Abstract: The process of Recognition and Accreditation of Prior Learning (RAPL) is being consideredone of the most important devices for the qualification of adults in Portugal.This process, that takes place in education centres called New Opportunities Centres,institutes literacy as a nuclear axis of its development: on one hand, the recognition andvalidation of the competencies are made mainly through reading and writing tasks (lifestories, portefolios, etc.) and, on the other hand, the competencies to be recognised regard,ultimately, text comprehension and production (in Science, Maths, Language andCommunication, etc...). In this text we focus the way in which nine coordinators of theseNew Opportunities Centres from the district of Braga, Portugal, see the changes in theways adults relate with literacy practices when they go through the RAPL process. Forthis discussion we take into consideration not only the way literacy is viewed in adulteducation, but also the views about reading and writing that sustain pedagogical practicesin the education centres, as they are described by each coordinator. Among the mainconclusions, we highlight some discontinuities between the guidelines produced at thelevel of the official discourse and the specialised RVCC practices; discontinuities alsobetween the coordinators’ views of literacy and the changes they note in adult literacypractices.

Abstract: the objective of this work was to combine response surface methodology (rsm) with super-modified simplex optimisation for treatment of cases that are interesting for food science and technology through the application of the function of derringer & suich for combined responses. a microcomputer program called multiplex was developed and tested in the multiresponse optimisation of three food systems selected in specialised literature: 1) inactivated lipoxygenase and lipase and preserve phytase activity in barley during soaking; 2) vapor induced puffing in apple dehydration; 3) hexametaphosphate-assisted extraction of flaxseed protein. a rigorous statistics analysis was accomplished in order to test the predictive ability of the models. the super-modified simplex method with automatic initialisation was the instrument for the numerical solution of the function of derringer & suich for combined responses. the program that was developed has show itself to be efficient and trustworthy for the optimisation of multiresponse, and can be executed in microcomputer that has a pc 486 and ms-dos.

Abstract: The space and time discretization of the finite element method was optimized for following application in multicomponent diffusion simulation during Prato cheese salting, a traditional and much consumed foodstuff in Brazil originated from the European Gouda cheese. It was ascertained that the correct choice of the time intervals and mesh is fundamental in applying the method. After optimization the simulated results were in agreement with the experimental and calculated results by the analytical method, showing that the method is a promising tool for simulation of diffusive processes when two solutes are considered, and is also a much less restrictive technique than the analytical method. Neste trabalho foi realizada a otimiza o da discretiza o espa o-temporal do método de elementos finitos para sua posterior aplica o na simula o da difus o multicomponente durante a salda de queijo prato, um alimento tradicional e muito consumido no Brasil e similar ao queijo Gouda. Foi verificado que a escolha correta dos intervalos de tempo e da malha é fundamental para a aplica o do método. Após a otimiza o os resultados simulados concordaram com os experimentais e estimados pelo método analítico. Mostrando que o método é uma ferramenta promissora para a simula o de processos difusivos quando dois solutos s o considerados, além de ser uma técnica muito menosrestritiva que o método analítico.

Abstract: O presente trabalho teve como objetivo combinar modelagem pela superfície de resposta com otimiza o simplex supermodificado, para tratamento de casos de interesse na ciência e tecnologia de alimentos, com o emprego da fun o de Derringer & Suich para respostas combinadas. Um programa para microinformática, denominado MULTIPLEX, foi desenvolvido e testado na otimiza o multirresposta de três sistemas alimentares selecionados na literatura especializada: 1) inativa o da lipoxigenase e lipase preservando-se a atividade da fitase durante o processamento hidrotérmico da cevada; 2) desidrata o instantanea de ma por expans o; 3) extra o da proteína da linha a com hexametafosfato. Uma análise estatística rigorosa foi realizada para testar a capacidade preditiva dos modelos. O método simplex supermodificado, com inicializa o automática, foi o instrumento para a solu o numérica da fun o de Derringer & Suich para respostas combinadas. O programa desenvolvido mostrou ser eficiente e confiável para a otimiza o de multirrespostas, sendo executável em microcomputador que disponha de processador 486 e ambiente MS-DOS.
Biotechnological production of bioflavors and functional sugars

Abstract: bioflavors and oligosaccharides are two classes of substances that may be produced biotechnologically through microbial bioprocesses. these compounds have attracted the interest of pharmaceutical and food industries not only due to their technological properties (sweetening/fiber or flavoring, respectively), but also as a consequence of other functional properties such as, for example, health promoting benefits. the use of agro-industrial residues as substrates in biotechnological processes seems to be a valuable alternative in helping to overcome the high manufacturing costs of industrial fermentations. this manuscript reviews the most important advances in biotechnological production of bioflavors and oligosaccharides. the use of some agro-industrial residues in such processes is also cited and discussed, showing that this is a rising trend in biotechnology.

Abstract: dentistry nowadays can count on a wide range of resources to treat patients. with the development of adhesive materials and several newly introduced restorative techniques, the dental structure can be subjected to different sorts of surface treatment. the use of aluminum oxide flow at high speed to remove dental structure was described by black in 1945, however, the literature regarding the use of aluminum oxide jet is still scarce, as far as the alterations occurring in the dental structure are concerned. at the present, with the development of new abrasive air equipment, microabrasion has been added to several adhesive restorative techniques, in the preparation of the dental surface and of inner surfaces of indirect restorations, which will receive the application of adhesive materials. the aim of this study was to assess the alterations produced by abrasive air applied on the dental enamel by means of electronic microscopy, taking into consideration micromorphological surface alterations. the importance of this study is based on the fact that alternative surface treatments both chemical and mechanical could be introduced in surface priming, including dental enamel priming.

Abstract: The trace mineral trivalent chromium (Cr3+) is an essential nutrient involved in the regulation of carbohydrate, lipid and protein metabolism via an enhancement of insulin action. The present work had as objective to characterize histopathologically and histometrically the hepatic alterations of female Wistar rats, determined by the chromium III administration in drinking water. Adult rats received ration and drinking water ad libitum containing 300 or 500 mg/l chromium III during 4 months. Control animals received only water and ration. All animals were sacrificed by lethal dose of anesthetic. Samples of liver were fixed in 10% formalin for 24 h. Tissues for microscopical pathology were processed using standard procedures. Paraffin sections prepared at 6 μm were stained with haematoxylin and eosin and PAS. Besides the histopathological exam, histometrical techniques were used. The blood was collected and processed for hematological study. Histopathological analysis revealed periportal, midzonal and pericentrilobular zones with parenchyma cells with varying degrees of vacuolation. Many hepatocytes are ballooned and the nuclei were in lysis. The centrilobular vein was dilated and congested. Dilated sinusoids containing erythrocytes were observed. The portal area showed fibrosis, biliar duct proliferation with small cells. Histometric study showed increased cytoplasm and cell volumes, and small values for number of hepatocytes per mm3. Lymphopenia was observed in 500 mg/l Cr3+/l treated animals. These results indicate that the chromium III has a direct participation in liver structures alterations El cromo trivalente (Cr3+) es un nutriente esencial involucrado en la regulación del metabolismo de carbohidratos, lípidos y proteínas, a través de un estímulo a la acción de la insulina. El objetivo del presente trabajo fue caracterizar histopatológicamente e histométricamente las alteraciones hepáticas de ratas Wistar hembras, provocadas por la administración de cromo III en agua potable. Ratas adultas recibieron ración y agua potable ad libitum, conteniendo 300 ó 500 mg/l de cromo III, durante 4 meses. Los animales control recibieron solo agua y ración. Todos los animales fueron sacrificados con dosis letal de anestésico. Muestras de hígado, fijadas en formol al 10% por 24 h, fueron cortadas a 6 μm y te idas con hematoxilina y eosina o PAS. Además del examen histopatológico, fueron usadas técnicas histométricas. La sangue fue recolectada y procesada para estudio hematológico. Gradients methods for simultaneous optimizations: case studies for food systems/ Métodos de gradiente para otimiza o simultanea: estudo de casos de sistemas alimentares

Abstract: The objective of this work was to develop a software with efficient gradient methods for foods systems multiresponse optimization using the Derringer & Suich function, including a 4th order polynomial equation to remove non-differentiable points in that function. The software was tested in three food systems selected in specialized literature: 1) inactivated lipoxygenase and lipase and preserve phytase activity in barley during soaking; 2) simultaneous optimization of response in protein mixture formulation; 3) simultaneous optimization of parameters used in roasting process of corn germ to be used as an ingredient in foods. The program that was developed has show itself to be efficient and trustworthy for the optimization of multiresponse. Este trabalho teve como objetivo desenvolver um aplicativo com métodos de gradiente eficazes na otimiza o de sistemas alimentares com respostas múltiplas utilizando as fun es de Derringer & Suich, incluindo um polin mio de 4o grau para a remo o das descontinuidades dessas fun es. O aplicativo foi testado em três sistemas alimentares selecionados na literatura especializada: 1) inativa o da lipoxigenase e lípase preservando-se a atividade da fitase durante o processamento hidrotérmico da cevada; 2) otimiza o simultanea das respostas na formula o de misturas de proteínas; 3) otimiza o simultanea dos parametros de torra o de gérmen de milho visando aplica o como ingrediente em alimentos. O programa desenvolvido mostrou ser eficiente e confiável para a otimiza o em sistemas alimentares multirresposta.

Abstract: A method for analysis of nitrate by complexation of salicylic acid has been evaluated. Determination of nitrate levels in kale, spinach, wild chicory, rocket, chicory commercialized in urban area of Londrina (Brazil) has been realized. Foi avaliado o método de análise de nitrato por complexa o do ácido salicílico e realizada a determina o do teor de nitrato em amostras de couve, espinafre, almeir o, rúcula e chicória recolhidas em feiras livres da cidade de Londrina.
