the effects of five levels of hydric reposition – HR (0.25; 0.50; 0.75; 1.00 and 1.25 times of water consumed by the plant), and two levels of phosphorus (135 and 200 g P2O5 plant-1 year-1) with four repetitions. The data of leaf gas exchange were obtained using a portable photosynthesis meter (IRGA). To determine the nutrient content of the plant, fourth and fifth leaves below the inflorescence was used. The reduction in water supply provoked reduction in the rate of carbon assimilation, limiting the production capacity of the Physic nut plants. The increase in level of hydric reposition with wastewater resulted increase in leaf gas exchange, notably in the rate of carbon assimilation. The accumulation of the nutrient follows the sequence: N > K > Ca > Na > Cl > Mg > P > S > Fe > Mn > Zn > Cu, and with the increase of water supply the leaf contents of phosphorus, zinc and copper increased. The doses of P2O5 did not influence the contents of studied elements.
