Application of resistant starch in bread: processing, proximate composition and sensory quality of functional bread products from wheat flour and African locust bean (Parkia biglobosa) flour  [PDF]

Abstract:

Application of resistant starch prepared from parkia flour was produced by replacement of wheat flour with 0, 5%, 10%, 15%, 20%, 30% and 40% Parkia flour. Processing, proximate composition, digestibility of resistant starch in bread and sensory quality were evaluated. Resistant starch was significantly (p < 0.05) increased as Parkia flour level increase in all breads. The resistant starch prepared from Parkia flour was 47.21%. However, wheat bread was 1.47% and Parkia bread 18.52% to 22.28% baked of (200℃ at 45 min) with 2.16% wheat bread and 31.74% to 35.05% Parkia bread baked of (130℃ at 90 min). Supplementation of wheat flour with Parkia flour 0 - 40% increased the crude protein content significantly (p < 0.05) from (7.89% - 15.68%), ash from (0.91% - 2.54%) and crude fiber (1.41% - 4.97%). Color of the bread treatments was remarkably affected by addition of different levels of Parkia flour. Therefore, Parkia flour could be added to wheat flour up to 15% without any observed detrimental effect on bread sensory properties. Sensory evaluation results indicated that bread with 5% to15% Parkia flour were rated the most acceptable and there was no significant difference in terms of acceptability compared to the control. This could be used to improve the nutritional quality of bread especially in developing countries were malnutrition is prevalent.

The Yield Improvement of Resistant Starches from Africa Locust (Parkia biglobosa): The Influence of Heat-moisture, Autoclaving-cooling and Cross-linking Treatments

Abstract: Native paprika starch was treated by heat-moisture treatment (HMT), autoclaving-cooling (Aut-cd) with and without anhydride acetic acid/adipic acid (Aut-acid) and sodium trimetaphosphate/sodium (STMP/STPP) tripolyphosphate cross-linking to produce Resistant Starch (RS). The resistant starch yield, crystalline structure, as well as other physicochemical properties of the modified starch was investigated. The yield of resistant starch was 36.33 and 50.16%, by HMT and Aut-col, respectively, whereas 48.56 and 50.16%, respectively were obtained by Aut-acid and STMP/STPP. The scanning electron microscopy images clearly illustrated that the granular structure of native parkia starch was disrupted and a continuous network with irregular shape was formed after HMT and autoclaving-cooling cycles. The subsequent chemical cross-linking appeared to make the network structure more compact and dense. X-ray diffraction patterns showed that B- and V types coexisted in all the modified parkia starches and the DSC results also showed that the formation of amylose double helices could contribute to the changes in the X-ray diffraction patterns. The RS-rich powder presented crystalline due to the process of heat moisture and autoclaving-cooling cycles with cross-linking treatment induced starch retrogradation. The procedure proposed might be used for production of a RS-rich powder from parkia starch with high resistant starch level and functional properties.
Influence of Process Conditions on Digestibility of African Locust Bean (Parkia biglobosa) Starch

Abstract: This study describes the isolation, digestibility and effect of process conditions on the Parkia biglobosa (African locust bean) starch digestibility. Parkia starch fractions are: Total Starch (TS), Rapidly Digestible Starch (RDS), Slowly Digestible Starch (SDS) and Resistant Starch (RS). The results indicate that processing conditions can be changed to effectively control the relative content of SDS and RS in Parkia starch products. Amylose is the molecular basis of RS while amylopectin is the main constituent of SDS and plays a key role in the structure and digestibility of SDS. This methodology may enable process modifications to influence the functional digestibility properties of prepared Parkia starch products.
Relationship between system biology and traditional Chinese constitutional medicine

However, how to use these data to interpret the mechanisms of diseases and health has become the research target of current investigators. The booms of system biology provide new thought and research methods to tackle this problem. This paper emphasizes the relationship between system biology and traditional Chinese constitutional medicine.
Non-glottalization in Korean Fortis Consonants

Abstract: It is claimed that the three types of obstruent consonants in Korean (fortis/lenis/aspirated) are currently undergoing a diachronic change in articulation in that the differences in the voice onset time (VOT, in association with the degree of aspiration) is becoming not completely contrastive while the contrasts in pitch height (fundamental frequency) surface as a more reliable perceptual cue. Controversy still exists whether this change brings in concomitant modifications in other articulatory dimensions, especially the presence of glottalization, commonly used to manifest the notion of articulatory fortisness in the literature. The aim of this study is to examine whether the presence/ absence of glottalization holds in the contrast of fortis/ lenis consonants in the contemporary Korean language, by directly observing the glottal states via a trans-nasal fiberscope (laryngoscope). Our results elicited from Seoul subjects in younger generation of 30s show that the glottal constriction states of Korean fortis consonants exhibit no observable glottalization, in terms of the Six Valves of Throat Framework for sub-glottal reinforcements. Les différences de délai de voisement (ou VOT), marquant différents degrés d’aspiration ne sont plus complètement contrastives, tandis que les différences de hauteur mélodique (F0) sont devenues des indices plus fiables en perception. Les opinions divergent sur la question de savoir si ce changement entra ne des modifications concominantes sur d’autres dimensions articulatoires, notamment la glottalisation, souvent considérée dans la littérature comme corrélat de l’articulation “fortis”. Notre étude vise à examiner si la présence/absence de glottalisation est maintenue dans le contraste fortis/lenis des occlusives du coréen contemporain, à l’aide de l’observation directe de la glotte par fibroscopie nasale (laryngoscopie). Nos résultats obtenus avec des locuteurs de Séoul agés d’une trentaine d’années ne montrent pour la constriction glottale des consonnes fortis aucun des signes de glottalisation proposés dans le cadre des “Six Valves of Throat for sub-glottal reinforcements” [six valves de gorge pour le renforcement sub-glottique] de Edmondson & Esling. Different thermal conductance of the inter- and intra-chain interactions in a double-stranded molecular structure

Abstract: A double-stranded system, modeled by a Frenkel-Kontorova lattice, is studied through nonequilibrium molecular dynamics simulations. We have investigated the thermal conductance influenced by the intra-chain interaction as well as by the inter-chain interaction. It is found that the intra-chain interaction always enhance the thermal conductance. The inter-chain interaction, however, has a positive effect on the thermal conductance in the case of strong nonlinear potential, and has a negative effect on the thermal conductance in the case of weak nonlinear potential. This phenomenon can be explained by the transition of thermal transport mode and the phonon band shift of the particles. It is suggested that the inter-and intra-chain interactions present different thermal properties in double-stranded lattices.
T-Shape Molecular Heat Pump

Abstract: We report on the first molecular device of heat pump modeled by a T-shape Frenkel-Kontorova lattice. The system is a three-terminal device with the important feature that the heat can be pumped from the low-temperature region to the high-temperature region through the third terminal. The pumping action is achieved by applying a stochastic external force that periodically modulates the atomic temperature. The temperature, the frequency and the system size dependence of heat pump are briefly discussed.
Dishen Qufeng Decoction for treating allergic rhinitis: a randomized controlled trial

Abstract: Objective: To observe the clinical therapeutic effects of Dishen Qufeng Decoction (DSQFD), a compound traditional Chinese herbal medicine, in treatment of allergic rhinitis.Methods: Sixty cases of allergic rhinitis were selected and randomized into DSQFD group (30 cases) and cetirizine group (30 cases), and the patients were orally administered DSQFD and cetirizine respectively. The integrals of patients' symptoms, such as sneezing, nose running, nasal occlusion and nasal itching, signs in the nasal conchae and peripheral blood eosinophil (EOS) count were abserved count before and after treatment.Results: DSQFD obviously improved the symptoms and signs of allergic rhinitis. The total response rate of DSQFD treatment was 83.3%, while that of the cetirizine treatment was 86.7%; the EOS counts in both groups were significantly decreased. These results showed statistical difference between the two groups.Conclusion: DSQFD is an effective preparation of traditional Chinese medicine for treating allergic rhinitis
Clinical research of intraperitoneal chemotherapy plus Shenmai Injection in treating advanced colorectal cancer

Abstract: Objective: To study the effects of intraperitoneal chemotherapy (IPC) plus Shenmai Injection (SMI) in treating advanced colorectal cancer following radical resections.Methods: Fifty-eight cases of colorectal cancer in stage B2 and C following radical resections were divided into two groups: SMI+IPC group (36 cases) and IPC group (22 cases). In the SMI+IPC group, IPC (5-fluorouracil combined with cisplatin) plus SMI was administered, while in the IPC group, only IPC was administered. Clinical symptoms, quality of life (Karnofsky score), white blood cell counts, natural killer cells and CD4/CD8 were observed, and disease-free survival (DFS) rate was also evaluated. Results: The total short-term response rate was 83.33% in the SMI+IPC group, significantly higher than 63.64% in the IPC group (P<0.05). The data of clinical symptoms, quality of life, white blood cell counts, natural killer cells and CD4/CD8 in the SMI+IPC group were also significantly improved as compared with those in the IPC group (P<0.05 or P<0.01). In the SMI+IPC group, 1-, 3- and 5-year DFS rates were 91.7% (33/36), 77.8% (28/36) and 72.2% (26/36) respectively, and those in the IPC group were 90.9% (20/22), 72.7% (16/22) and 45.5% (10/22) respectively. The 5-year DFS rate was significantly improved in the SMI+IPC group as compared with that in the IPC group (P<0.05), while the 1-year and 3-year DFS rates had no significant difference between these two groups. Conclusion: IPC plus SMI is effective in treating post-operative patients with advanced colorectal cancer.
Dimension dependence of negative differential thermal resistance in graphene nanoribbons

Abstract: Negative differential thermal resistance (NDTR) in approximate graphene nanoribbons (GNRs) is investigated from one dimension to three dimensions by using classical molecular dynamics method. For single-layer GNRs, NDTR can not be observed for very narrow GNRs (one dimension), NDTR appears when the width of GNRs increases (two dimensions). However, NDTR disappears gradually on further increasing the width. For multiple-layer GNRs, when the number of the layers increases, GNRs becomes from two-dimensional system to three-dimensional system, NDTR regime reduces and eventually disappears. In addition, when the length of GNRs increases, NDTR regime also reduces and vanishes in the thermodynamic limit. These effects may be useful for designing thermal devices where NDTR plays an important role.
