Abstract:

The objective of the present study was to evaluate the physicochemical properties, presence of water and aflatoxin M1, as well as the effect of the time of year (dry or rainy season) to value the quality and safety of conventional and organic raw milk samples. Samples were collected of conventional (n = 12) and organic (n = 11) raw milk from Tizayuca, Hidalgo and from Tuxpan, Veracruz, respectively. Infrared spectrophotometry and other analytical techniques were employed, approved by the International Dairy Federation for the analysis of the physicochemical properties, the cryoscopy technique for the detection of water addition, and high performance liquid chromatography for the determination of aflatoxin M1. Results showed that there are no significant differences in the components of conventional milk in the season of the year, whereas in organic milk a significant difference (P < 0.05) was observed in acidity during the seasons of the year (rainy and dry), as well as a decrease in the percentage of lactose in the dry season, with a significant difference (P < 0.05). Abstract: The aim of this paper is to analyze aspects of nutrition and nourishment among elderly diabetic people. It is presented the current research of products with functional food properties that provide not only nutritional value but also other components which encourage a better quality of life during aging. In addition, it includes natural and industrialized functional foods that are commercialized and may be good for daily consumption.

Abstract: El objetivo de este artículo es discutir las perspectivas que ofrece la nutrigenética y su potencial para las recomendaciones nutrimentales individuales. Se establece el papel de los polimorfismos (SNPs) génicos cuya variación incide en la respuesta individual, a diversos patrones dietéticos, lo que resulta la llave maestra en el campo de la nutrigenética. De hecho esta variación genética habrá de considerarse para establecer las recomendaciones nutrimentales de una nutrición personalizada. Este artículo también aborda las perspectivas de la población consumidora frente a esta nueva propuesta (nutrigenética), además de analizar la formación académica de los profesionales de la salud que trabajarán con este nuevo paradigma nutrimental. The aim of this paper is to focus on the new perspectives which are offered by the advent of genomics (nutrigene-tic) and their potential on individual nutrition recommendations. Moreover, this article examines the influence of polymorphism on the response to dietary patterns which is the key player in the nutrigenetic field. It is clear that genetic variation influences nutritional requirements, therefore it will influence personalized nutrition recommendation. This paper also focuses on consumer population perspectives concerning nutrigenetics and examines the academic training of future health professionals.
Hipersensibilidad Tipo I asociada a la administración de nandrolona, boldenona y dexametasona en un equino pura sangre de carrera

Abstract: El doping consiste en la administración ilícita de fármacos o de otros agentes en animales de competición con la intención de alterar su rendimiento físico, ya sea en sentido positivo o negativo. El objetivo de este estudio fue reportar un caso de hipersensibilidad tipo I asociado a administración ilícita de nandrolona, boldenona y dexametasona. Se remite un equino (Pura Sangre de Carrera), de 5 a os, con historia de colapso y muerte súbita post administración de fármaco desconocido. Se tomaron muestras de sangre y orina para estudios toxicológicos mediante la técnica de ELISA competitivo. Se le práctico la técnica de necropsia, fueron colectadas muestras de tejido pulmonar, hepático, renal, gástrico, esplénico, corazón y sistema nervioso central para estudio histopatológico, las muestras fueron procesados por los métodos convencionales histológicos. Los hallazgos de necropsia fueron flebitis severa en vena yugular derecha, con hematoma en el surco yugular. Edema severo de glotis, edema, congestión y hemorragia pulmonar. Hemorragia petequial subendocardica. Bazo esplenocontraido y con focos de necrosis de coagulación. Hidronefrosis aguda con hematuria. Hígado con patrón lobulillar acentuado. El resto de los órganos con evidente congestión y hemorragia. Los cortes histológicos evidenciaron edema, congestión y hemorragia pulmonar severa. Hemorragia subepicardica marcada. Edema subcapsular esplénico y necrosis centro-folicular. Degeneración hidropica tubular, necrosis tubular aguda. Necrosis de corteza renal. Los estudios toxicológicos permitieron la detección de boldenona, nandrolona y dexametasona genérica en las muestras de sangre y orina. En conclusión se reporta un síndrome de hipersensibilidad tipo I asociado a la administración nandrolona, boldenona y dexametasona. The doping is the administration of illicit drugs or other agents in animal competition with the intention of altering its physical performance, whether positive or negative. The aim of this study was to report a case of type I hypersensitivity associated with illicit administration of nandrolone, boldenone and dexamethasone. Reference is an equine (Thoroughbreds), 5 years old with a history of collapse and sudden death after the administration of medication unknown. Samples of blood and urine were recollected for toxicological by competitive ELISA. Tissue samples were collected by necropsy of lung, liver, kidney, stomach, spleen, heart and central nervous system for histopathological study, the samples were processed by conventional histological methods. Abstract: It has been documented that increased vegetable consumption is associated with preventive effects in some public health problems such as obesity and some chronic noncommunicable diseases. The aim of this study was to determine the association of nutritional status with vegetable consumption in adolescents from Technical High Schools in Mexico City. A sample of 2368 adolescents was obtained who were applied a questionnaire of frequency food consumption and anthropometric measurements were taken, the nutritional diagnosis was obtained with Who Anthro Plus program. The data obtained were analyzed with the statistical package SPSS version 20.0 for Windows Statistics®. When the correlation of frequency consumption of vegetables with nutritional status, in the final phase, It found that teens who never ate vegetables were more likely to develop obesity (36.0% GI and 36.10% GC), compared with teens who consumed daily (8.9% GI and 2.10% GC), existing difference highly significant. The teenagers of the Technical High School in Mexico City in the intervention group presented a basal daily intake of 15.7% and after the intervention their intake increased to 21.3%. With respect to the control group it started with a daily intake of 12.6% to 14.9% increasing it. An increase was achieved in the daily consumption of vegetables in adolescents of both groups so it is concluded that the intervention was successful.

Abstract: the present study was conducted to assess the level of aflatoxin m1 (afm1) in goat milk and cheese. milk samples (n=60) were taken during the period july 2008 to june 2009 from 5 goats production units. cheese samples (n=20) were taken in july 2009. samples were analyzed by high performance liquid chromatography (hplc) using the methods proposed by the aoac. the results show 30% of milk samples with some level of afm1, 18% were above the maximum permissible level (0.05 μg kg-1) by the european community, with a peak of 1.61 μg kg-1. cheese samples showed a 15% incidence of afm1, with a maximum level of 0.23 μg kg-1.

Abstract: The paper analyses the interrelations between politics and tourism considering the impact of political instability generated by the Zapatista indigenous rebellion on tourism in Chiapas, Mexico. By analysing tourist products and fieldwork observations the transformation of the tourist industry is explained as an effect of pressures from a new kind of visitor, “political tourists”. Attracted by the indigenous movement and its relevance as a global social movement, their political and ideological position created demands that affected interethnic organisational networks and the social value of tourism activity. As a response indigenous and non indigenous tourist agents generated new strategies for economic recovery, including changes in the organisational networks and marketing symbols and ideologies as “commodities”.

Abstract: Utilizando el género epistolar, una carta a mi madre, reflexiono sobre mi nueva vida e identidad como emigrante en Australia explorando mis percepciones sobre la diferencia cultural y lingüística. Lejos de mis hijas y nietos en México, en esta carta, tardíamente escrita, relato mis recuerdos, nostalgias y vivencias en el nuevo ambiente, y sobre todo, hablo de mis dificultades para manejar emocionalmente mi miedo a la ausencia en los momentos importantes del ciclo de vida, la enfermedad y la muerte. Using the epistolary genre, a letter to my mother, I reflect on my life and identity as an emigrant in Australia by exploring my perceptions of cultural and linguistic difference. Far from my children and grandchildren in Mexico, in this belatedly written letter I recall my memories, nostalgic feelings and expereinces in the new environment, and above all, I speak of my difficulties in mangaing emotionally my fears of being absent in the important moments of the cycle of life, sickness and death.
