元分析方法评估食品加工对果菜中农药残留的作用

Abstract: 本文采用元分析方法评估食品加工对果类蔬菜中农药残留作用。通过多个数据库文献搜索、数据采集、元分析统计计算,获得特定食品加工方式对果菜中农药残留作用的响应比值、实验间变异及置信区间,并对实验数据进行了同质性Q检验。结果显示研究所取数据具有同质性,自来水清洗、多种溶液清洗、去皮、水煮、清炒、漂烫、烘烤对果菜中农药作用的响应比值均小于0.6,说明食品加工对去除果菜中农药残留有较好作用,可达到40%以上;其中漂烫和烘烤的响应比值分别为0.04和0.01,农药去除效果极佳,可达到95%以上;与自来水清洗相比,乙酸溶液、氯化钠溶液、碳酸钠溶液、碳酸氢钠溶液清洗对农药去除均有较好的效果。元分析获得食品加工对果菜中农药残留作用的响应比值可作为加工因子用于食品安全风险评估中,并可指导果菜安全消费。
A meta-analysis approach was used to study the effects of food processing on pesticide residues in fruits and vegetables. The response ratios, confidence intervals, and intra assay coefficients of variation for the effects of specific food processing methods on the pesticide residues in fruits and vegetables were obtained via literature search using multiple databases, data collection, and meta-analysis; the homogeneity of the data was examined by Q-statistic. The results indicated that the collect data were homogeneous and all the response ratios from the processing methods, including washing with tap water, washing with various solutions, peeling, boiling, frying, blanching, and baking, were all less than 0.6, indicating that the food processing methods mentioned in the paper showed optimum effects on the removal of the pesticide residues in fruits and vegetables, with a removal rate of up to 40%. Among these, the response ratios of blanching and baking were 0.04 and 0.01, respectively, showing that both methods effectively removed pesticide residues (a removal rate of more than 95%). Compared with tap water washing, washing with acetic acid solution, sodium chloride solution, sodium carbonate solution or sodium bicarbonate solution showed a favorable effect in the removal of pesticide residues. The response ratios reflecting the effect of the food processing on the pesticide residues in fruits and vegetables were obtained by a meta-analysis approach, which has applications in food safety risk assessment. This method can also serve as a guide for fruit and vegetable consumption.
烹饪及贮藏对八种常见叶菜中叶酸含量的影响

Abstract: 叶菜是居民膳食叶酸的主要来源,我国叶菜种类丰富。为探明常见叶菜中叶酸含量及日常烹饪、贮藏对其影响,以期最大程度保留叶菜中叶酸,以八种常见叶菜为对象,液相色谱检测分析叶菜中5-甲基四氢叶酸和叶酸含量,并研究水煮、清炒、蒸制及冷藏过程中5-甲基四氢叶酸及叶酸含量变化。结果表明:菠菜中5-甲基四氢叶酸含量最高,为75.32 μg/100 g,其它依次为小白菜、大白菜、生菜、紫甘蓝、青菜、甘蓝、油麦菜;叶菜中叶酸含量远低于5-甲基四氢叶酸,甘蓝中甚至无检出;烹饪方法对叶菜中5-甲基四氢叶酸和叶酸含量均有不同程度的影响,蒸制可以较好保持叶菜中叶酸含量,水煮次之,清炒效果最差;从叶酸保持角度考虑,叶菜4 ℃贮藏不宜超过2 d。选择合理烹饪方式及贮藏时间可有效降低叶菜中叶酸损失,进而有望改善居民叶酸缺乏现状。
Leafy vegetables are the main source of folate in residents' diets, and there are many kinds of leafy vegetables in china. In order to obtain the folate content in leafy vegetables maximally, the folate contents in common leafy vegetables and the effects of cooking methods and storage on folate contents in common vegetables were investigated. The contents of 5-CH3-H4 folate and folate in eight common leafy vegetables were determined by liquid chromatography. The changes of contents of 5-CH3-H4 folate and folate in eight leafy vegetables in the process of boiling, frying, steaming and refrigerating were also determined. The results showed that 5-CH3-H4 folate content in spinach was highest for 75.32 μg/100 g, followed by baby bok choy, Chinese cabbage, romaine lettuce, purple cabbage, green bok choy, white cabbage and long leaf lettuce. Folate contents in leafy vegetables were much lower than that of 5-CH3-H4 folate, which were even not detected in white cabbage. The cooking methods had different effects on 5-CH3-H4 folate and folate contents in leafy vegetables. Steaming could keep well the folate content in leafy vegetables, boiling second, and the frying was the worst. In consideration of keeping folate, leafy vegetables should not be stored in 4℃ for more than two days. The loss of folate in leafy vegetables could be effectively reduced by choosing reasonable cooking methods and storage time, which was expected to improve the status of folic acid deficiency in residents.

Abstract: 采用波函数展开法及边界离散的方法给出任意断面形状的地下透镜体对平面SH波散射的半解析解,利用蒙特卡罗方法随机模拟产生30组透镜体断面样本,通过对30组具有同一统计特征的任意断面地下透镜体在平面SH波入射下地表动力响应极值的统计分析并与相应椭圆透镜体解答比较,研究透镜体断面形状随机性对平面SH波散射的影响。研究表明,透镜体断面形状随机性对地表动力响应极值具有重要影响。以长短轴比为4的椭圆形透镜体为例,当断面矢径的变异系数为0.1时,样本地表位移响应极值的最大值远大于对应椭圆透镜体解的极值,平均可达47.46%。且增加幅度随着透镜体介质与半空间介质波速差距增大而增大。透镜体埋深越小,增加幅度越大。
The semi-analytical solution of SH-waves scattering by an arbitrary cross-section of an underground lenticle in half space is presented using the wave functions expansion method combined with the boundary discrete method. The Monte Carlo method was used to randomly generate 30 samples of the cross-section shape of the lenticle, and the effect of randomness in the cross-section shape on the surface dynamic response was studied by statistical analysis. It was observed that the randomness of the cross-section shape has a significant effect on the surface dynamic response around a lenticle in half space. When the variation coefficient of the inclusion radius is equal to 0.1 for a lenticle of elliptical shape, the maximum of the surface displacement amplitude is larger than that of the peak values observed for the elliptic solution with an average of 47.46%. The difference increases as the inclusion rigidity decreases, whereas the difference decreases as the inclusion depth increases.

孕酮受体膜组分1蛋白(PGRMC1)在乳腺癌,甲状腺癌,结肠癌,卵巢癌和肺癌等多种肿瘤组织和肿瘤细胞系中高表达。PGRMC1蛋白在肿瘤的生长和促进肿瘤细胞的存活中发挥作用,它还可以抵制肿瘤细胞凋亡,促进锚着独立生长,侵袭以及肿瘤生长和转移。PGRMC1蛋白还调节胆固醇合成,其信号转导对于癌症的发展是非常重要的,进一步深入研究PGRMC1蛋白与肿瘤发生的关系有助于寻找新的肿瘤标志物,将为肿瘤的早期诊断与预后以及有效药物靶点的发现提供理论和实验依据。
Progesterone receptor membrane component 1 (PGRMC1) is overexpressed in breast, colon, ovarian, lung and thyroid tumor tissues, as well as in cancer cell lines. PGRMC1 is associated with tumor growth and development, and it also can resist apoptosis of tumor cells, promote tumor growth independently and benefit to invasion and metas-tasis of tumor. PGRMC1 regulates cholesterol synthesis and signal transduction. Further studies on the relationship be-tween PGRMC1 and tumorigenesis will help to find new cancer biomarkers, which will provide theoretical and experi-mental evidences for early diagnosis and prognosis, as well as effective drug target for cancer.
