Revista fitotecnia mexicana , 2002,

Abstract: malolactic fermentation is responsible for the reduction of the total acidity, which usually is too high in young red wines. this fermentation provides a higher biological stability and higher complexity of aroma and flavor. in the state of rio grande do sul, malolactic fermentation becomes a necessity because frequently grapes have high acidity and the induction by bacterial inoculation has not been a common practice. this work had as a main aim to evaluate the lactic culture behavior in the induction of malolactic fermentation in relation to the wild bacteria. a must of cabernet sauvignon vitis vinífera was fermented and inoculated with the commercial culture of leuconostoc oenos, viniflora oenos in several residual sugar levels: 34.1 - 13.8 - 1.7 and 1.5g/l. the inoculations, in duplicate, were compared with spontaneous malolactic fermentation (control). degradation of malic acid was monitored through paper chromatography. organic acids were determinated by high performance liquid chromatography (hplc). reducing sugars (rs), °brix, ph, total acidity and alcohol were also analysed. the inoculated wine in the 34.1g/l rs stage fermented in 14 days, while the control took 28.5 days in average. in the 13.8 and 1.7g/l rs stages, viniflora oenos completed the malic acid degradation around 13 and 11 days, while the controls took 20.5 and 16.5 days, respectively. in the 1.5g/l rs stage, the inoculated wines and the controls did not demonstrate significative difference and fermented between 8 and 10 days. viniflora oenos completed the malolactic fermentation in less time. this demonstrates that the inoculation can be made before the end of alcoholic fermentation with good results. in the majority of the treatments there was not significative difference in the acetic acid production between the culture and the control. the behavior of the malic, acetic, lactic, piruvic and tartaric acids were showed.

Abstract: the multiplication of researches in the management area has been accentuated in the last years, having sometimes as characteristic the lack of resolution in the definition of the epistemo-methodological position adopted by the researchers in their works. independently of the possible mistakes derived from classification problems, it can be noticed that the tradition of researches in management, and more specifically strategy, demonstrate a predominance of positivist studies. an important advance for the field could be exactly in seeking an alternative position adapted to the needs of the area's researches. the objective of this work is precisely to suggest one of these alternatives, proposing a conception epistemological position and a possible methodological conduction of such position. thus, the present article presents three main contributions: 1. it highlights the importance of adding the epistemological discussion to the studies and researches of strategy, 2. it disposes of new epistemological and/or methodological classifications in order to represent more accurately the several stages of research in the field of strategy and 3. it proposes a methodology which allows one to operationalize the research situations experienced in the field of strategy.

Abstract: the recognition that no organization contemplates in itself same all the resources and necessary abilities to offers compatible with the demand is a new factor that sends to the organizations the articulated action of complementarities in net. thus, in this environment of great transformations the process to get new combinations is falling again on the capacity of the organizations into managing its interorganizations relationships efficiently. thus one is about an emergent subject where different approaches take the quarrels controversies. the challenge of the present work is to deepen the knowledge, to extend the domain, to offer an analytical vision on the referring subject to the production of individual results, through the cooperative work in net. it also must be a product of this work to the consolidation of an analytical model of development of interorganizations nets that can contribute in such a way as in the aid of how many private public managers.

Abstract: Organizations are social systems from joint activities of people, which operation and interaction among those people require a comprehension based on systemic principles. The study of business strategy provides reductive and disjunctive guidance as the product of its positivist treatment based on the precepts of classical science. However, the context of organizations and their own internal operation have been complexified over time, leading to questions about the relevance of the use of more classic orientations in the strategy of organizations. In this paper, we try to associate the development of an organizational strategy to the principles of Morinian complexity theory. Through the analysis of systemic principles, we found associations with various approaches used in studies of organizational strategy. The contribution of this paper is to show that complexity theory has applicability in various fields of science and, in particular, In the applied social sciences, because It provides new foundations that contribute to a better understanding of natural and social phenomena.

Abstract: growing concern about food safety indicates that supply chains play a predominant role in the productive process. the concepts of supply chain management (scm) may contribute substantially toward a more uniform process throughout the chain, facilitating the sharing of information and productive practices. this paper discusses the structure, links and degree of integration of brazil?s pork export supply chain based on the model of lambert et al. (1998), and the relation of scm to the valuation of pork attributes and the implementation of food safety programs. our empirical research was based on a sample of ten hog breeders whose production volume represented about 73% of the hogs slaughtered in 2002. our findings reveal a supply chain strongly influenced by the meat processing industry, whose connections with suppliers and buyers are of the managed type. these findings, and the confirmation of the importance of scm in the valuation of pork meat attributes and the implementation of food safety programs, place the processing industry in the position of key coordinator of policies aimed at promoting the safety of brazilian pork.

Abstract: This article intends to find out if forest certification can cause competitiveness and environmental preservation to converge in order to generate competitive advantage for those who adopt it. The analysis was based on a case study in the only property of Brazil with an FSC erva-mate (Yerba mate) certification. The study leads to two main conclusions: there is a 20% to 67% increase in the product’s final price, according to the market; access to market niches (organic and ecological products), new markets (cosmetics industry); and the opening of potential markets (pharmaceutical industry).
