Fome, solidariedade e ética: uma análise do discurso da A??o da Cidadania contra a Fome, a Miséria e pela Vida
Vasconcelos, Francisco de Assis Guedes de;
História, Ciências, Saúde-Manguinhos , 2004, DOI: 10.1590/S0104-59702004000200003
Abstract: the article analyzes the discourse of citizen's action against hunger and poverty and for life, a social movement led by sociologist herbert de souza (betinho) that was at its peak between 1993 and 1994. from the perspective of certain concepts and principles introduced and disseminated by so-called bio-ethics, the present study identifies within this campaign an attempt to construct a social movement in brazil displaying characteristics quite similar to those associated with 'practical ethics'. these features are apparent in the three major principles that the movement applied as strategies for fighting hunger and poverty - to wit, solidarity, partnership, and decentralization.

Tendências históricas dos estudos dietéticos no Brasil
Vasconcelos, Francisco de Assis Guedes de;
História, Ciências, Saúde-Manguinhos , 2007, DOI: 10.1590/S0104-59702007000100010
Abstract: the objective of this work was to conduct a historical analysis of diet studies in brazil, from mid-xix century to early xxi century. the method involved a bibliographical review to identify and analyze the different kinds and main results of surveys on food consumption in the country, by means of six intentionally established transversal cuts (1837-1899; 1900-1929; 1930- 1939; 1940-1969; 1970-1989 e 1990-2005). several methodological procedures to evaluate individual and population diets were found: food history; 24-hour dietary recall; food intake diary or register; food weight and measures; food intake frequency questionnaire, and research on food budget. we conclude that food consumption evaluation methods and tools have improved simultaneously to deep and substantial changes in consumption patterns and food habits among the brazilian population.
Josué de Castro e a Geografia da Fome no Brasil
Vasconcelos, Francisco de Assis Guedes de;
Cadernos de Saúde Pública , 2008, DOI: 10.1590/S0102-311X2008001100027
Abstract: the aim of this article is to reinterpret the classic work geografia da fome [the geography of hunger], first published in 1946. the article provides a summary of the five food area maps and the main nutritional deficiencies in brazil, based on josué de castro's original conception. currently, the nutritional epidemiological profile identified by josué de castro, characterized by nutritional deficiencies (malnutrition, vitamin deficiencies, endemic goiter, iron deficiency anemia, etc.), overlap with chronic non-communicable diseases (obesity, diabetes, dyslipidemias, etc.). however, the complex and paradoxical issue of hunger is a persistently recurrent theme in brazil. given a series of current dilemmas, including the planet's ecological sustainability and the need to guarantee the human right to adequate, healthy nutrition, it is urgent to reawaken the struggle led by josué de castro for the adoption of a sustainable economic development model and a society free of poverty and hunger.
Os Arquivos Brasileiros de Nutri??o: uma revis?o sobre produ??o científica em nutri??o no Brasil (1944 a 1968)
Vasconcelos, Francisco de Assis Guedes de;
Cadernos de Saúde Pública , 1999, DOI: 10.1590/S0102-311X1999000200015
Abstract: this study reviews 209 original articles published in the journal arquivos brasileiros de nutri??o (1944/1968), a periodical edited by josué de castro, physician, specialist in nutrition, and founder-director of the institute of nutrition at the university of brazil (now the federal university of rio de janeiro). our methodology was based on quantitative and qualitative analyses, aimed at summarizing both the topic itself and the authors' backgrounds. results showed that 134 of the articles (64%) adopted a biological perspective to nutrition, mostly focusing on laboratory research concerning the chemical composition and nutritional value of brazilian foodstuffs. on the other hand, 75 articles (36%) took a social perspective, testifying to the first efforts by brazilian nutritional experts to create and improve specific methodological tools for investigating our population's nutritional conditions, thereby helping to consolidate the field of nutrition in the country.
Um perfil de Nelson Chaves e da sua contribui??o à nutri??o em saúde pública no Brasil
Vasconcelos, Francisco de Assis Guedes de;
Cadernos de Saúde Pública , 2001, DOI: 10.1590/S0102-311X2001000600035
Abstract: this study focuses on the academic and intellectual career of scientist nelson chaves, founder of the nutritionists school and the institute of nutrition at the federal university in pernambuco. the methodology was based on quantitative and qualitative analyses of this author's scientific production, published from 1932 to 1982. beginning with his search for solutions to malnutrition children from the zona da mata region in pernambuco, this scientist created what is commonly called the humanist-ecological paradigm of the brazilian nutritional issue, thus contributing to the institutionalization of the field of nutrition in public health throughout brazil.
Origem e conforma??o do campo da nutri??o em saúde pública em Pernambuco: uma análise histórico-estrutural
VASCONCELOS, Francisco de Assis Guedes de;
Revista de Nutri??o , 2001, DOI: 10.1590/S1415-52732001000400003
Abstract: the objective of this study was to investigate the process that established the field of nutrition in public health in the state of pernambuco (brazil), from 1930 to 1982. this period corresponds to the academic path of nelson chaves, founder of the nutritionists school and of the institute of nutrition of the federal university of pernambuco. the methodology was based on the analysis of existing written sources, represented by the publications of the scientists involved. the analysis of the sources suggests that the configuration of this scientific field constituted a complex process, defined by the influence of distinct interests, produced both internally and externally by the scientific community investigated. finally, this work tries to show how a specific group of scientists, starting from their own concerns to seek solutions to children's malnutrition in the state of pernambuco, created what is commonly called the nutritional humanist-ecological paradigm, thus contributing to the institutionalization of the field of nutrition in public health in brazil.

Vasconcelos, Francisco de Assis Guedes de;
Revista de Nutri??o , 2005, DOI: 10.1590/S1415-52732005000400001
Abstract: this study consists of a historical analysis of the programmes aimed at fighting hunger in brazil, in the period from 1930 to 2003. as methodological criteria for this analysis three transverse sections were established, corresponding to specific contexts in the history of the social policy on food and nutrition in brazil: 1930-1963; 1964-1984 and 1985-2003. the survey attempts to identify and describe the food and nutrition programmes, showing the main discursive categories in each section studied. an analysis of the programmes shows important changes, above all, since the mid-eighties. as from this point, the policy for fighting hunger in the country passed from authoritarian planning to partnership; from centralized to decentralized administration; from universal to specific benefits; from state control to social control; from distribution of food to transference of income in cash; from public financing to public and private partnerships between the civilian society and the state.

A ciência da nutri??o em transito: da nutri??o e dietética à nutrigen?mica
Vasconcelos, Francisco de Assis Guedes de;
Revista de Nutri??o , 2010, DOI: 10.1590/S1415-52732010000600001
Abstract: in the world scenario, the emergence of nutrition science was a phenomenon characteristic of the early twentieth century. in brazil, its emergence occurred in the health sciences area (or life sciences) and was characterized, at first, as a science of biological nature. this article aims to analyze the trajectory of the process of producing scientific knowledge which ensured specificity to the field of nutrition in brazil, from its emergence to the present. the theoretical assumptions that guide the article are: the concept of scientific field, developed by pierre bourdieu, and the concepts of paradigm and scientific community, introduced by thomas samuel kuhn. historical analysis shows that, from birth and in addition to its biological nature, brazilian nutrition assumed social and environmental dimensions, being characterized as a multidisciplinary field of knowledge formed from the integration of the biological sciences, social sciences and food and nutrition sciences. in the last decades, with the intensive development of communication and information technology, genetics and sustainability theories, major paradigmatic changes have occurred in the field of nutrition. therefore, one can say that nutrition is experiencing a post-genomic era and becoming a multidisciplinary science, characterized by the integration of the biological, social and environmental dimensions.
