DEVELOPMENT AND APPLICATION OF A METHOD FOR QUALITY ASSESMENT OF PERISHABLE FOOD SUPPLIERS FROM A FOOD SERVICE

Abstract: studies evaluating the quality of food providers and the guidelines for their better qualification are scarce in literature. a structured checklist was applied in the supplier establishments to evaluate: infrastructure, sanitary-hygiene control of foods and handlers, and conditions of transportation and receiving. the supplier quality index was used to calculate the scores of vendors, and the score was assigned according to the fulfillment of the items presented on the checklist: "compliant", >75.0% compliance and "non compliant", ≥75.0%. the items "control of food hygiene and sanitary" and "infrastructure" showed the highest rate of compliance (85.15%, each), while the "sanitary-hygiene control of handlers" was that of most frequent non-compliance (80.0%). the proposed methodology was efficient and may serve as a model to be employed for evaluation of supplier performance.

Pocos estudios evalúan la calidad de los proveedores de materia prima y los guían para que cumplan mejor los requisitos. En este trabajo se utilizó una lista de verificación en los establecimientos de los proveedores para evaluar: infraestructura, control sanitario de los alimentos y manipuladores, así como las condiciones de transporte y recepción de la material prima. Se utilizó el índice de Calidad del Proveedor para calcular las puntuaciones, y la clasificación fue asignada de acuerdo con el cumplimiento de los ítems que figuran en la lista de verificación: "conforme" ≥75,0% y "no conforme" <75,0% de cumplimiento. El ítem "control higiénico de los manipuladores" tuvo la mayor frecuencia de incumplimiento (80%), mientras que los ítens "control higiénico del alimento" y "infraestructura" mostraron el más alto índice de cumplimiento (85,15%, cada). La metodología propuesta fue eficiente, y puede servir como modelo a ser utilizado para la evaluación de los proveedores.

Abstract: the obesity and the metabolic disorders associated characterize the metabolic syndrome, which has increased at an alarming rate around the world. it is known that environmental and genetic factors are involved in the genesis of obesity. peroxisome proliferator-activated receptors (ppars) stand out among these factors. they compose the nuclear receptor superfamily and there are in three isoforms (pparα,pparβ/δ and pparγ), which play an important role in the regulation of the metabolism of carbohydrates, lipids and proteins. the present review aims to understand the relationship between the diet, the ppars and the control of the blood glucose and body weight, since the understanding about the mechanisms by which these receptors act may benefit the development of the strategies aiming at prevention and elaboration of therapeutics actions which are more effective for the treatment of obesity and diabetes.

La obesidad y los trastornos metabólicos asociados, que caracterizan el cuadro del síndrome metabólico, han aumentado de manera alarmante en todo el mundo. Se sabe que factores genéticos y ambientales están implicados en la génesis de la obesidad. Entre estos se destacan los Receptores Activados por los Proliferadores de Peroxisomas (PPAR), los cuales componen la superfamilia de los receptores nucleares que poseen tres isoformas de PPAR (PPARα, PPARβ/δ y PPARγ) que desempe an importante papel en la regulación del metabolismo de los hidratos de carbono, de los lípidos y de las proteínas. El presente trabajo de revisión contribuye a clarificar la interrelación existente entre la dieta, los PPAR y el control de la glucemia y peso, ya que el conocimiento de los mecanismos por los cuales estos receptores actúan, puede beneficiar el desarrollo de estrategias de prevención y elaboración de procedimientos terapéuticos más eficaces para el tratamiento de la obesidad y de la diabetes.

Abstract: O leite e seus derivados s £o alimentos de alto valor nutricional, muito presentes na dieta do brasileiro e ricos em ribo avina, cuja de ci ancia end amica em v rias regi μes do mundo. Esse estudo investigou o conte odo de ribo avina em leites e derivados e avaliou se os valores encontrados s £o condizentes com os declarados no r 3tulo. Foram avaliadas 3 marcas de leite integral, 2 de leite desnatado, 2 de queijo tipo petit suisse e 3 de iogurte. As an lises foram conduzidas por Cromatogra a Liquida de Alta E ci ancia (CLAE). N £o foi observada diferen §a quanto ao conte odo de ribo avina entre os leites desnatados, mesmo quando apresentado no r 3tulo o termo a€ enriquecido com vitaminasa€ . O mesmo n £o foi observado em leites integrais, sendo encontradas diferen §as signi cativas quanto ao conte odo vitam -nico entre as marcas analisadas. Em iogurtes, esta diferen §a n £o foi signi cativa. Uma das marcas de queijo tipo petit suisse apresentou teor de ribo avina duas vezes superior outra. Notou-se superestima § £o dos valores de ribo avina descritos nos r 3tulos dos produtos que continham esta informa § £o quando comparados queles encontrados no presente trabalho. Veri ca-se a necessidade de scaliza § £o quanto ao enriquecimento de produtos l cteos e de intensi car as pesquisas nessa rea, devido escassez de dados na literatura.

Abstract: the objective of this work was to evaluate the yields of alfalfa cultivars in the cerrado region of minas gerais state, brazil. a randomized block design with three replications was used. during the dry and rainy season, significant differences were observed among cultivars for forage production, crude protein content, leaf:stem ratio, insect and disease resistance. the crioula and p 30 cultivars had the best performance for forage production and resistance to insects and diseases. these cultivars are recommended for forage production in the cerrado region of the metallurgic zone of minas gerais state.

Abstract: purpose: to verify the effect of consumption of grape extract isolated or combined with α-tocopherol supplementation on atherosclerosis model with apo e -/- mice. methods: after six weeks of atherogenic diet, apo e -/- mice were divided into the following groups: control, grape, tocopherol and grape plus tocopherol. the treatment progressed for 11 weeks when animals were submitted to euthanasia. results: all the treatments presented hypocholesterolemic effect with reduction of serum and liver cholesterol levels. this effect was parallel to an increase in the fecal excretion of cholesterol. there was also a higher fecal excretion of saturated fatty acids in groups receiving grape extract or α-tocopherol. all the groups treated presented a tendency to show higher levels of vitamin e. the fatty acid profile showed a tendency for monounsaturated fatty acid preservation after grape extract and α-tocopherol consumption. morphological analysis revealed a lower degree of evolution of the atherosclerotic plaque of the animals that were fed α-tocopherol combined with grape extract, even when no difference was found in the size of the largest lesion. conclusion: a synergistic effect between the polyphenols and α-tocopherol was observed, resulting in diminished evolution of atherosclerosis and a greater beneficial effect on atherosclerosis than the isolated consumption of antioxidants.

Abstract: this article discusses relevant philosophical, social, psychological, and pedagogical aspects that must guide the teaching of ethics/bioethics principles to undergraduate nursing students. there is a need to plan and use a systematic approach in teaching ethics/bioethics in the undergraduate nursing program in order to facilitate students' critical thinking and decision making in a variety of situations. the article also proposes an outline for teaching on ethics/bioethics in undergraduate nursing programs. this outline consists of: ethics/bioethics as a transversal subject; values, virtue, and ethical attitudes that students must develop; fundamentals of ethics/bioethics consistent with qualified faculty members, the use of methods and strategies student-centered; and, participative process in the construction of transversal teaching of ethics/bioethics.

Abstract: this study investigated gender and age differences in children?s feelings of guilt and personal responsibility towards other people?s distress. forty-eight children, aged between seven and eleven years, were randomly recruited from a state school in kent, england. children were presented with sets of cartoon stories depicting a variety of open-ended moral dilemmas. they were then asked to recount the story depicted, and to describe the thoughts, feelings, attitudes and motives of the characters portrayed. children?s responses were analysed and scored in terms of psychoanalyst melanie klein?s theory of persecutory and depressive guilt. it was found that girls gave more depressive guilt responses than boys. younger boys gave more persecutory guilt and less depressive guilt responses than girls and older boys. responses indicating concern for the other out of consideration for moral principles increased with age and were more frequent in boys. these results are interpreted as indicating gender differences in children?s expression of moral concern for others. implications for gender differences in emotional development are discussed.
