Impact of a Non-Saccharomyces Yeast Isolated in the Equatorial Region in the Acceptance of Wine Aroma  [PDF]

Abstract:

The aim of this work was to isolate and identify the yeasts prevalent in fresh grapes cultivated in the “São Francisco Valley” region (Brazil), as well as evaluating the cell growth of these indigenous yeasts during the fermentation of grape musts and their contribution to the improvement of wine aroma. The Chenin Blanc grape must fermented by H. opuntiae presented higher acceptance means at the three points analyzed (6.74, 6.78 and 7.30) and in the fermentation carried out by the yeasts H. opuntiae and S. cerevisiae, the highest mean acceptance (7.22) was observed after 120 hours, with no statistical difference from the sample fermented by H. opuntiae alone. Since these samples that showed higher acceptance means also receiving higher scores for purchasing intention, corresponding to the concepts of “definitely would buy” and “probably would buy”. The present study suggests that the fermentations of grape musts carried out by the yeast H. opuntiae and mixed cultures of H. opuntiae and Saccharomyces cerevisiae, positively influenced the sensory qualities of the wines and showed greater potential to increase the aroma of the musts and to develop specific wine styles.

Abstract: the aim of this study was to determine the concentration of volatile compounds in chardonnay and pinot noir grape musts. the study also aims to analyze yeast growth phases during fermentation at 15 and 20 °c. major volatile compounds of fermentation such as ethanol, ethyl acetate, isoamyl acetate, acetaldehyde, 1-propanol, 3-methyl butanol and 2-methyl butanol were isolated and quantified using the purge and trap system. fermentation carried out at 15 °c was more appropriate in the production of ethyl acetate (131.3 and 147.0 mg.l-1 in the pinot noir and chardonnay musts, respectively), whilst at 20 °c the production was of 286.0 and 270.0 mg.l-1 in the pinot noir and chardonnay musts respectively.

Abstract: the objective of this work was to study the growth behavior, as well as, volatile compounds production during grape must fermentation by kloeckera apiculata and saccharomyces cerevisiae. the concentrations of the major volatile compounds during the fermentation were dependent of the temperature of the fermentation. in fermentation at 20°c, the concentration of the dry weight biomass and volatile compounds were greater than that ones at 15°c. the kloeckera apiculata produced high concentrations of the ethyl acetate (197.0mg/l - 310.0mg/l) and isoamyl acetate (19.3mg/l - 31.3mg/l), esters of great sensory importance. however, the ethanol concentration obtained was lower, about 6.3g/l - 24.0g/l, than that one obtained with fermentation by saccharomyces cerevisiae (27.3g/l - 34.0g/l).

Abstract:

The umbucajazeira is specie native to the Brazilian Northeast semiarid areas, which is economically explored based on the fruit. The fruit has a high agroindustrial potential, mainly for jam production. The aim of this study was to evaluate through sensorial analysis, two formulations of umbu-caja jams: a dietetic one with xylitol, used as an option for substitution of the sugars, and a conventional one. The proportion of 50:50:0.5 (pulp/sugar/pectin or pulp/xylitol/pectin) was used for jam processing. The mixture was concentrated up to reach 65°Brix. The jams were evaluated by 50 non-trained tasters, through a hedonic scale of nine points, whereas the following attributes were used: appearance, color, flavor, aroma and texture. The results of the physical and physicochemical analysis showed that the characteristics of jams prepared with sucrose are close to the ones made with xylitol, except for the total sugars and the energetic value. The jams had pH values ranging between 2.37 and 2.92; titratable acidity varying between 0.56 and 0.78 g citric acid/100 g pulp; soluble solids ranging between 60.92°and 65.08°Brix, respectively. A tendency for yellow color was noticed by the color analysis. Jam diet had the highest scores for appearance (7.4 - 7.7). No significant differences (p > 0.05) were obtained to flavor and texture. The fruit of the umbucajazeira showed to be adequate for jam manufature since they had good sensorial acceptance. The use of xylitol was satisfactory for obtaining a product with jam characteristics similar to the conventional jam, but with lower energetic value.

Stability and Sensory Quality of Dried Papaya  [PDF]

Abstract: Fruit dehydration is a way of supplying the population with healthy and nutritious foods. The shelf life of dried fruit can be defined by the evaluation of changes occurred in chemical characteristics during storage. This study aims to evaluate the sensory quality and the stability of papaya cv. Tainung n° 1 dehydrated by convective drying. Fresh and dried papaya were evaluated for color, moisture, pH, acidity, water activity, soluble solids, vitamin C, carotenoids, total extractable polyphenols (TEP) and antioxidant activity (ABTS). The sensorial acceptance of the dried papaya was evaluated using a structured nine-point hedonic scale. For the stability study, the analysis of moisture, pH, titratable acidity, water activity, total carotenoids and vitamin C were carried out every 30 days of storage until 120 days. During storage, the moisture content of dried papaya remained constant, but there were undesirable changes in color, increase of acidity and reduction of soluble solids. The degradation of total carotenoids and vitamin C followed the first order reaction, and the half-life time was 346 days for carotenoids, whereas for vitamin C it was only 29 days. In the sensory analysis, the dried papaya received grades between 5.0 and 6.0 for all evaluated attributes. Dried papaya is recommended to be consumed up to 30 days, since within this period a product with higher total carotenoids content, vitamin C and with satisfactory physicochemical and sensorial characteristics were obtained.

Abstract: the present bibliographical study aimed to introduce social representations theory and the discourse of the collective subject as theoretical-methodological options for the development of research in nursing that is based on common knowledge. social representations are popular knowledge, myths, beliefs, customs, which converge on common sense and are socially shared. the discourse of the collective subject is a technique to organize material resulting from fieldwork, generally discourses deriving from interviews, questionnaires, papers, graphic materials, etc. a search in the literature was made regarding social representations and the discourse of the collective subject, so as to contribute to the understanding of the theory and of the method. relevant aspects of these frameworks were presented, aiming to identify the relations between them in the process of construction of the participants' reality. thus, it was possible to learn about the way people think, live, act, react and share popular knowledge. the final remarks reveal that social representations and the discourse of the collective subject are essential tools in qualitative studies.

Abstract: informations of 7986 births of animals from a nellore cattle herd, from 1960 to 1993, were used to estimate (co) variance components, heritabilities and genetic correlations of weaning weight (w240), yearling weight (w365), age at first calving (afc), first calving interval (ci1), reproductive efficiency (re), longevity (long), calculated as years of permanence of cow in herd and weaning weight of the first calf of cow (w240c). the analysis were performed using the mtdfreml software, estimating the (co) variance components by restricted maximum likelihood, assuming an animal model. estimates of heritability showed similar results among the different analyses, being higher (0.26 to 0.35) for w240, w365 and afc and lower (0.08 to 0.26) for ci1, re, long and w240c. in general, the estimates of genetic and phenotypic correlations among growth and reproductive traits were low and among the reproductive traits were high and favorable. some correlations between maternal genetic effect of the growth and the direct genetic effect of the reproductive traits were of average magnitude and unfavorable, suggesting genetic antagonism between milk production and reproduction.

Abstract: Informa es de 7986 nascimentos de animais da ra a Nelore, ocorridos entre 1960 e 1993, provenientes de um rebanho do Estado de S o Paulo, foram usadas para estudar componentes de (co)variancias, herdabilidades e correla es genéticas de peso ao desmame (P240), peso a um ano de idade (P365), idade ao primeiro parto (IPP), primeiro intervalo de partos (IEP1), eficiência reprodutiva (ER), anos de permanência da matriz no rebanho (LONG) e peso ao desmame do primeiro bezerro da matriz (P240B). As análises foram realizadas utilizando-se o software MTDFREML, estimando-se os componentes de (co)variancias por máxima verossimilhan a restrita, assumindo modelo animal. As estimativas de herdabilidade apresentaram resultados similares entre as diferentes análises, sendo mais altas (0,26 a 0,35) para P240, P365 e IPP e mais baixas (0,08 a 0,26) para IEP1, ER, LONG e P240B. De modo geral, as estimativas de correla o genética e fenotípica entre crescimento e reprodu o foram baixas e entre as características de reprodu o, mais altas e de sentido favorável. Algumas correla es entre o efeito genético materno das características de crescimento e o direto das características de reprodu o foram de média magnitude e de sentido desfavorável, sugerindo antagonismo genético entre produ o de leite e reprodu o.

Abstract: this report is a preliminary result of a survey on memories and history of hansen's disease, or 'hanseniasis', prepared by the funda??o oswaldo cruz (fiocruz) and the universidade federal do rio de janeiro (ufrj) using statements from those who have been afflicted by the disease or those that have fought against it. it outlines the methodology used by the authors and gives a succinct history of hansen's disease in brazil, together with information on the stage of the survey with extracts from our archives of statements. the founding and the role of movement for the reintegration of people afflicted by hansen's disease (morhan) are explained in the testimony of thomas frist, a social scientist who worked in brazil in the 1970s and 1980s, when the country's old colonies were being restructured, and cristiano torres, a former patient who spent time in prevention centers and leproseries in pará state and who is now active in proposing new policy for the control of hansen's disease.

Abstract: This report is a preliminary result of a survey on memories and history of Hansen's disease, or 'hanseniasis', prepared by the Funda o Oswaldo Cruz (Fiocruz) and the Universidade Federal do Rio de Janeiro (UFRJ) using statements from those who have been afflicted by the disease or those that have fought against it. It outlines the methodology used by the authors and gives a succinct history of Hansen's disease in Brazil, together with information on the stage of the survey with extracts from our archives of statements. The founding and the role of Movement for the Reintegration of People Afflicted by Hansen's Disease (Morhan) are explained in the testimony of Thomas Frist, a social scientist who worked in Brazil in the 1970s and 1980s, when the country's old colonies were being restructured, and Cristiano Torres, a former patient who spent time in prevention centers and leproseries in Pará state and who is now active in proposing new policy for the control of Hansen's disease.
