Abstract: chile is witnessing a rapid process of development and socio- cultural changes. during the last decades dietary changes have occurred, characterized by an increased consumption of cholesterol, saturated fats, sacarose and salt. this article aims to describe the cultural role in food selection, possible inter- relations between the biological and anthrological determinants and its impact on the genesis of adult disease (obesity, diabetes, hypertension, osteoporosis, and hyperlipidaemia). strategies of nutritional education to promote a healthy lifestyle must consider the alimentary culture, the social and economic development, in order that education in public and school health programmes achieve a better impact

Abstract: the evaluation of the foods cariogenicity is important in the dental caries prevention and control, and it should base on information obtained on the alimentary habits. the arm of this study went accomplish a bibliographical review and a critical analysis of diet registration methods. it was found in the literature four different types of registration methodologies and the analyzed instruments correspond at three of those methods: frequency questionnaire (a), diet diary (b) and dietary history (c). the a instrument is a quantitative method of guided consumption, could be self-administered. the b instrument is it more used in researches and in the dentistry clinic, depending of the patient's cooperation in to register the data. the c instrument allows that the alimentary habits are expressed in a natural way, because the data are collected by interview. all the presented methods are useful in the private or public dentistry clinic, since used in a correct way.
Consumo de leguminosas en el departamento de Santander. Colombia. 2000-2003

Abstract: with the objective of describing the participation and quantity (g) in the intake of leguminous in two geographical areas (metropolitan and rural), three surveys were re-analyzed, in them 571 subjects (148 scholars and 443 mothers) described their intake by the 24-hour dietary recall method. for the above mentioned, descriptive measures and confidence intervals were calculated with a reliability of 95% (ic 95%), the comparison of the intake among groups was carried out by t test and analysis of variance. 36.4% of the subjects consumes leguminous dry; differences were observed in the consumption of leguminous for geographical area; leguminous dry (p=0.03) and green (p=0.04). of the group of leguminous, the dry ones represent the best resource to cover the energy necessities and nutritious; the biggest contribution to the daily recommendation is for folic acid, magnesium, thiamine, protein, phosphorus, iron and zinc. the contribution of the leguminous ones to the recommendations of nutrients was different for geographical area (p<0.01). the low cost and the nutritional contribution of the leguminous dry, especially to the daily recommendations of folic acid and proteins are aspects to consider in their promotion.
Influencia de habitos alimentarios sobre las concentraciones de pesticidas organoclorados en tejido adiposo

Abstract: the levels of organochlorine pesticide residues (p,p'-dde, hcb, g-hch, aldrin) present in adipose tissue samples from mammary glands of 123 women living in cordoba (spain) were evaluated. the influence of alimentary habits and age of donors on organochlorine tissue levels was also investigated. the compound found at the highest concentration was p,p'-dde (1.848mg/g), followed by hcb (0.235mg/g), aldrin (0.005mg/g) and g-hch (0.003mg/g). the older donors presented tissue levels of p,p'-dde, aldrin and hcb higher than those found in younger donors. conversely, age had no influence on tissue levels of g-hch. the majority of donors (40.65%) indicated fruits as the most consumed food, followed by mixed food (34.15%), non-green vegetables (6.50%), stewed meat and vegetables (6.50%), green vegetables (4.88%), milk (3.25%), fish (2.44%) and meat (1.63%). no significant correlation was observed between organochlorine tissue levels and the alimentary habits of donors.
Consumo de frutas en una población adulta de Costa Rica

Abstract: consumption of fruits in an adult costa rican population. the consumption of fruits and it relation with the health and socioeconomic condition of an adult costa rican population is described. the study included a cross sectional and descriptive analysis in men and women 18 years old or older. ten-house blocks were selected by affinity in a community or neighborhood in cartago. data were collected in a survey using home direct structured interviews carried out in the afternoons or during the weekend in february, 2000 . eighty percent of the 161 people interviewed were women. results showed that the higher consumption of fruits was described in women who were older that 60 years old and, who proceed from a medium-high economic stratum or have a high schooling condition (2,3± 1,0, 2,50± 1,3 y 2,0± 1,3 portions, respectively). no statistical significant difference was found in any of the variables evaluated. data also showed that, in contrast with what it was expected, people that considered their health condition as bad, suffered chronic diseases, practiced physical exercise, took vitamin supplement or smoke, showed a higher consumption of fruits that those who do not have those conditions. the difference, however, showed to be no significant and the consumption of fruit showed to be not adequate in both groups. in conclusion, the amount and frequency of fruit consumption were inadequate in the population studied. the necessity of developing nutritional education strategies to promote a gradual increment in the consumption of fruits to approach the recommendation of the national alimentary guidelines is recommended
Implication of anthropometric profile and alimentary consumption on risk for diseases among school children in the 1st to 4th grades

Abstract: this study aimed to determine the anthropometric profile and diet of 652 school children from the 1st to 4th grades of elementary education in six private schools in the city of maringá, paraná, brazil. children's weight and height were classified according to the body mass index proposed by must et al. (1991). food consumption was evaluated by means of a questionnaire about daily food frequency. statistical analysis was carried out using linear and logistic regression tests, with a significance level of 5%. high rates of overweight and obesity, 21.9% and 13.3% respectively, were observed, which did not show a significant relationship with total food consumption. the data obtained were: high consumption of foods rich in energy, such as sugar- and fat-rich foods, and insufficient consumption of low-energy foods that are sources of micronutrients, such as vegetables. it is necessary to enhance the promotion of good alimentary and health habits within schools to lower risk factors for developing diseases, as well as to develop and validate a questionnaire to reliably assess the diet of the infant population.

Abstract: introduction: the nutrition plays a critical role in the adolescent health and the consumption of a inappropriate diet may to influence in an unfavorable way on the somatic growth and the sexual maturation being a crucial stage of development where frequently prevail the nutritional disorders. methods: a cross-sectional and descriptive study was conducted to identify and to describe the tastes, preferences and frequency of food consumption of adolescent of 7th degree studying in the "josé maría heredia" secondary school in the 2009-2010 course. sample included 192 adolescents and with the parents consent underwent to alimentary survey on tastes, preferences and weekly frequency of food consumption. results: the more preferred foods were the butter, mayonnaise and cream-cheese, sweets, preserves and soft drinks, mainly consumed daily; unlike the fruits and vegetables. the 14.1 % of adolescents preferred the alcohol and the 15.6 % consumed them at least once a week. conclusions: there are deficiencies in the alimentary education as well as inappropriate alimentary habits in the study adolescents.
Nutrition, activity behavior and body constitution in primary school children

Abstract: Child and adolescent obesity currently affects at least 10-25 0of the paediatric population in most developed countries. The BMI value is one of the most appropriate method of defining obesity and has a strong association with body fatness and health risk. Two main environmental factors, nutrition and physical activity, could influence paediatric obesity development. This paper studies the relationship between sedentariness, snack and soft drink intake and overweight or obesity in children. 1194 primary school children (age 8-10) participated in the study. For all the subjects we measured the anthropometric data to calculate the BMI. The overweight and obesity prevalence was estimated using age-specific BMI cutoffs. A questionaire was also submitted to all the children by a single interviewer to obtain data about: a) Weekly Physical Activity, b) Weekly Sedentary Activity, c) Alimentary Style. Spearman rank correlation and the Student’s t-test were used. The data demonstrated that 23.2 0of the children is overweight and the 4.8 0obese. BMI is inversely correlated to the physical activity, while there is positive correlation between BMI and number of double portions. Statistically significant positive correlation is present among eating snacks and hours of sedentariness, while there is a negative correlation between physical activity and TV hours. Physical activity in the childhood could be an important tool to prevent obesity development and adult-onset chronic diseases. It is important to encourage an active lifestyle in order to reduce sedentariness.

Abstract: The Elanus leucurus is a rural species that happening from Argentina and Chile to North America that frequently benefits with the agricultural progresses. Studies about the reproductive behavior of the Elanus leucurus still has little knowledge in the scientific comunity and the present study aims at to know the habits and behavior of this species at this reproductive time. The work totaled about 460 hours of observations among the beginning of May untill October. The nestling behavior was observed by 60 hours in two diferrent nests in the area of Sete Lagoas and for 48 hours in the area of Divinópolis. The study of the biology and the alimentary ecology of the Elanus leucurus it's very important because little know on the strategies of conservation of the species and your biota, presenting an immense value for the control of diseases in the fields and neotropical savannahs.

Abstract: Chile es un país en un proceso de desarrollo y cambios socioculturales acelerados. Durante las últimas décadas ha habido una transformación dietaria caracterizada por un aumento del consumo de alimentos ricos en colesterol, grasas saturadas, sacarosa y sodio. El objetivo de este trabajo es describir el marco cultural en que se establecen las elecciones de alimentación, las interrelaciones que se pueden dar entre sus determinantes antropológicos y biológicos, así como el impacto que tendrían estas decisiones alimentarias aprendidas durante la infancia, sobre la génesis de enfermedades en la edad adulta (obesidad, diabetes, hipertensión arterial, osteoporosis e hiperlipidemias). Las estrategias de educación nutricional, destinadas a promover formas de vida saludables, deben considerar la cultura alimentaria, así como aspectos del desarrollo social y económico, educación por los equipos de salud y colegios, difusión a través de medios de comunicación y publicidad alimentaria, para lograr un mejor impacto Chile is witnessing a rapid process of development and socio- cultural changes.
