微波对天麻鱼头汤营养和安全性影响

Abstract: 为探讨微波加工对药膳鱼汤品质影响,以天麻、鱼头为原料,分别采用微波炉和传统电炖锅加热的方法,研究其水溶性蛋白、游离氨基酸、矿物质、天麻素、嘌呤和感官品质的变化规律。结果表明:微波加热更有利于小分子物质的溶出,如氨基酸、矿物质、天麻素和嘌呤等,微波煲汤中游离氨基酸含量甚至高达电炖锅的1.5倍,对蛋白质等大分子物质的影响较小;在安全性方面,微波200 W小功率的煲汤或者400 W大功率短时间煲汤产生的嘌呤含量均不超过15 mg/L,既符合痛风病人安全需求又改善了鱼汤的风味;在感官评价方面,采用微波炉400 W煲汤1 h的感官得分可以达到与电炖锅煲汤3 h相类似的效果,可以将煮制周期缩短2 h,微波加热可大大缩短煲制时间,是一种更加高效的煲汤方式。
To investigate the effects of microwave processing on the quality of medicated fish soup with fish head and gastrodia as raw materials, the change rules of water-soluble protein, free amino acids, minerals, gastrodin, purine and sensory quality were studied by comparing microwave heating with conventional electric saucepan heating. The results showed that the microwave heating was more beneficial to the dissolution of small molecules such as amino acids, minerals, gastrodin, purine. The content of free amino acids in microwave soup was as high as 1.5 times of that of electric saucepan heating, but microwave heating had little effect on protein and other macromolecules; In terms of security, the content of purine cooked at a low microwave power of 200 W or short-term of 400 W was less than 15 mg/L, which could both satisfy safety requirements of gout patients and improve the flavor of soup; In terms of sensory evaluation, the score of sensory evaluation cooked by electric saucepan for 3 h was equal to that of microwave 400 W heating for 1 h, which reduced cooking cycle for 2 h successfully, so microwave processing was a more effective method compared with other conventional heating methods.
脉冲电场协同酶法制备淀粉锌络合物及其显微结构的研究

Abstract: 以普通南方大米淀粉为原料,采用α-淀粉酶和糖苷酶协同制备多孔大米淀粉,研究了酶含量、酶配比和时间等因素对多孔淀粉水解率和吸油率的影响,得出制备多孔大米淀粉的最佳条件为:酶含量1.0%(以淀粉干基计),酶配比(α-淀粉酶:葡萄糖苷酶)1:12,处理时间12 h,所得多孔淀粉的水解率为50%,吸油率为96.3%。在此基础上,分别选择原淀粉和多孔大米淀粉(水解率分别为30%、40%和50%)与0.1 mol/L的乙酸锌水溶液进行脉冲电场处理协同强化锌络合,脉冲电场处理条件为电压20 V、频率1 kHz、流速24 mL/min,有效处理时间分别为2.88×103 μs、8.64×103 μs和14.4×103 μs;借助扫描电子显微镜(SEM)及红外光谱(FT-IR)对淀粉络合物的显微结构进行研究,并通过原子吸收测定淀粉络合锌的含量,最终得出:水解率40%的多孔大米淀粉经脉冲电场(2.88×103 μs)处理后的锌络合含量最高,为352.85 mg/100 g。
The effects of enzyme content, enzyme ratio and time on hydrolysis rate and oil-absorption rate of porous rice starch, which was prepraed byα-amylase and glucosidase, were studied by using the common southern rice starch from China as raw materials The optimized conditions for preparation of porous rice starch were as follows: enzyme content,1.0%, enzyme ratio, 1:12, processing time, 12 h, and the hydrolysis rate and oil-absorption rate of porous starch were 50% and 96.3%. Under this condition, the original starch and porous rice starch (hydrolysis rate of 30%, 40% and 50%) were selected for strengthing thereaction of Zn complex by PEF treament with zinc-acetate solution (0.1 mol/L), and the conditions were as follows: voltage, 20 V, frequency, 1 kHz, fluid rate, 24 mL/min, treatment durations, 2.88×103 μs, 8.64×103 μs and 14.4×103 μs. In addition, the microstructure of the starch complex was investigated by scanning electron microscope (SEM) and infrared spectroscopy (FT-IR), and the zinc content of starch-Zn complex was determined by atom absorption spectroscopy. Consequently, the highest zinc contentwas 352.85 mg / 100 g with the hydrolysis-rate of 40% and PEF treatment time of 2.88×103 μs.
蜂窝状活性炭对VOCs的吸-脱附性能研究

Abstract: 蜂窝状活性炭适于处理大风量、低浓度有机废气,通过建立动态吸-脱附实验装置,系统研究了不同吸附质、入口甲苯浓度、空床气速、脱附温度等参数对其吸-脱附性能的影响.结果表明,在规定出口甲苯浓度时,降低入口甲苯浓度,蜂窝状活性炭可持续吸附时间增加,吸附效率提高;在工程应用吸附过程中,空床气速推荐取1.2~1.8m·s-1.在脱附过程中,出口甲苯浓度均出现峰值,随着脱附温度升高,曲线波动越大,工程应用中推荐脱附温度90℃;脱附空床气速对出口甲苯浓度峰值有影响,推荐取0.2~0.4m·s-1.

Abstract: 多套计算机仿真系统的联网资源具有“成长性”、“自治性”和“多样性”的自然特性,给电力系统全仿真计算机的联网资源管理带来巨大挑战。本文以虚拟计算环境iVCE为指导,提出iVCE-PS的基本概念,引入电力系统元件元素、电力系统仿真共同体和电力系统仿真执行体的概念,构建电力系统虚拟计算环境iVCE-PS的体系结构,并通过分层的方法解析其基本功能。
Resources over internet on several sets of computer simulation system have such intrinsic characteristics as growth, autonomy and diversity, which have brought many challenges to the computer internet resource management of power system simulation. The basic concepts of internet-based virtual computing environment to power system (iVCE- PS) is given, which is guided by the theory of internet-based virtual computing environment (iVCE), at the same time the concepts of power elements, power system simulation commonwealth and power system simulation executor are introduced. The architecture of iVCE-PS is established, and its basic function is resolved through layered approach.

Abstract: 心理学是研究人的心理活动规律的科学,而研究心理学的过程无疑问也是一系列心理活动的过程。在研究心理学的心理活动过程中,不同民族的心理学家必然要受本民族的时代精神所影响。从这个角度来分析心理学派别的形成就不难发现:构造派和格式派心理学之所以产生于德国;机能派和行为派心理学之所以产生于美国,决非历史的偶然,它与本民族的时代精神有着密不可分的联系。中华民族的时代精神也必将对建立具有中国特色的心理学产生积极的影响。

Abstract: 本文通过对宝清双柳煤矿主斜井表土砌碹段发生沉降、变形的原因分析与研究,提出了分阶段对井筒进行加固处理的施工方案,成功的阻止了井筒继续沉降、变形。该方案对有类似问题的井筒加固有较高的参考价值和借鉴。
