Abstract: At semi-industrial scale it was obtained two cheeses, one with aromatic culture (CHN) and the other with also L. helveticus (CHN + LH). Proteolysis during ripening was evaluated using proteolytic indices, electrophoretic profile Urea-PAGE and release of free amino acids. Sensory evaluation was performed by acceptability test. It was observed a 5-fold increase in the fraction corresponding to αs1-I-casein in the CHN cheese and 6.5 times in the CHN + LH cheese and 7.2 and 8.2 increase respectively, for total amino acids. Prato cheese with the adjunct culture showed higher acceptability in terms of overall aroma and flavor.

Abstract: Discharge of whey proteins is still a current practice by small cheese producers. The development of low-cost alternatives for recovery of these proteins is fundamental for small producers who cannot apply expensive techniques. The present study investigated the complex coacervation technique as a cheap technology to recover proteins from sweet whey using carboxymethylcellulose, and the coacervate used as an ingredient in the formulation of probiotic fermented milk. The nutritional properties of whey-carboxymethylcellulose coacervates (WP-CMC) were evaluated in trials with animals (rats) using casein as a reference. All these parameters—the coefficient of feed efficiency (CEA), protein digestibility-corrected amino acid score (PDCAAS), and net protein ratio (NPR), as well as weight gain—were determined to evaluate protein quality. A sensory acceptance test was applied to evaluate the sensory characteristics of the product. The complex coacervation technique recovered 86% of the protein from sweet whey. No significant (p > 0.05) differences were observed in the biological tests for both groups (WP-CMC and Casein groups) when NPR (4.98 to 5.04), digestibility (92.35 to 90.64), and CEA (0.40 to 0.42) were evaluated. Probiotic fermented milk beverage containing WP-CMC (0.78%) and guar gum (0.68%) presented good acceptability as determined by sensory evaluation. WP-CMC can be considered an ingredient with high nutritional and biological value that could be applied in probiotic fermented milk as an alternative to small producers to allocate the residual whey from cheese manufacture.

Abstract: in the first years of life, children must have a balanced diet in order to ensure their healthy growth and physical development. therefore, it is important to have quick and simple methods to evaluate food consumption. objectives: to evaluate the agreement of the information obtained by the "individual direct food weighing method" and by the "total direct food weighing method". methods: the methods were the "individual direct food weighing method" and "total direct food weighing method" used in every meal served to children in a child day care center so as to collect food intake information. each food portion served to the children, as well as leftovers, was quantified in grams. the agreement coefficient was used in accordance with lin's model and bland & altman's model for the graphic representation of comparison of both direct food-weighing methods. results: the agreement observed for the comparison of the direct weighing methods was r = 0.676. conclusion: the comparison between the "individual direct weighing method" and the "total direct weighing method" in the day care center presented low agreement. using the "total direct weighing method" to evaluate children's food consumption in day care centers is not therefore recommended.

Abstract: the objective of this study was to determine the quality and composition of fatty acid in the lipid fraction of silages obtained from the residue of tilapia processing. stratification of the lipid layer of the silages occurred at different times among the two types of silage (acid and fermented) and the greatest volume of oil was observed in acid silage (8.67% p/p). although acid silage was more oxidized, it showed lower contents of free fatty acids probably because the degree of hydrolysis of its components is lower than that of fermented silage. fatty acid composition did not differ among processes inasmuch as level of ?-3 was slightly higher in fermented silage. according to the degree of saturation, monounsaturated fatty acids stood out as the predominant category in acid and fermented silages with values of 39.69% and 33.39%, respectively. the use of antioxidants in the silage is needed because the process of production is carried out at temperatures higher than room temperature. the oil in the silages has excellent nutritional value and contains fatty acids essential for animal feeding.
Using evidence on violence and injury prevention for policy development and decision making in Ciudad Juarez, Mexico

Abstract: this report describes the implementation process and functional structure of the observatory of security and citizen conviviality of the juarez municipality (observatorio de seguridad y convivencia ciudadanas del municipio de juárez) in chihuahua, mexico, and discusses the most relevant lessons learned and main challenges in the near future. the observatory, created in 2008, is a joint effort of the juarez municipal government, autonomous university of ciudad juarez (universidad autónoma de ciudad juárez), and the pan american health organization. the observatory's main objective is to propose strategies and public policy recommendations to prevent and control violence and injuries in the juarez municipality. most key federal, state, and local agencies have joined this independent autonomous citizen-based initiative, feed the databases, and benefit from the information produced by a multisectoral, multidisciplinary approach. the observatory contributes far more than the technical data provided and its facilitating functions. the clear results obtained in such a short time-as seen in the preliminary results of the case study on road injuries from january 2009 to july 2011-demonstrate the appropriateness of this course of action and should stimulate the creation of new observatories whenever and wherever needed. lessons learned, as discussed here, can open the way to new endeavors, and current challenges show how much work remains to be done.
Anatomy of Citrus sp. and Kalanchoe tubiflora Tumor Tissues

Abstract: Plants of the orange Piralima Citrus sinensis, Osbeck develop symptoms of an anomaly in certain branches that distinguish them from the rest of the plant. Among the various hypotheses raised to explain the cause of this disease is that of Agrobacterium tumefaciens, carrier of the Ti plasmid. Examinations were performed under an optical microscope of the tumors tissue structure that occurs in citrus branches compared with the tumors caused by the Ti plasmid in Kalanchoe tubiflora. The tumors produced in K. tubiflora, caused by different isolates of A. tumefaciens containing the Ti plasmid, revealed the same cell disorganization between the epidermis and the cambial region as the tumors produced in citrus. In the region closer to the cambium, in addition to the disorganization it was observed that the tracheal elements presented greater affinity to safranine. Both in K. tubiflora and in Piralima plants, the increase in the tumor volume resulted in hyperplasia caused by the abnormal activity of the vascular cambium. Anatomic destruction of the peripheral tissues of the organs occurred in both plants.

Abstract: The objective of this study was the evaluation of the heartwood diameter (dcerne) at breast height on stand trees, for Eucalyptus globulus Labill and the hybrid Populus euramericana. The data used was collected in eucalyptus and popular pure plantations in Central and North Portugal.The non destructive methods tested in the evaluation of heartwood diameter at breast height were [1] visual identification of the heartwood on core samples and [2] indirect estimation using mathematic models. The results allow to consider that visual determination of dcerne is appropriate for Populus, and development of prediction models based diameter at breast height (d), total height (h) and age (t), give better results for eucalyptus.
Carbon Stock Assessment at a Regional Level, on Pure and Mixed Stands, Based on Inventory Data: A Case Study  [PDF]

Abstract: Following Kyoto protocol considerable research efforts have been made on carbon sequestration assessment of forest stands. The aim of the present study was to test the adequacy of two documented methodologies to obtain stand level dry biomass and carbon estimates, considering its application at regional scale, for pure and mixed stands. The procedures refer to: 1) the estimation of dry biomass through the use of tree biomass models and 2) the use of biomass conversion and expansion factors (BCEF) to convert stem volume raw data into aboveground dry biomass. Using the dry biomass values, carbon stock is easily estimated using conversion factors, being 0.50 a generally accepted value. Case study reports to a pilot zone with pure and mixed stands of Eucalyptus globulus Labill and Pinus pinaster Ait. in Portugal. Procedure 1) gives the most reliable results when the database includes detailed information at tree level, both for pure or mixed stands. When individual tree data is not accessible, option 2) is an interesting option to consider for pure stands. The use of BCEF-based procedure in mixed stands is not advocated at least when considering the direct use of a single conversion factor, as the value of the factor strongly depends on the forest composition.
Specific amplification of iron receptor genes in Xylella fastidiosa strains from different hosts

Abstract: bacterial production of siderophores may involve specific genes related to nonribosomal peptide and polyketide biosynthesis, which have not been fully identified in the genome of xylella fastidiosa strain 9a5c. however, a search for siderophore-related genes in strain 9a5c indicated five membrane receptors, including siderophore, ferrichrome-iron and hemin receptors. all these biomolecules are thought to be associated with iron transport and utilization. eighty isolates obtained from citrus orchards containing trees that developed citrus variegated chlorosis (cvc) were screened for siderophore production. the results demonstrated that only 10 of the isolates did not produce siderophores. additional strains obtained from coffee, almond, mulberry, elm, ragweed, periwinkle and grape also infected by x. fastidiosa were also shown by the chromeazurol bioassay to produce siderophores. in order to correlate siderophore production with the presence of siderophore-related genes, a polymerase chain reaction (pcr) was developed using specific primers for the catechol-type ferric enterobactin receptor (pfea) and the hydroxamate-type ferrisiderophore receptor (fiua) genes of strain 9a5c. the pcr results confirmed our hypothesis by demonstrating that amplification products were detected in all strains except for those isolates that did not produce siderophores.

Abstract: the object of this work was to compare the functional activity of whey protein concentrate (wpc) and its hydrolysates produced by different enzyme systems. pancreatin and microbial (protamex and alcalase) were utilized. functional activity was monitored by liver concentration of glutathione and primary immunological response (igm) in spleen (pfc). in the biological assays isogênic mice a/j, fed on an ain modified diet (20% wpc or its hydrolysates) were used. thepfc number did not differ for pancreatin and protemix hydrolysates but was inferior for alcalase hydrolysate (p<0.05). liver glutathione concentration showed a high positive correlation (r=0,992) with the pfc number in the spleen.
