Food and Nutrition Sciences (FNS) , 2014, DOI: 10.4236/fns.2014.518189
Abstract: Growing concern to increase life expectancy has promoted several studies in the field of nutrition, especially those on food and their effects on the human body. Assays have been performed to improve their nutritional quality. In fact, there is considerable interest in encouraging development of new ingredients, with the innovation in food products and the establishment of new market niches for these ingredients. The global market for functional foods is growing and always envisages new products with functional technological and physiological characteristics. The petitsuisse cheese is a product of high nutritional value, rich in calcium, phosphorus and fat-soluble vitamins, with a high percentage of milk proteins, coupled to excellent digestion and assimilation by the human body. Current assay describes the production of a petit-suisse cheese to which was added the probiotic Lactobacillus casei BGP 93, and determines the physical, chemical and microbiological viability of lactobacilli in cheese during storage period. Levels of protein, fat in the dry extract, moisture and pH were analyzed for physical and chemical parameters; likewise, detection of coliforms, Staphylococcus, Salmonella, Listeria monocytogenes, and yeasts and molds was performed for microbiological parameters; monitoring of the viability of Lactobacillus casei BGP 93 during its life time was conducted. The petit-suisse cheese proved to be a good vehicle for the addition of probiotic microorganism. Lactobacillus casei remained viable during shelf life even with decreasing pH, and may be considered a functional product during 30 days of storage.

Abstract: in this study we investigated the role of leaf-cutting ants in the post-fire vegetation recovery. we hypothesized that a forest plot submitted to annual fire presents: (1) higher abundance of leaf-cutting ant nests; (2) higher removal of seeds; and (3) higher herbivory rates of leaf-cutting ants, when compared to the forest plots without fire (control). the leaf-cutting ant nests were sampled, mapped, and checked up (after 17 months) to register their activity and new colonies emerging from the plot. we made comparative experiments of seeds removal and seedlings herbivory in two 50 ha plots, one submitted to annual fire and another without fire. the abundance of leaf-cutting nests was higher in the plot submitted to fire than in the control plot. the species found were: atta cephalotes, a. laevigata, and a. sexdens, being the latter the most abundant and the one that showed an increase of active colonies after 17 months. the plot submitted to fire showed a higher abundance of seeds removed by leaf-cutting ants than the control. while more than two leaves were ripped per seedling in the plot under fire, less than one was registered in the control plot. it was also observed that the average abundance of seedlings attacked by leaf-cutting ant in the fire plot was higher than in the plot without fire. this study shows that the leaf-cutting ants may reduce seed germination and seedling recruitment, affecting the reproductive success and the composition of vegetation recovering from fire. alternatively, the leaf-cutting ants may also speed up the regeneration process of unpalatable plant species. in this sense, we may conclude that the presence of leaf-cutting may interfere in the species composition of post fire forest.

Abstract: the audit credibility crisis, experienced not only in brazil but also in countries like the united states and england, as well as the global environment impose the opportunity for independent auditors to revise the way in which they conduct their activities and their main professional attitudes. a more competitive dimension is influencing the reality of auditing, intensifying daily preoccupations with added value, client focus, self-regulation, among others. the phenomenon of value migration, which has accompanied the client empowerment process in recent years, gives rise to questions about independence, ethics and governmental regulation. the conceptual principles that guided this work were based on a current view on this matter and on research carried out in audit firms and their clients. without the intention of being conclusive, this study offers a reflection about the challenge of constructing a new reality.

Abstract: brazilian football, as a social phenomenon, had been subordinated to the substantive reason based on values and tradition. however, this sport has become a business due to its attractiveness as a source of wealth. when sport organizations incoporate the logic of the market, the consequence is the adoption of elements from the business world in the administration of these organizations. managerial concepts and practices become present, changing the managements discouise as well as the basis for their legitimation in their specific context. thus, the emergence of a new logic of reference produces new actors, new procedures and categories that were exclusive to the environment of entrepreneurial organizations, like goods, customers, efficiency, results and competitiveness. when players are submitted to the logic of the market, they become goods, supporters become consumers, the game becomes a financial asset and the football is seen as a great business. relations are based on impersonality, strategies of control are developed since they assure the achievement of objectives, as well as modernizing market actions, and the legitimate management is the one wich is based on professionalism. this study contributes to the discussion on the scenario of social change wich includes not only sport organizations but also arts, cinema and even public spaces, with the purpose of trying to provide future reflexions.
Emergência de plantulas de Anacardium humile A. St.-Hil. (Anacardiaceae) avaliada por meio de amostras pequenas
Carvalho, Maristela P.;Santana, Denise G.;Ranal, Marli A.;
Brazilian Journal of Botany , 2005, DOI: 10.1590/S0100-84042005000300018
Abstract: anacardium humile has low capacity for fruit production, limiting the application of experimental techniques, broadly used in the analysis of seed germination. thus, the purpose of this paper was to introduce the statistical theory of small samples to the study of the seedling emergence of this species. cashew nuts of different individuals were randomly collected, being submitted to scarification by abrasion of the pericarp near the pedicel; scarification in the same manner followed by washing in water for 24 hours, and intact cashew nuts as control treatment. the cashew nuts (50 per treatment) were sowed at 1 cm depth, in vermiculite moistened with distilled water at field capacity. the experiment was carried out under continuous fluorescent white lamps (21.8 μmol m-2 s-1), at 25 oc. the emergence (%) presented approximated normal distribution for all treatments and they did not differ significantly by student t test (emergence between 70% and 76%). seedlings emerged from scarified cashew nuts washed in water presented shorter mean emergence time (16.3 days) and consequently higher mean emergence rate (0.0613 day1) in relation to the other treatments. the uncertainty values far from zero (i > 3.28 bits) and values of z near zero (z < 0.095) indicated low seedling emergence synchrony for this species. the results obtained showed that by using reduced number of cashew nuts it was possible to infer about seedling emergence process without violation of the statistical principles and assumptions.
