Assessment of proteolysis and sensory characteristics of prato cheese with adjunct culture Avalia o da proteólise e das características sensoriais de queijo prato com cultura adjunta

Abstract: Influence of adjunct cultures on the chemical and sensory characteristics, and proteolysis of Prato cheese was investigated. Cheeses were manufactured using a commercial starter culture and Lactobacillus strains (Lactobacillus plantarum or Lactobacillus helveticus) as adjunct cultures. Control cheeses lacked the adjunct culture. The chemical composition was analyzed at day 5 after manufacture and the proteolysis at days 5, 25, 45 and 65 of ripening. The sensory acceptance was assessed at 60 days. A split-plot design was used and the complete experiment was carried out in triplicate. The results were evaluated by ANOVA and Tukey’s test test at 5% significance level. There were no significant differences in chemical composition among the cheeses. A significant increase in proteolysis occurred during ripening period for the cheeses with adjunct culture when compared to cheeses without adjunct culture. Cheese with Lactobacillus helveticus showed higher scores for flavor, texture and purchase intent compared with the others treatments. Use of adjunct Lactobacillus suggests that the proteolysis of Prato cheese should be accelerated in order to reduce ripening period. A influência de culturas adjuntas sobre as características químicas e sensoriais, e sobre a proteólise do queijo Prato foi avaliada. Os queijos foram fabricados com cultura starter comercial e cepas de Lactobacillus (Lactobacillus plantarum ou Lactobacillus helveticus) como culturas adjuntas. Os queijos controle n o foram adicionados de cultura adjunta. A composi o química foi analisada no dia 5 após a fabrica o e a proteólise nos dias 5, 25, 45 e 65 de matura o. A aceita o sensorial foi avaliada em 60 dias. Um delineamento de parcelas subdivididas foi utilizado e o experimento completo foi realizado em triplicata. Os resultados foram avaliados pela análise de variancia e teste de Tukey no nível de 5% de probabilidade. Os queijos n o apresentaram diferen as significativas em rela o à composi o química. Um aumento significativo na proteólise ocorreu durante o período de matura o para os queijos com cultura adjunta, quando comparado aos queijos sem adi o desse tipo de cultura. Os queijos com Lactobacillus helveticus apresentaram médias das notas mais altas para os atributos sabor, textura e inten o de compra em compara o aos demais tratamentos. A utiliza o de Lactobacillus como cultura adjunta indica que a proteólise do queijo prato pode ser acelerada a fim de reduzir o seu tempo de matura o.

Abstract: introduction: otoacoustic emissions can be an alternative for cochlear evaluation in noise induced hearing loss (nihl). objective: to investigate the correlation between the findings of audiometry results and distortion product otoacoustic emissions (dpoae) in the military police. method: from cross-sectional and retrospective study, 200 military police officers were submitted to audiological evaluation - pure tone audiometry and dpoae. results: considering the provisions of ordinance 19 of the labour department, the results were suggestive of induced hearing loss by high sound pressure levels in 58 individuals, distributed as follows: 28 (48.3%) bilateral cases and 30 (51.7%) unilateral cases, and 15 (25.85%) in each ear. the correlation between the audiometric and dpoae showed statistical significance in most of the frequencies tested in both ears, confirming that the greater the degree of hearing loss, the smaller the dpoae amplitudes. in addition, there was observed significant difference between the dpoaes amplitudes of normal subjects and listeners with hearing loss, confirming the lowering of responses in the group with hearing loss. conclusion: considering that the correlation between pure tone audiometry and dpoae, we conclude that otoacoustic emissions can be a complementary tool for the detection and control of nihl in military police.

Abstract: this paper describes the morphological and anatomical aspects and the essential oil analysis of the leaves from hennecartia omphalandra j. poisson (monimiaceae), a toxic plant. the presence of trichomes formed by a single cell, paracitic stomata, groups of braquisclereids in the petiole and leaf blade; vermiform and ramiform sclereids, vascular system in arc softly invaginated at ends in the petiole, and in a flat arc in the middle vein, being the venation pattern a variation of craspedodromous-semicraspedodromous type, and essential oil stored in oil idioblasts in the mesophyll were the most important characters that can help the morphological diagnosis. the analysis of essential oil of the leaves showed the presence of monoterpenes, as well as sesquiterpenes hydrocarbons and alcohols, being the latter the most significant group. the major identified compounds were β-phelandrene (24.0%), germacrene d (10.5%), sabinene (9.3%), bicyclogermacrene (8.4%) and β-elemene (5.3%).

The correlation between the audiometric and DPOAE showed statistical significance in most of the frequencies tested in both ears, confirming that the greater the degree of hearing loss, the smaller the DPOAE amplitudes. In addition, there was observed significant difference between the DPOAEs amplitudes of normal subjects and listeners with hearing loss, confirming the lowering of responses in the group with hearing loss. Conclusion: considering that the correlation between pure tone audiometry and DPOAE, we conclude that otoacoustic emissions can be a complementary tool for the detection and control of NIHL in military police.

Abstract: background and objectives: prognosis of patients in the intensive care unit (icu) has a relation with their severity just before admission. the modified early warning score (mews) was used to evaluate the severe condition of patients 12, 24 and 72 hours before admission in the icu, assess the most prevalent parameters and correlate the mews before icu with the outcome (survival versus death). methods: retrospective analyses of 65 patients consecutively admitted to the icu from july to october, 2006 evaluating the physiological parameters 72 hours prior to admission. results: apache ii mean was 22.2 ± 7.9 points, mortality was 54.6% and standardized mortality ratio means was 1.24. mews means were 3.7 ± 0.2; 4.0 ± 0.2 and 5.1 ± 0.2 points, calculated 72, 48 and 24 hours previous to icu admission, respectively. an increasing percentage of patients with mews > 3 points within 72, 48 and 24 hours before admission - 43.8%, 59.4% and 73.4%, respectively was recorded. among the included physiological parameters respiratory rate contributed the most to the mews. highest mortality was found in patients with mews > 3 points already found 72 hours before admission. patients who died presented with a significant increase in the mews 24 hours prior to admission to the icu (in relation to the mews recorded 72 hours before) but the situation was not identified in survivors. conclusions: mews closely identified the severity of patients admitted to the icu, suggesting that it can be a reliable score, useful in the situations preceding the icu.

Abstract: this was a retrospective study, which aimed to describe the profile of nursing diagnoses of 31 patients starting hemodialysis treatment in a hemodialysis clinic in the south zone of s?o paulo. the survey was conducted from patients' records. the data used included: patient identification, underlying disease, data from physical examination notes and multidisciplinary evaluations. the most prevalent nursing diagnoses included: ineffective renal tissue perfusion (100.0%), risk for infection (100.0%), innefective protection (80.6%) and ineffective management of therapeutic regimen (54.8%). it was concluded that the identification of the profile of nursing diagnoses of these patients is essential for the planning of nursing care after initiation of hemodialysis.

Abstract: This report presents a modal and a static analysis of the assembly wing-flap ,using the finite element software’s ANSYS 11 PATRAN-NASTRAN 2007. The geometry was created in Catia V5 R18and imported. The results from the modal analysis refer to the natural frequencies and represent the displacement vector sum for each frequency. For the static analysis, 17 zones of pressure were chosen. For each zone the pressures values were calculated using the pressure distribution resulted from the INCAS subsonic wind tunnel experiments. For this analysis the results consist in the displacement vector sum and the Von Mises equivalent stress.

Abstract: Aircraft structure fatigue monitoring has been developed over decades presently reaching the stage where it became mandatory for all combat aircraft to be equipped with an airborne fatigue monitoring system. These systems usually collect operational data for calculating the safe fatigue life or inspection interval for the aircraft structure. This paper presents an analysis of the current state of fatigue monitoring systems on the IAR-99 SOIM based on the experience of international fatigue monitoring programs and analysis of structure resource improvement.Aspects related to strain gauge and calibration, flight parameter data gathering, data integrity, comparison with fatigue test results and fatigue damage models are also investigated by means of flight tests.
O Impacto da Atividade Lúdica no Desempenho de Alunos que Cursam a Disciplina “Perícia Contábil” em Cursos de Gradua o em Contabilidade Oferecidos por IES da Grande Florianópolis - SC

Abstract: O presente estudo tem como principal objetivo avaliar o impacto da atividade lúdica “baralho de perícia contábil” (bp) no desempenho de alunos que cursam a disciplina Perícia Contábil (dpc) em cursos de gradua o em Contabilidade oferecidos por Institui es de Ensino Superior (IES) da Grande Florianópolis. A pesquisa tem caráter descritivo com abordagem predominantemente quantitativa e com auxílio da abordagem qualitativiva para análise dos dados. Nela se aplicou a lógica indutiva, através da análise estatística descritiva dos dados obtidos por questionários junto aos profes-sores das IES e aos alunos da dpc; a estes últimos aplicou-se ainda o teste estatístico t. Os resultados junto aos profes-sores demonstraram que: (i) o ensino das principais etapas e/ou fases de um processo judicial ocorre na maioria das IES (86%); (ii) o ensino das principais atividades do perito do juízo e do assistente técnico é realizado em todas as IES; (iii) para 66,67% dos professores os problemas na dpc est o relacionados às dificuldades dos alunos com a área de direito. Já os resultados da aplica o do bp junto aos alunos demonstraram que: (a) houve aumento do desempenho médio dos alunos nas três IES; (b) apenas os resultados da primeira IES permitiram a rejei o da hipótese inicial H0, isto é, os resultados probabilísticos indicam que, em média, o desempenho dos alunos da primeira IES aumentou após terem jogado com o bp. Conclui-se que, pelo fato do tamanho da amostra da terceira IES e da segunda ser muito pe-queno, faz-se necessária a realiza o de novas aplica es do jogo bp com a finalidade de confirmar os resultados en-contrados.
