The Nutritional and Sensory Quality Characteristics of Kunun-zaki Produced with the Addition of Hydrolytic Enzymes from Malted Rice (Oryza sativa)

Abstract: Kunun-zaki was produced from millet (Pennisetum typhodeum), sorghum (Sorghum bicolor) or maize (Zea mays) with or without the addition of hydrolytic enzymes obtained from ground-malted rice (Oryza sativa FARO 37) and analyzed for its chemical and organoleptic quality attributes. The results obtained show that there were 33, 44, 66% increases in crude protein 52, 117 and 91% increases in sucrose contents in those products (i.e. kunun-zaki produced from millet, sorghum and maize respectively) in which the extracts from ground-malted rice were incorporated. A similar increase was observed in acidity, iron, calcium and phosphorus contents. Furthermore, the sensory attributes of kunun-zaki produced using extracts from ground-malted rice did not differ (p>0.05) from the other products in appearance, taste, texture and sensory overall acceptability but differed (p<0.05) in aroma, which could be attributed to the production of more organic acids in these products by the fermenting microorganisms. The result obtained in this study therefore suggests that it could be economical and nutritious to use malted cereal grains in the production of kunun-zaki. Abstract: a spectrophotometric study of 1:1 charge-transfer complexes derived from two metal acetylacetonates ( co (ii) and cu (ii) acetylacetonates) donor and iodine ( s-acceptor ) has been carried out. the equilibrium constants ( k ) and absortivity ( e ) for the formation of the chelate-iodine complexes have been evaluated. the suggested structure of the two solid triiodide charge-transfer complexes reported in this study is further supported by thermal analysis and far and mid infrared measurements.
Exploring knowledge and attitudes towards counselling about vitamin supplements in Jordanian community pharmacies

Abstract: the use of multivitamins within a pharmaceutical setting has been the subject of considerable debate. objective: this research aimed to provide a platform for assessing and evaluating knowledge, attitudes and professional practices of jordaninan community pharmacists in counselling patients about the safe consumption of vitamins. methods: a cross-sectional study was conducted between october 2009 and may 2010. data collection was carried out using a 44-item semi-structured self-administrated questionnaire. setting: community pharmacies in amman with target sample of 400 pharmacists. results: a total of 388 pharmacists participated in this study. the majority (77.8%) of pharmacists believed that a balanced diet is more achievable by eating healthily than by vitamins supplements. 78.1% of participants believed that vitamins deficiency would not shorten life spans, while 80.7% agreed that vitamin supplements could be toxic or might contain unlabelled harmful ingredients. less than half of pharmacists were aware that some antioxidant vitamins have been verified to be of unproven value, or may even cause cancer. while over 80% of pharmacists would recommend vitamins on a regular basis without prescription, the majority agreed that counselling on vitamin supplements is part of their role in pharmaceutical care (93.3%), in addition to providing relevant information to other healthcare professionals (78.4%). moreover, responses to specific knowledge questions, such as the interactions of vitamins with drugs or the recommended dietary allowance of vitamins for infants, children, and pregnant women, were negative. furthermore, only a minority of pharmacists would recheck the accuracy of dose regimens in prescriptions and symptoms of true vitamins deficiency or would follow up patients to record any consequences of vitamins consumption. conclusion: the questionnaire revealed satisfactory awareness of community pharmacists about their role in counselling; however, further progr

Abstract: In 2001 Adrio K nig published a book Focus on 300 questions about faith, which most people ask (title translated). Basically this book can be regarde as a summary of K nig’s systematic theology. K nig’s theology is so stimulating that it deserves research. This article analyses Focus, with reference to other books by the same author, aiming at disclosing the basic features of his theology. The article concludes that K nig’s theology can be described, from a reformed perspective, as ambiguous: biblical as well as contextual, confessional as well as ecumenical. K nig describes his theology as “eschatological covenant theology”. The positive and negative implications are also discussed.

Abstract: This article investigates the current issue of the relationship between Christian and non-Christian religions in multi-religious societies. The philosophical backgrounds of the pluralistic approach are summarised. Subsequently the (Dutch) Reformed confessions are scrutinised for Biblical guidelines which may be helpful in finding a solution for the problem of being Christians in a multi-religious society. It is argued that pluralism must be rejected, while both inclusivism and exclusivism can also not be accepted uncritically.
Nigerian Student s Perception of Technical Words in the Senior Secondary School Chemistry Curriculum

Abstract: This study looked at how much students understand technical words in chemistry as a means of solving the problem of under-achievement of chemistry students at the secondary school level. The instrument of the study was a six-point scale questionnaire designed by the researcher for the purpose of the study. It was administered to 150 subjects from ten randomly selected schools in Ado and Moba Local Government Areas of Ekiti State. Results show that students perceived 20 of the 30 identified technical words/terms from the senior secondary school curriculum as difficult to understand.
Wireless Data Transmission Based on Adaptive Modulation and ARQ Control

Abstract: Radio transmissions need to be intelligent and reconfigurable to control quality of service (QoS). QoS can be controlled using both adaptive modulations in conjunction with hybrid type of error control mechanism at the data link layer. In this study adaptive modulation is used as a powerful technique to improve the tradeoff between spectral efficiency and Bit Error Rate (BER). The adaptation also takes into account the requirements of different traffic services such as required BER and packet loss. The receiver estimates the received Signal to Noise ratio (SNR) and sends the feedback information via a feedback channel to the transmitter, which determines the suitable modulation constellation to be used over the channel. The proposed adaptive communication system uses a combination of Forward Error Correction (FEC) and Automatic Repeat Request (ARQ) in order to get efficient and reliable real time data communication over wireless channel.
Nutritonal and Antinutritional Characteristics of Some Insects Foragaing in Akure Forest Reserve Ondo State, Nigeria

Abstract: The levels of some nutrients, minerals and anti-nutrients of eight dominant insects herbivore distributed among six families from Akure forest reserve (Aponmu) located in Ondo State, Nigeria were determined in order to ascertain their suitability as a food and feed source. The insects contained g per kg dry matter crude protein 72.93 -1.13 g kgG , crude fiber 29.58 - 2.04 gkgG , ether extract 53.06 - 1.21 g kgG , Ash 7.72 -0.69 g kgG and Carbohydrate 86.67 - 23.00 g kgG , (as nitrogen free extracts). Generally, there are significantly (p# 0.05) higher Nitrogen free extract and crude fiber in treehopper, ash in termite, crude protein in Ant and moisture in Anaphe venata. The protein and oil contents revealed that the entire insect analized as a good source of edible protein, which comparable to what is obtainable in chickens and beef suggest them as a potential protein supplement. The insects contained g kgG Dm calcium which ranges between 0.0126 and 0.0015 (g kgG Dm), magnesium between 0.0074 and 0.0025 g kgG Dm, phosphorus between 1224.67 and 425.00 ppm and iron ranges between 166.127 and 82.89 ppm. The calcium, magnesium and phosphorus in grasshopper were significantly (p# 0.05) higher, as well as iron in treehopper than any insect examined. The mineral composition was generally comparable with what is obtained in other insects. The insects contained tannin between 1050.00 and 250.00 mgkgG and phytate between 3159.0169 and 1100.15 mgkgG as the major anti-nutrient. The phytate and tannin recorded in this sturdy are generally lower than the lather level of 1% and 20- 40 kg-Dm, respectively. The presence of lower tannin and phytate content are of nutritional significance as tannin form insoluble complexes with proteins. More work is needed to ascertain the impacts of processing on the levels of these anti-nutritional factors.
