Abstract: the negative influence of cold shortening on meat texture is well known. because of that, the determination of the muscle contraction extent represents an important analytical tool for the optimization of the industrial procedures. in this work, two methodologies to evaluate cold shortening were compared. biceps femoris, longissimus dorsi and semimembranosus muscles from 9 cattle carcasses with three different fat thickness grades were paired analyzed by both methodologies. longissimus dorsi muscle showed the shortest sarcomere length while semimembranosus m. showed the longest one (p<0.05). samples with higher fat thickness showed longer sarcomere length (p<0.05). there was no significant difference between the two methodologies studied (p>0.05), which suggests the possibility of using the simpler method for cold shortening evaluation.

Abstract: é bem conhecido o fato de que o encurtamento pelo frio pode influenciar negativamente a textura da carne. Por isso, a determina o do grau de contra o do tecido muscular é um recurso analítico de grande importancia quando se estuda a otimiza o dos procedimentos industriais. Neste trabalho, foram avaliadas comparativamente duas metodologias de microscopia. Para isso, os músculos Biceps femoris, Longissimus dorsi e Semimembranosus obtidos de nove carca as bovinas com três diferentes graus de acabamento foram analisados de forma pareada por ambos os métodos. O músculo Longissimus dorsi apresentou menor comprimento de sarc mero e o m. Semimembranosus o maior (p<0,05). As amostras com maior espessura de gordura de cobertura apresentaram maior comprimento de sarc mero (p<0,05). N o houve diferen a significativa entre os valores obtidos pelas duas metodologias estudadas (p>0,05), revelando a possibilidade de emprego do método mais simples.
Implementa??o de programas de qualidade: um survey em empresas de grande porte no Brasil

Abstract: this research aims to identify the main trends in the implementation of quality programs in brazilian companies and is based on the most widely known and implemented models, such as the certification of quality systems according to the iso 9000 program, the six sigma and the tqm program (total quality management program). this study provides a comparative and critical analysis of the implementation of those systems in brazilian organizations as well as the existing relations among them, their complementary and redundancies. this issue is extremely relevant nowadays as companies invest heavily in different programs in order to improve quality, but still face huge difficulties to evaluate their strategic impact as well as their respective added value. in order to carry out this study, we have evaluated the references available about the subject. the methodology used in this research was based on a quantitative survey. the population of this search consists of a list the 1000 top brazilian companies ranked according to their published sales figures according to "ranking valor 1.000", published in valor econ?mico yearbook (2004). this analysis assumed that new emerging quality management models could be found in this list responses to questionnaires and to interviews made during visits to those companies were analyzed employing a statistical software. the analysis points out that the companies had implemented the six sigma program are those with the strongest tradition in quality programs since they had earlier implemented other quality programs; as more the companies invest in quality programs more is the improvement in their performance; and the main causes for failures in iso 9000, six sigma and tqm programs implementation were due to lack of financial resources for a correct implementation and a fragile support provided by the company management team.

Abstract: the objectives of this paper are to identify the degree of diffusion, the main aspects of the six sigma program implementation and its results in the largest brazilian companies. the research methodology approach was a survey, data were gathered from a structured questionnaire answered by 198 professionals responsible for the quality area in largest brazilian companies from different sectors. the results pointed out that even in the largest companies; the diffusion of the six sigma quality program is not expressive (23.5%). in most of the companies that have implemented such quality program had yet other quality programs implemented. financial profits and quality and productivity improvement were results reported by the respondents. moreover, the companies highlight the synergy of the six sigma program and other quality management approaches.

Abstract: This article aims to identify the major characteristics of the implementation of quality programs in large construction companies in Brazil. This study focuses on the most accepted and implemented models such as ISO 9000:2000, ISO 14001, Six Sigma and Total Quality Management (TQM). An exploratory study was carried out in seven large companies (approximately 37% of the total number). These companies were chosen from the “500 Largest and Best Brazilian Companies” list, published by Exame Magazine, in 2005, out of a total number of 15 large companies in the sector. The indings of this study show that the companies have been implementing quality programs, have been using more basic quality tools, and have been dificulty accounting resources that come from the implementation of quality programs. Este artigo tem por objetivo identificar as principais características da ado o dos programas de melhoria da qualidade nas grandes empresas brasileiras do setor da constru o. O foco deste estudo s o os modelos mais adotados, tais como a norma ISO 9001:2000, a ISO 14001, o Seis Sigma e o Total Quality Management (TQM) Foi realizado um estudo exploratório em sete empresas de grande porte (aproximadamente 47% do total), extraídas da lista “500 Maiores e Melhores Empresas do Brasil”, da Revista Exame, ano base de 2005, de um total de 15 empresas do setor da constru o, que fazem parte desta rela o. Os resultados obtidos demonstram que as empresas est o adotando programas de qualidade que utilizam ferramentas mais básicas e apresentam dificuldades na contabiliza o de seus recursos.

Abstract: this paper analyzes two experiences of risk research to world heritage. one of them was held by federal technology institute of technology in peru and the other one by the team of noah's ark, university of bologna. the examination of both tests enables different understandings of heritage, different ways of conceiving the incidence of risk to heritage, as well as some reasons that may explain the difficulty in implementing actions to reduce, prevent or avoid the impact of threats.

Abstract: meeting professor maria helena patto at the undergraduate program in psychology profoundly influenced my theoretical, political, and professional options. her ideas and positions acquired more sense throughout her supervision when preparing my dissertation and doctoral thesis. in the dissertation, i heard a group of poor children to analyze the changes at the representation of school suffered during the first year of frequency in this institution. the thesis investigates how the school took control of the basic cycle, in order to understand the process of change they were getting through. in these studies, it became clear that it needs to grasp the perspective of various individuals who are part of educational institutions and seek to situate the historical facts, considering relations with the socio-economic, political and cultural context. that and the ability to get disgusted in situations that violate human dignity are a part of my learning from maria helena.

Abstract: this article puts forth the representation of school in a group of poor children throughout their first year in school. interviews were introduced and adaptations of two procedures (story-draws and stories to be completed) were utilized. the analysis showed that the representation had a negative progress. classroom observations and interviews made with teachers revealed pedagogical incompetence and negative attitudes towards the impoverished child and his or her family. the parents, who see in the child?s academic career a hope for better days to come, try to shape the child according to the mold established by the school. the result is academic failure and the diminishing of the children?s self-esteem.
