Abstract: current nutrition is focused mainly on the prevention of chronic non transmissible diseases, whose ethiology is influenced by the quality of diet and lifestyles. consumers are becoming increasingly aware of their self-care and expect to reach or maintain their health and welfare through the foods they eat. in response to this demand, there has been a steep increase in the development of functional foods (ff) by the industry. these foods do not only provide the classical nutrients, but also contain numerous phytochemicals that contribute to the maintenance of optimal health. the production of ff, also called healthy foods, has raised enormously in several countries, while the regulation of their properties as well as the health claims in their labeling have not reached the same grade of development with respect to the appearence of new products in the market. the international organisms have set the definitions of ff, a term not recognized by the chilean food regulations, and the standard for the way health benefit claims can be made. chile accepts a series of health claims, but it is considered that there is an urgent need to establish an agreement among consumers, legislators and industry representatives in order to establish the necessary definitions and rules that may facilitate the consumer's protection, mainly through an adequate access to information

Abstract: La nutrición actual está enfocada a la prevención de las enfermedades crónicas no transmisibles, donde la dieta y el estilo de vida desempe an roles etiológicos. Los consumidores están preocupándose cada vez más de su autocuidado y esperan, a través de los alimentos consumidos, alcanzar o mantener su salud y bienestar. La respuesta a esta demanda ha sido el vertiginoso desarrollo de la industria de los alimentos funcionales (AF), que además de su aporte de nutrientes clásicos contienen numerosos fitoquímicos cuyo consumo contribuye a la mantención de la salud óptima. La producción de estos alimentos, también denominados saludables , ha incrementado notablemente en los distintos países, sin que la regulación de sus propiedades y los mensajes que difunden sus características alcance el mismo grado de avance con respecto al desarrollo de nuevos productos. Los organismos internacionales cuentan con definiciones de los AF, término no reconocido por la reglamentación chilena actual, y dictan la pauta de la forma como se debe difundir los eventuales beneficios para la salud de su consumo. Capacidad antioxidante de frutas y verduras cultivados en Chile*

Abstract: the high prevalence of non transmissible chronic diseases (ncd) related to food consumption had increased the studies conducted to investigate the relationship between diet and health. a smaller incidence of ncd, with food patterns with high consumption of fruits and vegetables has been observed and chemical compounds of these foods have been one of the main subjects of the actual research in the reaqltion between food consumption and health. the effect of vegetable foods has been attributed to various nutrients and bioactive compounds with antioxidant activity. in order to determine the antioxidant capacity of vegetable foods cultivated in chile, natural fruits and vegetables were analyzed according to the frap (ferric reducing activity power) method, reading to the 4 minutes. in vegetables, the values were between 0.002 and 1.91 milimoles of fe/100g for cooked carrot and red pepper respectively. the values of the fruits ranged between 0.02 milimoles of fe/100g for the cucumber and 12.32 for maqui, the berries studies showed values between 3.10 for strawberry and 3.55 for wild blackberry. lemmon and quince with 0.25 and 0.23 respectively are located in the intermediate leveland the lowest values within the fruits corresponded to apple (fuji variety) and peaches.
DESARROLLO, CONSUMO Y ACEPTABILIDAD DE UNA BEBIDA LáCTEA CON DHA PARA EMBARAZADAS Y NODRIZAS DEVELOPMENT, INTAKE AND ACCEPTABILITY OF A DHA-ENRICHED MILK DRINK FOR PREGNANT AND LACTATING WOMEN

Abstract: El DHA es un nutriente crítico en mujeres embarazadas y en lactancia, con importantes beneficios en el desarrollo cerebral y agudeza visual del lactante. En Chile el consumo de DHA representa menos del 30% de las recomendaciones internacionales para el embarazo. El objetivo del estudio fue dise ar y evaluar una bebida láctea para embarazadas y nodrizas adicionada de 60 mg de DHA y 11 de EPA por porción de consumo (200 mi), además de estar fortificada con vitaminas y minerales. Se estudió una cohorte de 177 embarazadas que recibieron 2 Kg. mensuales de bebida láctea en comparación con un grupo control de 175 embarazadas que recibió el producto actualmente en uso en el Programa Nacional de Alimentación Complementaria (leche 26% de materia grasa, fortificada con Fe, Zn y vit C). Se evaluó aceptabilidad, tolerancia y consumo de ambos productos en dos oportunidades en el embarazo y a los 2 meses posparto. Ambos alimentos fueron bien evaluados en sus características organolépticas. El consumo promedio de ambos grupos fue 1,8 ± 1,0 tazas diarias, inferior a las 3 tazas programadas. Durante el embarazo la evaluación sensorial y el consumo fueron mayores para la leche entera, aunque las diferencias no fueron importantes desde el punto de vista biológico. Durante la lactancia no hubo diferencias en ninguno de los parámetros evaluados. Se concluye que la bebida láctea es una buena alternativa para mejorar el consumo de DHA durante el embarazo y lactancia. Abstract: La transición demográfica y nutricional que vive Chile se ha reflejado en una prevalencia alta y creciente de obesidad y enfermedades crónicas vinculadas a la alimentación. A pesar de los esfuerzos realizados es poco probable cumplir con las metas sanitarias propuestas para el 2010 en cuanto a reducir la obesidad y el sedentarismo. Como parte de sus funciones el Consejo Asesor en Nutrición y Alimentación del Ministerio de Salud ha revisado recientemente y definido las prioridades nacionales en este campo. En la opinión del Consejo los esfuerzos debieran orientarse fundamentalmente a fortalecer la estrategia de intervención nutricional a través del ciclo vital, a mejorar la capacidad institucional del país en el ámbito de los alimentos, a revisar y modernizar la gestión de los programas alimentarios y a desarrollar una alianza estratégica con las empresas productoras de alimentos, sociedades científicas, grupos académicos y con los propios consumidores orientada a promover una mayor oferta y consumo de alimentos saludables y a regular la publicidad en este campo. Para avanzar en la meta propuesta se requiere sin duda de una mayor inversión de recursos públicos y privados fundamentalmente orientados a la promoción de estilos de vida saludable, con especial énfasis en alimentación y actividad física The demographic and nutritional transition in Chile has been reflected by a high and growing prevalence of obesity and chronic illnesses related to nutrition. In spite of the efforts made, it is not likely that the country will comply with the health objectives proposals for 2010 to reduce obesity and sedentary tendencies. As part of their functions the National Health Food and Nutrition Advisory Council has recently checked and defined the national priorities in this area. In the Council's opinion, the efforts should be oriented to strengthen the nutritional intervention strategy through the vital cycle, to improve the institutional capacity of the country as far as food is concerned, to review and modernized feeding programmes and to develop a strategic alliance with food producing companies, scientific societies, academic groups and consumers. These actions are directed to promote a wider and better offer of healthier food and to regulate publicity. In order to advance in these proposals we need a major investment from public and private resources oriented to promote healthier styles of living, with special emphasis on nutrition and physical activity
Efecto de una bebida láctea con DHA en la composición de ácidos grasos del glóbulo rojo, de la leche materna y en el recién nacido

Abstract: epa and dha consumption in chile is markedly below international daily intake recommendations. for improvement of such low intake level, we developed a fortified powdered dairy drink, containing 60 mg/serving of dha and 14 mg/serving of epa. objectives: to evaluate the effects of dha consumption during pregnancy, parturition, and in the newborn, on lipid composition of red blood cell membranes and levels of dha and epa on human milk during lactation. one hundred and seventy five (175) pregnant women received 2 kg/month of the fortified powdered dairy drink (ge), and 177 received the regular milk provided by the ministry of health (gc). we monitored daily intake of the dairy drink and all other sources of dha and epa in the diet, and measured general biological indicators during pregnancy, parturition, and in the new born. on a subsample of 14 women on each group (ge and gc), we measured fatty acid composition of red blood cell membranes after 0 and 60 days of consumption with the fortified dairy drink, and levels of dha and epa on human milk after 2 months of lactation. of all women in the study, 16% had no consumption of fish, and 53% had no consumption of sea food. less than 25 % of all women had fish on a weekly basis. consumption of the fortified dairy drink tripled intake of dha, from 48.8 mg/day (ci 38.7-57.5) to 147.8 mg/day (ci 128.4-167.9) (p<0.001). the ge group had a higher content of dha on the phospholipids of red blood cell membranes: 11.1% (ci 10.2- 13.0) versus 17.9% (ci 12.9-23.0) (p<0.002). concentration of dha and w-3 fatty acids increased 50% in milk of women consuming the fortified dairy drink (p<0.06). there was a lower incidence of preterm parturitions on the ge group (2.8 vs 10.6%), but without statistical significance. the consumption of the fortified dairy drink produced a significant increase of dha consumption during pregnancy and lactation, and an improved composition of red blood cell membranes, as well as in human milk, proving to be a

Abstract: Se estudió la dieta alimentaria de Oncorhynchus mykiss (Walbaum 1792) en un ecosistema fluvial con baja intervención antrópica determinando si hay correspon-dencia entre los ítemes consumidos por el pez y la oferta alimentaria. El área de estudio corresponde al estero Nonguén, una subcuenca costera tributaria del curso inferior del río Andalién (36° 49' a 36° 54'S; 72° 57' a 73° 01'W), que con una orientación general de sur a norte, recorre una distancia de más de 15 km dando forma a una cuenca de 44 km2 de superficie. El estudio fue abordado mediante pesca eléctrica en dos períodos estacionales: invierno y primavera. Para ello se definió una secuencia lineal de 5 estaciones de muestreos localizadas en los sectores de ritrón y potamón en los primeros 5 kilómetros del estero. El espectro trófico identificado fue de 30 taxa, constituido básicamente por larvas de Ephemeroptera, Plecoptera, Trichoptera y Diptera. La dieta entre estaciones es similar (ISP 50%), donde Oncorhynchus mykiss se comportaría como un depredador generalista (Spearman rs = 0,45 p<0,05) The diet of O. mykiss (Walbaum 1792) in a fluvial ecosystem with low anthropic intervention was studied, determining if there is correspondence between items consumed by the fish and the nourishing supply.
