Ciência & Saúde Coletiva , 2011, DOI: 10.1590/S1413-81232011001000030
Abstract: the confirmation that bacillus cereus is a microorganism that represents a special problem in food processing plants, such as university cafeterias, inspired this work, the scope of which was to evaluate the risks consumers are exposed to by identifying the contamination points from whence the microorganism can be transferred on to food. the presence of b. cereus was detected in 38.3% of the equipment and utensils studied. counts of up to 5.7x10 2 cfu/cm2 were found, with the highest values being found in samples from distribution sectors, indicating the importance of these areas as potential sources of microorganism transmission on to food.

Abstract: this study reports an evaluation performed at food service federal university vi?osa in southeast brazil, as a contribution to estimate the risks that users of similar public food services are exposed to, by identifying environmental surface areas from which bacillus cereus may be transferred to food. samples have been collected in order to evaluate the environmental contamination, using the "swab" technique and surface platting in myp agar, for expressing the number of cfu/cm2 in 24 stainless steel tables that may have contact with raw or cooked foods. each table was analyzed twice. although some samples did not exhibit contamination (73%), counts up to 60 cfu/cm2 were found, with the higher values being obtained from the vegetable pre-preparation section samples. the presence of this pathogen reinforces the need of using adequate sanitary procedures, especially in places where contamination may occur in ready to eat foods, in order to prevent food borne disease outbreaks due to the microrganism.

Abstract: this study was carried out to provide subsidies for sanitary actions applied to manipulators, environments and surfaces, assessing levels of microbiological contamination in three commercial restaurants (a, b and c) in vi?osa, minas gerais state. microbiological analysis were performed for presumptive counting of bacillus cereus and mesophilic aerobic bacteria on surfaces of stainless steel benches, equipments, utensils and hands of the manipulators (swab technique), and air (simple sedimentation). it was observed expressive contamination by mesophilic aerobic bacteria in the samples examined, exceeding limits proposed by the apha (american public health association). mesophilic aerobic microorganisms were detected in 100% of air samples, with counts ranging from 4.1 x 101 cfu/cm2/week to 1.1 x 103 cfu/cm2/week. typical colonies of b. cereus were detected in 19% of all air samples, and the presence of such colonies was observed in all restaurants in levels that reached 2.1 x 101 cfu/cm2/week. in surfaces and hands examined it was also possible to isolate typical colonies of the pathogen in all restaurants. the sanitary situation of the environments studied requires interventions to reduce risks of great magnitude, concerning the occurrence of foodborne diseases.

Abstract: world food day is celebrated on october 16, and every year a theme related to global food problems is chosen, and strategies to solve these problems are developed. the objective of this communication is to present a comprehensive review of those chosen themes, by decade, from its creation until the beginning of the 3rd millennium. such themes have contributed to substantiating the problems whose eradication requires effective actions, as well as to warning the population about the urgent need for preventive measures that will ensure the survival of future generations.

Abstract: hemangiomas are benign hepatic tumors that in most cases require no surgical excision if correctly identified. ultrasound (us) usually shows hyperechogenic tumors although some unusual hypoechogenic hemangiomas have also been described. fifteen patients with hypoechogenic hemangiomas, identified in a period of approximately four years, were evaluated prospectively. as the us findings of these hemangiomas were atypical, the final diagnosis was established after a combined analysis of us and helical computed tomography (helical-ct) findings. helical-ct showed centripetal enhancement after administration of intravenous iodinated contrast media in all lesions. the levels of carcinoembrionic antigen and alpha-fetoprotein were measured in all patients who were also submitted to endoscopy and colonoscopy (or double contrast enema). no abnormalities were found in any of these tests. additionally, us and helical-ct examinations were performed 8 to 12 months after the initial investigation in all patients, and no changes were seen in the appearance and dimensions of the lesions. there was associated steatosis in 14 of the 15 patients with hypoechogenic hemangiomas. the authors concluded that atypical hypoechogenic hemangiomas occur mainly in patients with steatosis and only occasionally in patients with nonsteatotic liver. in these atypical cases complementary imaging and biochemical studies, and follow-up tests are necessary to establish an accurate diagnosis.

Abstract: we analyzed the ultrasonographic findings of 21 patients with mild acute pancreatitis. the presence or absence of pancreatic hypoechogenicity and peripancreatic fluid collection was assessed. pancreatic hypoechogenicity was identified in 19 patients (90.5%) whereas small sac fluid collection was identified in 3 (15.8%) of these patients. no abnormality was seen in 2 patients (9.5%). regarding the etiology of acute pancreatitis, cholelithiasis was identified in 15 patients (71.5%), alcohol abuse was identified in 4 patients (19.0%), and in 2 patients (9.5%) no probable etiology could be found. the authors conclude that ultrasonography may identify abnormalities in the majority of patients with mild acute pancreatitis and can be used to assess patients with peripancreatic fluid collections.

Abstract: the purpose of this study was to quantify the genetic diversity among popcorn genotypes on the market and in the final test phase, suitable for three environments in brazil, based on 11 agronomic traits and issr markers. in the environment campos dos goytacazes a more reliable group formation was observed than in the other environments. the molecular data indicated the presence of cultivars recommended in the same group, as in the case of ufvm2 bar?o de vi?osa, iac 125, zélia and jade. this result is an appeal to the few popcorn breeders in brazil to pay particular attention to increase the genetic diversity among breeding programs conducted by public and private institutions in the country. there was virtually no correlation between the distance matrix obtained by the issr marker and the matrices obtained by the agronomic data.

Abstract: intraoperative ultrasonography influences surgical strategy in a significant number of patients operated due to benign or malignant conditions, and is the most sensitive technique for the detection of small lesions, particularly in the liver and in the pancreas. in pancreatic surgery, intraoperative ultrasonography is helpful in the localization of islet cell tumors and in the assessment of the resectability of adenocarcinomas. the technique may also play a role in chronic pancreatitis surgery. the authors present an up-to-date review of the evolution of intraoperative ultrasonography in pancreatic surgery.
