Abstract: prato cheese is the second most consumed cheese in brazil. milk ultrafiltration (uf) is one of the processing alternatives for cheese manufacture which is receiving increased interest of the dairy sector, however, a lower rate of maturation in semi-hard cheeses made by uf has been reported. on this study were realized three processing experiments with three treatments each, respectively: with non concentrated milk (trat. 1) and with milk concentrated by uf up to volumetric concentration ratios (rcv) of 2.5:1 and 3.7:1 (trat. 2 and trat. 3, respectively). the cheeses were manufactured by the traditional process with enzymatic coagulation (calf rennet bela vista? - 90% quimosin) forty minutes/35oc), cut size one, partial remotion of 20% of whey and direct cooking by addition of water at 80oc, molding, pressing and ripening at 7oc. the three treatmens were compared among them with respect to composition, melting and proteolysis. with respect to composition, cheeses made by uf presented larger acidity, moisture and total protein and lower fat content. it was observed on treatment 3 a larger melting capacity and more intense proteolysis, as also their increase with respect to time.

Abstract: the objective of this research was to compare the composition, proteolysis, melting capacity and blisters formation in mozzarella cheese manufactured with milk retentate (mr) of a volumetric concentration factor (fcv) of 2.34:1, with a standard mozzarella cheese (mp) manufactured with non ultrafiltrated milk. it was realized one production assay with 3 batches of mrs and one of mp. it was evaluated the milk, retentate, whey, stretching water and cheeses composition and the proteolysis, melting capacity and the blisters formation on cheeses with 7, 15, 30 and 60 days of refrigerates storage. mrs presented larger ph, ash and total protein contents and lower titratable acidity and fat, fat on dry matter and salt contents when compared to mp. along the storage time the mrs presented lower proteolysis and melting capacity in all the analyzed dates. the pizza area percentage covered by blisters and their average diameters were larger for the mp during the first storage month and thereafter both kinds of cheese presented similar behavior for these two parameters.
Properties of Streptococcus thermophilus fermented milk containing variable concentrations of Bifidobacterium longum and Lactobacillus acidophilus

Abstract: sensory evaluation and analysis of ph, titratable acidity and microbial counts after 1, 7, 14 and 21 days of storage of five combinations of lyophilized bifidobacterium longum and/or lactobacillus acidophilus added to milk fermented with streptococcus thermophilus were studied during storage at 4oc. the taste and acidity sensory attributes were significantly (p<0.05) perceived as the storage time increased. favourite combinations contained, initially, bif. longum and l. acidophilus (108 and 107 cfu/ml, respectively) and bif. longum only (108 cfu/ml). these combinations did not differ significantly among them and neither from the standard fermented milk. the lowest sensory scores and highest titratable acidity values were obtained for fermented milk added of l. acidophilus (108 cfu/ml initial concentration). during the 21 days of storage at 4oc the viable cell counts of: str. thermophilus did not change. bif. longum viable cells counts kept constant or reduced 1 logarithmic cycle and l. acidophilus reduced 1 or 2 logarithmic cycle. we did not observe inhibition of over-acidification caused by the presence of bifidobacteria or l. acidophilus.

Abstract: taste and acidity sensorial attributes, ph, titratable acidity and microbial counts of milks fermented separately by bifidobacterium longum, lactobacillus acidophilus and streptococcus thermophilus and a beverage prepared by mixing them were studied during 21 days at 4oc. the mixed beverage and str. thermophilus fermented milk did not differ significantly (p < 0.05) for the sensorial attributes among them. milk fermented by str. thermophilus showed the highest titratable acidity and the lowest ph while milk fermented by bif. longum showed the lowest titratable acidity and the highest ph. str. thermophilus and bif. longum counts remained constant in the beverage and in the separated fermented milks, during the 21 days of storage, while lb. acidophilus counts were reduced by 1 log cycle.

Abstract: the objective of the present work is to revise and critically discuss the resilience concept defined as the capacity of psychological recovery of the human being before adversity, violence and catastrophes in life. in modern society, that changes faster and deeper, demanding constant adaptation efforts and, therefore turning the resilience into a challenge to the new millennium. the analyzed phenomenon lead to the conclusion that the resilience should not be part of a ideological conceptual group, on the contrary it rises from the sense that is attributed to the human existence, that is to say, for the capacity to make affective and professional liaisons and still for the existence of a life project.

Abstract: intra- and extra-cellular glucose homeostasis is directly related to gene expression control of different isoforms, which encode different glucose transporters, being tissue-specifically expressed, as a consequence of transcriptional factors activity of each gene, in each cellular type. the metabolic syndrome (ms) comprises a wide range of physiopathological abnormalities, all involved in systemic changes, which occur in different territories of the body, where glucose transporters changes are observed in diverse degrees. the present review will describe the glucose transporters expression changes clearly shown in literature, which reflexes in glucose flow, and can facilitate the ms physiopathological understanding, as well as possible treatments for the syndrome.

Abstract: this paper presents a critical genre analysis (advocated in meurer, 2002; bhatia, 2004; motta-roth, 2005, based on the theoretical principles of bakhtin, 1986; swales, 2004; chouliaraki; fairclough, 1999; halliday, 2004) of science popularization (pc) news, focusing on the reported speech that popularizes science. thirty exemplars of pc news from the bbc news and scientific american sites were analyzed. through the mobilization of different enunciative standpoints (researcher, colleague / institutions, government, public and the journalist him / herself), the media performs three discursive functions: inform about new findings, explain scientific principles / concepts, and clarify the relevance of the research for the collectivity. the expression of scientists and colleagues is hegemonic, the public participation, timid.

Abstract: objective: to evaluate the prevalence, sensitivity and specificity of two risk classifications of obesity based on the body mass index (bmi). methods: five-hundred and two adolescents, aged 12-18 years, participants of a health and nutrition survey conducted in 1996 in the city of rio de janeiro, brazil, were evaluated. the study variables included: weight, stature, bmi, and subscapular skinfold, according to sex and age. the bmi classifications were compared to a fatness classification based on the 90th percentile of subscapular skinfold thickness in american adolescents. results: the prevalence of risk of obesity was higher when using the subscapular skinfold measurement (p<0.0001), compared to both bmi-based classifications, which showed similar values. specificity was higher than sensitivity in both bmi-based classifications. the balance between sensitivity and specificity was close to the 70thbmi percentile for boys and girls below 14 years old. for boys older than 15 the cutoff value was the 50th percentile. conclusion: both bmi-based classifications were more suitable to identify adolescents without obesity, and their sensitivities were too low for tracking risk of obesity.
