Abstract: in this paper, we aimed to contextualize the gastronomic development and changes in spatial meanings, considering the tactics and strategies involved in this process. the everyday practices reconstruct continuously the culinary meanings and, in the case of the district of macacos, a city in the state of minas gerais, 30 km from belo horizonte, we observed that a mosaic of gastronomic offers reflects the everyday practices and projects certain identity of the district to tourists. macacos became a regional gastronomic pole or route at the end of twentieth century, but it has already developed a lot in this sector and counts on several restaurants of regional and international food. in this context, we wanted to know: how gastronomic strategies and tactics are built in macacos? in order to answer this question, we analyzed documents, the restaurants' menu and we interviewed the restaurants' owners and employees. by the end, we found out that polyphony was the strategy in all gastronomic activities in macacos. however, we observed a differentiation associated to the restaurant owners' origin: the entrepreneurs from macacos tended to work with regional food and the entrepreneurs from outside the district tended to work with what they classified as "international food". in the coexistence of typical and exotic, polyphony and pictoriality are relevant practices.

Abstract: Objetivamos neste trabalho contextualizar o desenvolvimento da gastronomia e as mudan as de significado espacial, observando as táticas e estratégias envolvidas nesse processo. As práticas cotidianas reconstroem continuamente os significados da culinária, e, no caso de Macacos, distrito mineiro, a 30 km de Belo Horizonte, observamos que o mosaico de ofertas gastron micas reflete tais práticas e projeta certa identidade do distrito aos turistas. Macacos apareceu como um polo ou roteiro gastron mico regional a partir de finais do século XX, mas já se desenvolveu bastante nessa área e conta com restaurantes de culinária mineira e internacional. Nesse contexto, procuramos saber: como se constroem as estratégias e táticas gastron micas em Macacos? Para tanto, foram feitas consultas documentais, consultas às cartas dos restaurantes e entrevistas com donos e funcionários. Ao final, encontramos que a polifonia era a estratégia em todas as atividades gastron micas em Macacos. Todavia, percebemos uma diferencia o associada à origem dos donos dos restaurantes: os empreendedores autóctones tendem a trabalhar com a elabora o de comida típica mineira, ao passo que os forasteiros, em geral, fazem quest o de se classificarem como inseridos em uma gastronomia internacional. Na coexistência do típico e do exótico, a polifonia e a pictoricidade s o práticas evidenciadas.

Abstract: in this paper, our main goal was to present a discussion about small familial organizations inside mercad?o de madureira (in rio de janeiro). the discussion is based on a study of multiple cases. we intended to comprehend how families could survive facing contextual changes along almost a century. we wanted to know which tactics and strategies were used by managers and other subjects involved in familial organizations in order to guarantee their survival. we worked, in this case, with the concept of strategy as practice, which is associated with the perspective of everyday life and influences individuals' practical knowledge. we also based on social representations as a way to relate representation and action. in order to reach our goals, we chose a qualitative methodological approach, because this would be the most appropriate one, considering our theoretical perspective of strategy as practice and process. qualitative approach allows better observations, arising from associations between research subjects, research locus and researcher. empirical work was developed by in loco interviews. conversations were recorded, transcripted and then analyzed according to elements proposed by discourse analysis area. data analysis took into account the identification of implicit ideas (presupposed and inferred), thematic courses and polyphony. from interpretation of collected data, we could comprehend that strategic processes performed by organizational managers are metamorphosed in an everyday basis, continuing carving and polishing practical knowledge and space itself. in addition, we could understand that strategic practices are not delineated only inside familial organizations, because they are never alone in everyday practices. tactics and strategies are supported by each other. in this way, they all together end up building the mercad?o de madureira organization. in a nutshell, we observed that, besides all perspectives pointed by spatial representation literature, it is

Abstract: This article proposes to analyze the street vendors’ identity in the city of Belo Horizonte, MinasGerais, during their geographical change from the streets to the so called Shoppings Populares.This study uses discourse analysis to understand this process, as a methodological instrument. Thediscourses used were extracted from the widespreadnewspapers and some interviews with thestreet vendors. It was used the categories of identity, territory and space. Abstract: O objetivo deste artigo é apresentar uma discuss o, por meio de um estudo multicasos, acerca de como pequenas organiza es familiares, inseridas no Mercad o de Madureira (Rio de Janeiro), conseguiram e conseguem sobreviver tendo em vista as mudan as contextuais as quais essas organiza es foram submetidas ao longo de quase um século de história. Objetivou-se saber quais s o as táticas e estratégias empreendidas pelos gestores e demais sujeitos envolvidos nessas organiza es familiares que lhes permitiram a sobrevivência. Trabalhou-se com o conceito de estratégia como prática, que se associa à perspectiva do cotidiano e do contexto, que influenciam os saberes-fazeres dos indivíduos. Buscou-se na no o de representa es sociais um caminho pela rela o entre representa o e a o. A abordagem metodológica foi qualitativa, pois entendeu-se que seria a alternativa mais adequada à perspectiva teórica da estratégia como prática e como processo, permitindo maior riqueza das observa es advindas da associa o entre sujeito de pesquisa, locus de trabalho e pesquisador. A pesquisa empírica foi desenvolvida a partir de entrevistas, que foram gravadas, transcritas e analisadas de acordo com caminhos propostos no ambito da análise do discurso. Foram feitas análises quanto aos implícitos, aos percursos temáticos e à existência de polifonia. Com base nos dados analisados, compreendeu-se que os processos estratégicos empreendidos pelos gestores das organiza es s o cotidianamente metamorfoseados, esculpindo e polindo cada vez mais os saberes-fazeres e o próprio espa o. Além disso, compreendeu-se que as práticas estratégicas n o s o delineadas apenas nas organiza es familiares, pois elas nunca est o sozinhas em suas práticas cotidianas. As táticas e estratégias sustentam-se umas às outras, configurando assim a organiza o Mercad o de Madureira. O trabalho contribui para os estudos de estratégia no sentido de mostrar que, além das perspectivas apontadas pelos autores que tratam da quest o da representa o espacial, é necessário ainda um foco sobre tal representa o, tanto física como simbólica, tendo sido o espa o simbólico um elemento-chave para a pesquisa. A originalidade deste trabalho está na forma que busca estudar a estratégia, fugindo da perspectiva de que os sujeitos – gestores de qualquer negócio – n o podem desenvolver práticas sociais em que se intercalam estratégias e táticas de sobrevivência do negócio e da família.

Abstract: the aim of this case study was to discuss if the recent process of turistification has influenced the daily life of the residents of s?o bartolomeu, district of ouro preto (mina gerais), brazil, and if the growth of tourism has given a new shape to the spatial, territorial and symbolic environment. therefore, a qualitative study was undertaken by means of data collection using participative observation and interviews interpreted as a tool of the discourse analysis. the main items here presented are the tourist [des] territorialization and the environmental perception. this study has shown that the process of turistification in the district has changed aspects of every day life that can be seen from the perceptions locals have of their environment.

Abstract: Este artigo apresenta uma vis o crítica acerca da mudan a dos camel s para os de nominados shoppings populares, implementados pela Prefeitura Municipal de Belo Horizonte, com a finalidade de cumprir o código de conduta do projeto "Centro Vivo". Argumenta-se que a atitude da prefeitura foi de limpeza da cidade, provocando uma desarticula o do trabalho informal dos camel s e "toreros", bem como aumentando a precariedade de suas condi es políticas e sociais de trabalho. O argumento baseia-se no discurso da mídia impressa e de algumas atas de reuni o da prefeitura concernentes ao tema. Os autores contrastam o discurso com o dos próprios camel s, que foram entrevistados, a respeito de como percebiam o processo de mudan a para os shoppings e o que isso acarretou em termos do seu trabalho. This article presents a critical view of how peddlers were relocated to the 'popular malls' implemented by the Municipal Government of Belo Horizonte, with the purpose of enforcing the code of project Centro Vivo. The argument is that the officials' intention of cleaning up the city caused a disarticulation of the informal work of the peddlers and 'toreros' and increased the precariousness of their social and political working conditions. The media and city hall discourses were contrasted with the discourse of the peddlers, who were interviewed regarding their perception over this phenomena and its consequences for their work.

Abstract: Este estudio de caso fue realizado en S o Bartolomeu, distrito de Ouro Preto (Minas Gerais) y el objetivo principal fue discutir la manera en que el reciente proceso de turistificación ha influido en la vida cotidiana de sus habitantes. Asimismo, se quiso determinar la forma en que el crecimiento del turismo en S o Bartolomeu provocó la reconfiguración espacial, territorial y simbólica del medioambiente local. Por lo tanto, se realizó una investigación cualitativa recolectando datos a través de la observación participante y la entrevista que fue interpretada con herramientas de análisis del discurso. Los principales temas que aquí se presentan son la [des]territorialización turística y la percepción ambiental. A partir de este estudio se entendió que el proceso de turistificación en el distrito abarcado reconfigura aspectos de lo cotidiano reflejados en las percepciones ambientales de los sujetos. Abstract: El objetivo del presente artículo es debatir la práctica del turismo gastronómico como una estrategia de supervivencia de los antiguos mercados centrales o municipales, a partir de dos estudios de caso: el Mercado Central de Santiago (Chile) y el Mercado Municipal de S o Paulo (Brasil). El abordaje teórico utilizado fue el de las prácticas estratégicas como saberes-haceres que se desprenden de la experiencia y de la cotidianeidad. Dichas estrategias fueran identificadas a partir de las representaciones sociales, entendiendo que este sería el camino viable ya que se trabajó con dos organizaciones complejas constituidas por diversas empresas familiares. Se entiende que esas empresas están formadas por sujetos que interactúan y perfeccionan sus prácticas a partir de las interrelaciones establecidas en el espacio común. Este artículo puede definirse como exploratorio descriptivo, enfocado en la relación entre los sujetos y el discurso hegemónico mediático, a fin de observar la relación entre ellos en cuanto a las representaciones en torno a las estrategias emprendidas. Se utilizó un abordaje cualitativo y para la recolección de datos se hizo uso de la observación, notas periodísticas y entrevistas semi-estructuradas interpretadas con la técnica del análisis del discurso. El eje estratégico utilizado es el turismo gastronómico, el motivador de transformaciones en las representaciones de los comerciantes. Una investigación reflexiva, sobre el pro y contras de las tácticas emprendidas, principalmente en el Mercado Central de Santiago, permitirá un mejor desarrollo de esa práctica estratégica. Abstract: this article aims to discuss culinary tourism as a strategy for the survival of old central markets, using two case studies: mercado central de santiago (the central market of santiago - chile) and mercado municipal de s?o paulo (s?o paulo city market, s?o paulo- brazil). the theoretical approach used was a strategic practice arisen from practice of everyday life and experience. such strategies were found to be in place through the means of social representations. it was believed that this would be the viable way, since two complex organizations comprehending several family organizations were under examination. these organizations are made of subjects who interact and who improve on their practices based on the inter-relations established within the common space of the markets. this article may therefore be regarded as having a descriptive-exploratory character, whose focus is the relationship between the subjects and the hegemonic media discourse with the purpose of observing the relationship between them concerning the representations surrounding the strategies implemented. to this end, a qualitative approach was used collecting data from observations made on the spot, newspapers' reports and semi-structured interviews, which were interpreted by the discourse analysis method. the strategic axis in place was clearly shown to be that of culinary tourism, however still explored in a little sustainable way, generating with plenty of conflicts. the result of this study is a firm belief that getting the subjects to systematically reflect upon the advantages and disadvantages of the tactics in place would provide for improved outcomes of the strategic practice in use.
