Effects of Low Voltage Electrical Stimulation of Wether Lambs Carcasses

Abstract: Forty crossbred wether lambs, yielding carcasses with a mean weight of 40 kg, were slaughtered, exsanguinated and divided into two groups. The first twenty lambs were electrically stimulated five minutes after slaughtering (50 Volts, 60 Hz frequency, 60 sec) the second group was used as an unstimulated control. All the carcasses were stored in a cold room at a temperature of 1 C. The internal temperature and the pH values of the Longissimus thoracis (LT) muscle was measured in all the carcasses at 1, 3, 6, 10 and 24 h after slaughtering. Twenty-four h after slaughtering, from all the carcasses, 150 g of muscle LT were excised for palatability tests and for shear force value determination. Stimulation caused a significant (P<0.05) acceleration of glycolysis at 1 and 3 h after slaughtering compared with that in unstimulated carcasses. No significant differences were found between control and treated group as regard flavour desirability, overall palatability and overall tenderness.

Abstract: Plasmin (PL), a serine-proteinase, appears to be the predominant native proteinase in milk and it is mainly associated to casein micelles which represent its substrate (Bastian and Brown, 1996). Plasmin occurs in milk together with its inactive zymogene, plasminogen (PG) (Bastian et al. 1991). The cascade of reactions leading to plasminogen activation is regulated by a complex network of molecular interactions between plasminogen activators (PA) (tissue-type and urokinase-type) and at least three types of specific PA inhibitors (Politis, 1996). Stage of lactation affects PL and PA activities: late lactation is associated with higher activity of PL and PA (Baldi et al., 1996). Plasmin in milk is responsible for the hydrolysis of α- and β-caseins (Aslam and Hurley, 1997; Trujillo et al., 1997)...

Avoparcin Supplementation of Italian Friesian Dairy Cows Diet: Effects on Milk Quality

Abstract: To evaluate the effects on milk quality of supplementary Avoparcin in the diet, 40 Italian Friesian dairy cows were divided into two homogeneous groups, the treated one fed with Avoparcin added to a mineral-vitaminic premix, the control one fed with the same premix without Avoparcin. The trial lasted 60 days after two adapting weeks; each cow of the treated group received 120 mg daily of Avoparcin during the treatment period. No differences were found beetwen the two groups of cows for the following parameters: milk yield, total protein, fat, somatic cells and total bacterial count, while in the milk of the treated group lactose content was significantly (p<0.001) higher. After 45 days of treatment, trans isomers fatty acid content significantly increased (p<0.05) in the milk of the treated group, and particularly trans-vaccenic acid. Also some unsaturated fatty acids (linoleic and linolenic acid) significantly increased (p<0.05) their concentrations in milk fat of cows fed with Avoparcin supplementation.

Abstract: The role and functions of antioxidant micronutrients such as ascorbate (vitamin C), a-tocopherol (vitamin E) and carotenoids that are provided through the diet in aging and in the prevention of age-related diseases are discussed in the present work. In general, a healthy lifestyle involving regular exercise and avoidance of tobacco or alcohol abuse are the key to the prevention of several age-related diseases including cardiovascular diseases, dementia and cancer. A balanced and regular nutrition with at least five portions of fruit and vegetables per day is a critical constituent of such a healthy lifestyle.
