Consumers have two types of expectation about a service: a desired level and a perceived level. Considering the contribution of tourism to generate employment and revenue the goal of this study is to identify the degree of consumers’ satisfaction with hotel services and discuss its strategic implications. A survey was conducted with 407 customers of hotels in the Midwest of Brazil. The study employed the SERVQUAL framework with five attribute dimensions (tangibility, reliability, responsiveness, assurance and empathy) in order to confront expectations and performance. Next, the study used the Albrecht and Bradford's service attribute matrix, according to perceived satisfaction, which proposes five areas of positioning attributes (vulnerabi

Abstract: this study evaluated the mutagenic and ant mutagenic action of a biopolymer of glucose extracted from agrobacterium radiobacter (biopolymer of agrobacterium radiobacter). the experiment was conducted with swiss male mice divided into eight groups. treatment with the biopolymer was performed in a single dose by gavage at a dose of concomitant phosphate buffer groups in the evaluation of mutagenicity, or the agent of inducing dna damage, cyclophosphamide, the concentration of 50 mg/kg (body weight --b.w.), in groups of assessment ant mutagenic. we used the micronucleus test in peripheral blood. the blood sample was held 24 and 48 h after application of the test substances. statistical analysis showed that the biopolymer has no mutagenic activity and it is effective in preventing damage to dna. the percentages of damage reduction in groups of ant mutagenic were 83.9%, 89.1% and 103.1% in 24 h and 101.24%, 98.14% and 120.64% at doses of 48 to 75, 150 and 300 mg/kg (b.w.) respectively. the high percentage of damage reduction associated with the absence of mutagenic effects indicates the possibility of biopolymer chemoprotection action. it can also be considered a functional food candidate to be used as co-adjuvant chemotherapy to prevent side effects.

Abstract: in a moment that amazingly advances are being reached on the development of technologies to obtain high value chemical compounds as polymers, fine chemicals, pharmaceutical industry intermediates and chemical entities, we cannot refuse that a meaningful progress is due to the maturing in knowledge of biological transformations. biocatalysis and biotransformations are being widespread applied to generate processes and products with incredible success. in this review article we present the main contributions of biotechnology and biological catalytic processes to chemistry, the most important evolution steps on enzymatic transformations, how it has being applied and which are the perspectives to academic and industrial environments. we also would like to stimulate the community to step out research in biotechnology applicable to chemical and pharmaceutical industries, trying to achieve what we believe to be the ideal layout: integrating chemical transformations, enzymatic conversions and fermentation processes.

The aim of this work was to isolate and identify the yeasts prevalent in fresh grapes cultivated in the “São Francisco Valley” region (Brazil), as well as evaluating the cell growth of these indigenous yeasts during the fermentation of grape musts and their contribution to the improvement of wine aroma. The Chenin Blanc grape must fermented by H. opuntiae presented higher acceptance means at the three points analyzed (6.74, 6.78 and 7.30) and in the fermentation carried out by the yeasts H. opuntiae and S. cerevisiae, the highest mean acceptance (7.22) was observed after 120 hours, with no statistical difference from the sample fermented by H. opuntiae alone. Since these samples that showed higher acceptance means also receiving higher scores for purchasing intention, corresponding to the concepts of “definitely would buy” and “probably would buy”. The present study suggests that the fermentations of grape musts carried out by the yeast H. opuntiae and mixed cultures of H. opuntiae and Saccharomyces cerevisiae, positively influenced the sensory qualities of the wines and showed greater potential to increase the aroma of the musts and to develop specific wine styles.
