Obtención y Caracterización de dos Concentrados Proteicos a partir de Biomasa de Kluyveromyces marxianus var. marxianus cultivada en suero lácteo Desproteinizado

Abstract: this work was carried out with the purpose of attain a protein concentrate from microbial biomass with low content of nucleic acids. the yeast kluyveromyces marxianus var. marxianus was grown on deproteinized and supplemented whey with nitrogen and vitamins sources at ph 4.5; 32 to 35°c and an aeration rate of 1.22 volumes of air fed for volume of broth per minute (vvm). the average biomass yield obtained was 0.30 g/g lactose, a lactose consumption of 93.21% and a cellular concentration of 4.15 g/l at the end of the fermentation. two protein concentrates were obtained: the first one by alkaline extraction and isoelectric precipitation (c1) and the second one by alkaline extraction, phosphorylation and isoelectric precipitation (c2). chemical analysis of both concentrates shown significant differences (p < 0.05) in the content of ash, fat, crude protein, non protein nitrogen, rna and carbohydrates. there was significant (p < 0.05) the decrease in the rna content from 4.59% (c1) to 2.71% (c2), important fact for the use of this protein concentrates for human consumption. phosphorylation of the protein (c2) produced an increase in the water holding capacity (4.21 to 4.64 g water/g protein), solubility (32.43 to 41.74 g solubilized protein/g total protein) and emulsifying capacity (903.38 to 971.91 g oil/g protein), as well as a decrease in the oil absorption capacity (1.79 to 1.65 g oil/g protein). these characteristics are important when considering the use of such protein concentrates as ingredients in bakery or meat products.
Importancia de studio d para la identidadnacional en el cine canadiensecontemporáneo

Abstract: Este trabajo continua nuestra línea de investigación sobre la representación de la mujer en el cine canadiense contemporáneo que comenzamos desde 1996, cuando analizábamos la representación de la mujer indígena en el cine de Canadá. Esta primera aproximación al tema nos permitió vislumbrar la inmensa profusión del cine documental realizado por mujeres cineastas en Canadá, gracias al respaldo y estímulo brindado por el Studio D del National Film Board of Canada creado en 1975. El uso de la entrevista a profundidad, de archivos fotográficos y fílmicos, y de la técnica de la voz en primera persona de las narradoras-protagonistas-heroínas de estos documentales son los elementos comunes que unen a los documentales analizados. A través de estos documentales podemos conocer, de primera fuente, como asumen las mujeres canadienses (cineastas y entrevistadas en su estrecha colaboración cinematográfica) el rol de la mujer en los procesos de socialización, de transmisión de valores, y sobretodo en la asimilación de su experiencia real y vivida en una sociedad multicultural y multiétnica como lo es hoy en día Canadá. Esta investigación nos reconfirma que el estudio del cine canadiense, especialmente el realizado por mujeres cineastas, es fuente valiosa para el conocimiento de la cultura y la sociedad canadiense contemporánea, dada su diversidad cultural, social y étnica.

Abstract: En este artículo se presenta un análisis sistemático de la evolución del recurso tierra durante los últimos 10 a os, desde diferentes perspectivas: las instituciones involucradas en su manejo, su uso actual y potencial, la actividad agropecuaria que sustenta dicho recurso a través de diferentes mundos agrícolas, y algunas otras opciones de agricultura sostenible que han surgido recientemente como es la agricultura orgánica. También se analiza el urbanismo, como aquella presión que efectúa la población sobre el recurso, y se discuten algunas alternativas de conservación planteadas a nivel nacional. Como conclusiones de la autora, en términos generales, el tema adolece de falta de información confiable desde hace 20 a os, hay una clara tendencia al paso de la tierra de peque os a más grandes propietarios y un incremento en la peonización a partir de la pérdida de la propiedad. El país se dirige hacia una clara dependencia de la compra en mercados extranjeros para la alimentación básica, a pesar de la existencia de nuevas opciones tecnológicas. Existen avances importantes en legislación pero aún están a nivel de papel y en términos urbanísticos, la presión social vence el ordenamiento territorial.
Hidrólisis enzimática in vitro y microscopia electrónica de la harina horneada y extruidida de arracacha

Abstract: in order to analyze the effects of the drying thermal treatments, upon the in vitro enzymatic hydrolysis of the starch, in the arracacha flours, arracacia xanthorrhiza bancroft, of the white and yellow morph types; the flours were obtained using convection methods at 70o - 80 oc temperature, and in a double spinning drum dryer, with asteam pressure of 40 psi. the changes in the structure of the starch granules were observed through the micrographics seen in the sweeping electronic microscope (meb). the results showed that the flours of both morph types were sensible to the hydrolysis of the pancreatic α- amylase enzyme; the flours obtained in the double spinning drum dryers, resulted of high enzymatic digestion, in comparison to the baked flours by the convection method, due to the higher incidence of the drying thermal treatment upon the structural changes at the level of the amorphous regions of the starch granules; which as seen under the meb showed the loss of the birefringence of the same
THE EFFECT OF WELLNESS BRAND AWARENESS ON EXPECTED AND PERCEIVED SERVICE QUALITY

Abstract: Enterprises in the tourism sector are being exposed to ever fiercer national and international competition and are confronted with difficulties in market positioning. One possibility for achieving differentiation on the market is high service quality and the creation of strong wellness brands. The aim of the present work is to investigate whether brands suggest a promise of quality that also appears to be especially important in wellness tourism. In this connection the study ascertains whether the brand awareness of wellness guests influences the perception of quality. The study also investigates whether demographic differences exist between brand aware and non-brand aware wellness guests. The results show that brands of wellness cluster are relatively weakly anchored in people's minds. There are demographic differences between brand aware and non-brand aware wellness guests. The existence of brand awareness raises the expected quality but not the perceived quality.

Abstract: The effect of collective potentials on pion spectra in ultrarelativistic heavy ion collisions is investigated. We find the effect of these potential to be very small, too small to explain the observed enhancement at low transverse momenta. (7 figures, bill be send on request)
Meson phase space density from interferometry

Abstract: The interferometric analysis of meson correlations provides a measure of the average phase space density of the mesons in the final state. This quantity is a useful indicator of the statistical properties of the system, and it can be extracted with a minimum of model assumptions. Values obtained from recent measurements are consistent with the thermal value, but do not rule out superradiance effects.
Nuclear pairing: basic phenomena revisited

Abstract: I review the phenomena associated with pairing in nuclear physics, most prominently the ubiquitous presence of odd-even mass differences and the properties of the excitation spectra, very different for even-even and odd-A nuclei. There are also significant dynamical effects of pairing, visible in the inertias associated with nuclear rotation and large-amplitude shape deformation.
Nuclear fission as resonance-mediated conductance

Abstract: For 75 years the theory of nuclear fission has been based on the existence of a collective coordinate associated with the nuclear shape, an assumption required by the Bohr-Wheeler formula as well as by the R-matrix theory of fission. We show that it is also possible to formulate the theory without the help of collective coordinates. In the new formulation, fission is facilitated by individual states in the barrier region rather than channels over the barrier. In a certain limit the theory reduces to a formula closely related to the formula for electronic conductance through resonant tunneling states. In contrast, conduction through channels gives rise to a staircase excitation function that is well-known in nanoscale electronics but has never been seen in nuclear fission.
