Suplementa??o de iogurte de soja com frutooligossacarídeos: características probióticas e aceitabilidade

Abstract: objective: the probiotic characteristics of the microorganisms (lactobacillus bulgaricus and streptococcus thermophillus) used to produce soy yogurt supplemented with prebiotic fructooligosaccharides were evaluated and also the physicochemical and microbiological characteristics and acceptance of the product. methods: the formulation containing powdered soy extract, supplemented with fructooligosaccharides (oligofructose and inulin), was fermented for 6 hours (42oc) and then characterized and compared to a soy yogurt formulation made without supplementation. results: the starter used to prepare the yogurts (lactobacillus bulgaricus and streptococcus thermophillus) showed resistance to bile and to acid. the prebiotics maintained the viability of the lactic acid bacteria at levels higher than necessary to characterize the product as a probiotic food, up to the 28th day of storage. the final ph value of the supplemented yogurt was 4.63, the acidity 0.37% and the acceptance 71.20%. the supplemented yogurt showed greater viscosity, cohesiveness and adhesiveness than the non-supplemented product and was less hard. conclusion: lactobacillus bulgaricus and streptococcus thermophillus are probiotics and fructooligosaccharides are ingredients that maintain the viability of lactic acid bacteria in soy yogurt, giving rise to a product with good acceptability.

Abstract: this study aimed at identifying the most frequent nursing diagnoses and propose interventions for women under critical care into a maternal intensive care unit in a public hospital in fortaleza, ce, brazil. retrospective study conducted with women's hospital health records. ten nursing diagnoses were elaborated, being four risk: risk of infection, risk of unbalance of liquids volume, risk of aspiration, risk of damaged skin integrity and six real: altered maternity, impaired physical mobility, anxiety and impaired verbal communication. for the referred nursing diagnoses, nursing interventions are proposed according to the link between nanda, nic and noc. it was concluded that the use of nd is a necessary technology for the nursing reality, as it makes possible the integral care.

Abstract: the study aimed at identifying the nursing diagnoses related to the psychological and social aspects of elderly patients undergoing cardiac catheterization, according to the adaptation theory of calista roy. it was developed in a cardiology unit in a hospital in fortaleza, ce, from january to july, 2005. a semi-structured interview was used, with 18 elderly patients, in pre-catheterization period. the analysis identified the nursing diagnoses: alteration in the maintenance of the health, anxiety, fear and alteration in the family process. the nursing actions were: to create a trust climate for the aged before the exam; to listen and to respect feelings faiths and referring values to the situation; to guide the patient with relationships to the procedure. the use of this theory, allowed in recognizing that patients, by means of incentives, can unchain answers some positive times other negative times, fitting to the nurse to act as mediator.

Abstract: On this article it is analyzed an episode of the TV series Indiscrete lens , Straight Plan for the Gay Man , aired by the channel GNT in 2005, in which an average citizen agrees to have his personal image deconstructed by the large audience that observes him in the pursuit of a new body. The series approaches an intergame among the visibility and the intimacy present nowadays on TV. From the idea of celebrated advertisement of life, this work proposes to draw the actions of the characters regarding the different senses employed on their will power. This study also reflects upon the denial of personal effort towards the possibilities of being within the world, since the subjectivity is, that way, captured by changes that happen rapidly, without counting on unexpected happenings, and with pre-defined goals. In this sense, the lead man of the show in analysis is a metaphor of the contemporary sedentarity, in which it is not expected from the individuals the condition of elaborating criteria for self care, consuming on their lazy-boys new fashion ways of life that absolve them from the need of experimenting.

Abstract: Este artigo apresenta considera es sobre concep es, cren as e competências referentes à leitura, reveladas por professores de Matemática, e práticas de leitura trabalhadas em suas aulas. O artigo também situa teoricamente a quest o da leitura na escola. Por meio de pesquisa documental, busca identificar recomenda es metodológicas veiculadas pelas redes estadual e municipal de educa o de S o Paulo a respeito da competência leitora. Usando pesquisa de natureza qualitativa, mostra o perfil leitor e as concep es e cren as relativas às competências leitoras e às práticas de leituras desenvolvidas por professores de Matemática dessas redes. Prop e, na forma o inicial e continuada de professores de Matemática, a urgente introdu o de estudos sobre leitura e produ o de textos como uma possibilidade de viabilizar práticas de leitura e escrita em suas aulas.
Penicillin Resistance in Nasopharyngeal Streptococcus pneumoniae among Children with Sickle Cell Disease Immunized with 7-Valent Pneumococcal Conjugate Vaccine  [PDF]

To assess the prevalence, the antimicrobials resistance and to identify risk factors of nasopharyngeal colonization by Streptococcus pneumoniae in children with sickle cell disease (SCD) using prophylactic penicillin and immunized with 7-valent pneumococcal conjugate vaccine. A total of 424 swabs were collected from the nasopharynx in 216 children with SCD and 109 samples from the control group, both from 2 to 60 months age range. Isolation and identification of pneumococci followed standard procedures. Minimum inhibitory concentration (MIC) for penicillin was determined by the E-test method. Prevalence of nasopharyngeal colonization by pneumococci in children with SCD was 17%, and 11% in the control group. The risk factors for increased colonization in children with SCD were the presence of more than five people at home, daycare/school attendance and low prophylaxis compliance. The prevalence of strains with penicillin resistance was 57.5% in patients with SCD and 25% in the control group. Conclusions: Prevalence of pneumococci nasopharyngeal colonization was similar among the study groups. Prophylactic use of penicillin may have increased the prevalence of resistant strains. The vaccine did not decrease the colonization with penicillin resistant strains.

Utilization of supplemented sugarcane molasses for continuous production of lactic acid by Lactobacillus curvatus/ Produ o contínua de ácido láctico por Lactobacillus curvatus a partir de mela o de cana-de-a úcar suplementado

Abstract: Several by-products and raw-materials of food and agricultural industries have been used as culture medium. It is rich nutrients sources, and it is considered low cost and high availability of molasses as a substrate can be used in lactic fermentation. Lactic acid has tradicionally been obtained by chemical process, however, lactic acid production by fermentative process is considered most viable economically. Lactic acid has application in different industries such as pharmaceutical, cosmetic, textiles, leather, chemical and food industries, where about 82% of all world production is used. In this work, lactic acid production by L. curvatus under continuous culture on sugarcane molasses supplemented with yeast extract and peptone was evaluated. Dilution rates tested were 0,05; 0,10 and 0,15h-1 at 37oC. Samples were taken for pH, reducing sugar, lactic acid, biomass and cellular viability measurements under steady state conditions. When the D was 0,05; 0,10 and 0,15h-1, the reducing sugar consumption was 7,1; 6,4 and 4,8g/L, respectively. Highest lactic acid production (13,8g/L) was obtained when D=0,05h-1 was used, while at D=0,10 and 0,15h-1, lactic acid production reached 10,2 and 7,1g/L, respectively. The highest values of biomass (1,98g/L) and cell viability (2,03x109CFU/mL) were reached at the lowest dilution rate tested (0,05h-1). In conclusion, the results showed that under tested conditions, low values of dilution rate were most suitable for continuous lactic acid production by L. curvatus in supplemented sugarcane molasses. Mela o é uma matéria prima de baixo custo e rico em nutrientes para a fermenta o láctica. O ácido láctico tem aplica o na indústria farmacêutica, cosmética, têxtil, de couro, química e de alimentos, onde s o utilizados cerca de 82% de sua produ o mundial. Neste trabalho foi avaliada a produ o de ácido láctico por Lactobacillus curvatus em fermenta o contínua de mela o de cana-de-a úcar, previamente tratado com invertase e suplementado com extrato de levedura e peptona. Os valores de taxa de dilui o D= 0,05; 0,10 e 0,15h-1 foram testados à temperatura de 37oC. As amostras foram coletadas na fase estacionária de crescimento, para medidas de pH, determina o de a úcares redutores, biomassa, produ o de ácido láctico e viabilidade celular. Nestas condi es, o consumo de a ucares redutores diminuiu de 7,1; 6,4 e 4,8g/L com o aumento respectivo da taxa de dilui o. Abstract: A produ o de gás metano, uma das alternativas de utiliza o de biomassa, é particularmente interessante por ser obtida a partir de resíduos vegetais e animais, normalmente considerados dejetos de pequeno aproveitamento ou eventualmente até contaminantes e poluentes. Além de obten o de energia de fácil implementa o e aproveitamento em áreas rurais, obtém-se pela fermenta o anaeróbica dos resíduos organicos, um subproduto, o biofertilizante, de excelente aproveitamento na lavoura. Influence of NaCl and NaCO2 on the Lactic Acid Fermentation of Lactobacillus curvatus Grown in MRS Medium

Abstract: Lactic acid bacteria are microorganisms of major importance in food industry, mainly for its lactic acid production which contributes for food preservation and organoleptic properties. In the case of meat products, these bacteria are useful because they reduce nitrates and nitrites. The reduction of nitrites decreases formation of carcinogenics compounds as the nitrosamines. The objective of this work was to evaluate the use of NaCl and NaNO2 as suplementation of the MRS medium (Man-Rogosa-Sharpe), in order to improve the lactic fermentation by Lactobacillus curvatus. The optimization of the concentration of these salts in the medium was obtained by the response surface methodology with fatorial design 32. The cultures were developed during 48h at 37oC and initial pH of 6.2 in MRS liquid medium. The lactic acid was measured by spectrophotometry at 425 nm. Better acid lactic production, 3.3%, was obtained using 0.87 % (w/v) of NaCl and 156ppm of NaNO2. It was observed that levels of NaCl up to 4 % (w/v) and NaNO2 up to 300ppm, recommended in the meat preservation, did not significantly affected the lactic acid production at the 5% level, which demonstrates the possibility of using L. curvatus as starter culture in meat products.
