Polyphenol Oxidase Activity and Colour Changes of ‘Starking’ Apple Cubes Coated with Alginate and Dehydrated with Air  [PDF]

Abstract: The objective was to study the effect of alginate coating on polyphenol oxidase (PPO) activity and colour of ‘Starking’ apple cubes during dehydration with hot air. Apple cubes were dehydrated at 20oC, 35oC, or 40oC, with a parallel airflow. Analysis of PPO activity, colour (L*, a*, b*) and dry matter were performed along the dehydration process at each temperature. All samples presented a peak in relative PPO activity in the beginning of the drying. Exponential models fitted well the experimental data after the peak. Cubes without coating presented lower PPO activity, suggesting lower browning, than coated samples throughout the dehydration process, for all temperatures. Better results for coated samples were obtained with a perpendicular airflow drying at 40oC, after dipping the whole apple in water at 60oC for 10 min. In order to prevent coated samples from browning, drying by perpendicular airflow preceded by a thermal treatment of the whole apple is required.

Abstract: background and objectives: critically ill patients frequently develop neurologic symptoms, which frequently become a clinical challenge. described approximately 50 years ago, pontine neuronal demyelination is a pathologic change associated with neurologic and psychiatric problems after liver transplantation. the objective of this report was to present a case of central pontine myelinolysis diagnosed after liver transplantation and to discuss its pathophysiology. case report: a 29 years old female patient underwent liver transplantation for fulminant hepatic failure. postoperatively, she developed neurologic symptoms characteristic of the locked in syndrome and the mri showed changes compatible with central pontine myelinolysis. the patient did not develop dramatic changes in sodium plasma levels, which is frequently incriminated as the causal agent, and improved considerably within a few weeks. conclusions: the etiology of central pontine myelinolysis is multifactorial, and special attention should be given to the group of patients at greater risk, such as those with sudden changes in the plasma levels of sodium, liver transplantation, chronic alcoholics, and malnourished. it is important to recognize that osmotic demyelination can develop in patients with low, normal, or elevated plasma levels of sodium, indicating the contribution of other trigger factors.
Um estudo com egressos de institui??es para crian?as em situa??o de rua: percep??o acerca da situa??o atual de vida e do atendimento recebido

Abstract: this article aims to identify the life situations of street children and adolescents after leaving care institutions; note how they evaluate their current life; and understand how they perceive the institution in which they stayed and the treatment they received there. nine male adolescents participated (18-20 years old). a semi-structured interview script, evaluated through content analysis, was used. the results revealed a variety of life situations. the participants tended to describe their current life situation as satisfactory and they also positively evaluated the institution in which they stayed. the results are discussed in the context of institutional tie trajectory (itt); the modalities for leaving the streets as described in the literature; and the importance of the relationship between educator and child/adolescent. the implications for public policies treating this population are discussed.

Abstract: this paper presents the conceptions of students of universidade federal do rio grande do norte health courses about relevant psychosocial aspects related with their training process, such as motives for choosing that course, expectations and professional targets and how the professional-client/patient relationship is conceived. it is believed that the professional training process is a privileged space of study of ideas, values and conceptions permeating the health practices. it is also considered that changes in the actual health practices are possible not only through a structural reformulation of the sector, but also through conceptual and ideological self-evaluation of the way that this future professional conceives his practice. results point out for a training process that tends to neglect the complexity and multidimensionality of the human life and favor theoretical and technical aspects underrating the human aspects of professional practice.
Reivindicando a subjetividade dos usuários da Rede Básica de Saúde: para uma humaniza??o do atendimento

Abstract: this paper analyzes how clients of the public health system in natal, rio grande do norte, brazil, "give meaning" to their situation as "patients", basically focusing on three aspects: (1) evaluation of care, (2) awareness of their rights as citizens and role in improvement of the service, and (3) expectations regarding the encounter with health professionals. the results point to many deficiencies in the health system, besides demonstrating the population's passivity and resignation towards the present situation. the need to consider clients' subjectivity is important, as is the health professional-client relationship, with their encounter considered a prime moment for establishing a humanizing process in health practice, besides fostering the development of a critical awareness among clients concerning their rights and their role as agents of change in the health system.

Abstract: nutrition is an important factor in bone mass development/maintenance and in osteoporosis prevention. this disease is characterized by decreased skeletal mass and increased susceptibility to fractures. the greatest determinant of this condition is the peak bone mass (pbm). hence, alterations over time indicate the importance of maintaining adequate nutrition during the development of this peak. in adult age, individuals who reached a high pbm will have a low risk of developing bone metabolic diseases when aging. nutrients exert intense and wide-ranging effects on skeletal structures. some of them have been consistently related with bone health, such as calcium, phosphorus and vitamin d. however, it has been suggested that other nutrients are essential for normal bone metabolism: proteins, lipids, potassium, vitamins k and a, and sodium chloride. the influence of interactions between these nutritional factors, environment, lifestyle, and heredity will help understand the complex development of osteoporosis and subsequent fractures. in addition, energy deficits can lead to reduced bone mass, in view of endocrine-metabolic disorders caused by food deprivation. this review aims at clarifying the impact of nutrients and of calories intake on the bones during different stages in life, describing possible interactions among nutrients and how these could affect bone and mineral homeostasis.

Abstract: Este artigo objetiva identificar a situa o atual de vida de egressos de uma institui o de atendimento para crian as e adolescentes em situa o de rua, a avalia o que fazem do momento atual de vida, bem como compreender a sua percep o acerca da referida institui o e do atendimento recebido. Participaram nove adolescentes do sexo masculino (18-20 anos). Utilizou-se uma entrevista semi-estruturada, a qual foi analisada a partir do procedimento de análise de conteúdo. Os resultados mostraram uma variedade de situa es de vida. O momento atual de vida foi descrito como satisfatório e a institui o frequentada no passado também foi avaliada de forma positiva. Os resultados s o discutidos à luz da trajetória de vincula o institucional (TVI), das modalidades de saída da rua descritas na literatura e da importancia da vincula o educador - crian a/adolescente. Implica es para as políticas públicas de atendimento a essa popula o s o discutidas. Reivindicando a subjetividade dos usuários da Rede Básica de Saúde: para uma humaniza o do atendimento

Abstract: O presente estudo objetivou investigar a forma como os usuários dos servi os públicos de saúde em Natal, Rio Grande do Norte, Brasil, "d o sentido" à sua situa o de "paciente", interessando basicamente três aspectos: (1) a avalia o dos servi os recebidos; (2) a consciência de seus direitos como pacientes e seu papel na melhoria desses servi os; (3) as expectativas com rela o ao encontro com o profissional de saúde. Os resultados apontam para as inúmeras deficiências encontradas no setor saúde e para a passividade e resigna o da popula o em face do quadro atual. Reflete-se, ainda, sobre a necessidade de se valorizar a subjetividade do usuário, bem como sobre a rela o profissional-paciente/cliente como um momento importante no processo de "humaniza o" das práticas de saúde. Esse reconhecimento deve possibilitar a constru o, pelo usuário, de uma consciência crítica acerca de seus direitos e do seu papel como agente de mudan as no sistema de saúde.

Abstract: hepatic hemangioendothelioma is the most frequent hepatic tumor in infancy, but rarely detected in adults. this tumor can cause vascular lesions that can act as arteriovenous fistulas and produce life-threatening high output congestive heart failure with respiratory compromise. we report a case of a 35 years-old woman who developed nausea, vomiting, weight lost and abdominal mass in which the pathological examination of the hepatic lesion showed a infantile hepatic hamangioendothelioma. this is the third case in adult patients described in the literature.

Abstract: Exploratory and descriptive study, of quantitative boarding, whose objective is to identify the use and the acceptance of condoms masculine and feminine for the students of the Courses of the Health Sciences Center of the Federal University of Pernambuco. The population is constituted for 4.115 students of both the sexes, with definition of sample for the stratification for course, selecting of random form the groups and the students who will answer two questionnaires with multiple choices assertives, after the research project to be approved by the Committee of Ethics in Research of the Agamenon Magalh es Hospital. The data will be organized, analyzed and presented in tables and graphs, proceeding to the quarrel with pertinent literature.
