Microbiologia da carne moida: 1. contagem total de bactérias

Abstract: as a first step in a program of evaluation of ground beef microbiological quality in the city of piracicaba, sp, forty samples of ground beef were taken at two kinds of retail markets (meat shop and supermarket), related to an old and a new system of meat merchandising. the samples were taken weekly in the morning and in the afternoon, during a two month period. total bacterial counts were determined by a procedure recommended by the american public health association and plates were incubated at 21oc (72 hours) and at 32oc (48 hours). the results can be summarized as follows = 1) total counts were generally high, with several samples in the range 107 to 109 cells/gram; average counts were 6.9x 107 cells/gram (21oc) and 2.5xl07 cell/gram (32oc). 2) incubation at 21oc resulted in total counts generally higher than those found at 32oc, although there was no statistically significant difference between the two incubation temperatures. 3) total counts were found to be higher in samples from the small shop (old system) than in samples from the supermarket (new system); the difference was related to higher counts in the morning samples taken at the former retail market.

Abstract: in brazilian supermarkets, ground beef may sometimes be prepared using meat that has been previously frozen and stored to be consumed during periods of the year when there is a decrease in the amount of fresh meat available. the results of this study suggest that a modified resazurin test, previously described by the authors for the evaluation of ground beef microbiological quality, can be used in different periods of the year, even if frozen meat is involved.

Abstract: forty samples of ground beef were taken at four supermarkets in the city of piracicaba, sp. total bacterial counts were determined using a produre recommended by the american public health association; the plates were incubated at 32°c (48 hours). a modified procedure based on resazurin reduction for the determination of ground beef microbiological quality was studied. the results can be summarized as follows = 1) total counts were generally higth, with several samples in the range 107 to 109 cells/gram; the average count was 3,0 x 107 cells/gram. 2) the differences between counts related to any two supermarkets were not statistically significant. 3) resazurin reduction to colorless was significantly correlated with total bacterial counts (r=-0,91).

Abstract: as shown by pimentel gomes (1965), the theory proves that the use of the arithmetic mean of diameters to estimate basal areas in forestry leads to a bias. this paper evaluates this bias in the computation of cut out basal area in forestry thinnings, by means of theoretical study, samples generated in a computer, and also through the study of actual populations of trees in groves of araucaria angustifolia (bert.) o. ktze, pinus elliottii eng., p. taeda l. and p. caribaea var. hondurensis mor. the study thus carried out showed that the bias indicated can be rather serious.

Abstract: to study the effects of increasing levels of nitrogen on soybean yield with and without inoculation, two field experiments were carried out on two sandy soils of the state of s?o paulo, namely a red dark latosol, sandy phase, in the municipality of regente feijo and a podzolizado lins-marília soil, variation marília, in the municipality of hercul?ndia. the experiment in hercul?ndia showed an effect of innoculation on yield, whereas the experiment in regente feijo showed a linear and cubic effect of rates of nitrogen on yield. chlorosis appeared in both experiments where nitrogen has not been applied, but it was not permanent in regente feijo experiment, as hapened in herculandia experiment.

Abstract: in order to accomplish specific compensation objectives, a static synchronous series compensator (sssc) can be controlled according different methods. in the literature, the most discussed control modes of the sssc are 1) constant voltage mode, 2) constant impedance emulation mode, and 3) constant power control mode. the first two modes above cited are used when purely series reactive compensation is required, whereas the third one also enables to control the power flow in the transmission network. since these modes can have different impacts on system angle stability, this paper aims to assess the influence of sssc operation mode on both small-signal and transient stability of power systems. the study is based on modal analysis and time domain simulations which are carried out by using the power system analysis toolbox (psat). the results obtained allow to conclude that, when performing purely series reactive compensation, the sssc usage in the constant impedance emulation mode is the most beneficial strategy to improve both small-signal and transient stability.

Abstract: this paper presents a detailed comparative analysis between synchronous and induction machines for distributed generation applications. the impacts of these generators on the performance of distribution networks are determined and compared by using different computational simulation tools and models.the technical factors analyzed are steady state voltage profile, electrical losses, voltage stability, transient stability, voltage sags due to unbalanced faults and short-circuit currents. the results show that the most suitable choice depends on the network technical characteristics, i.e. what are the main operating restrictions related to distributed generation.

Abstract: the authors study the influence of black coffee beans in mixture with brasilian coffee of soft taste. increasing percentages of black beans were tried: 0, 1, 2, 5, 10, 15, 20, 30, 40 and 50%. two experiments were carried out, in a balanced incomplete block design, with t = 10 treatments, k = 4 plots per block, r = 6 replications, b = 15 blocks, l = 2. each plot had 3 standard cups and was tasted by 3 tasters, who gave their opinion for each cup. data thus collected are, therefore, 1080 in number, that is, 540 for each of the two trials. but each trial had indeed only 60 plots, to every plot corresponding the average of 9 opinions (3 tasters x 3 cups). the experimental technique was that established by fairbanks barbosa and others (1962), with the changes indicated. the experiments gave results in good agreement, which led to the following conclusions: black coffee beans injure coffee taste, and their effect is approximately linear. percentages of black beans from 10% upwards carry out a sensible injury to the tasting quality of coffee. the regression equation is: y = 3.792 - 0.0379 x, where x is the percentage of black coffee beans, and y is the score corresponding to tasting categories.

Abstract: it was studied the effects of the exchangeabl e ca2+ and mg2+, the cation exchange capacities and the saturation index in basis over the zinc fixation by 30 soil samples, using the 65zn as a tracer element. it was found positive and significative correlation at 1% among the zn fixation and the mentioned variables. the results, however, are not conclusives and the authors keep the oppinion that more experiments must be done in order to elucidate the subject.
