Processing of Snack of Goat Chub Chili (Capsicum annuum L.) with Formulations of Tomato and Tomato-Marjoram  [PDF]

Abstract: The cultivation of goat chili has potentially increased in Chile, due to different varieties of gourmet products made with it; for this reason, new industrial projects are sought to the growing volume to adapt them to the new trends in consumption habits, mainly focused on achieving an attractive meal, a fast preparation and consumption, while nutrients are provided to offer some benefits for human health. The “snacks” products that include the use of fruit satisfactorily respond to these requirements, in addition to providing marketing alternatives to the surplus of fruit exports. For this reason, the present test, consisting of the processing of snacks based on goat chub chili with the addition of tomato and marjoram, was carried out to increase the palatability and the sensorial quality of the final product. The following formulations were used: only chili (T1); chili and tomato (T2); chili, tomato and marjoram (T3). The latter one was characterized by a good flavor and aroma. A large amount of the fruit water content had been removed by drying it with forced hot air. A product without chemical preserves was obtained, with physical and chemical parameters similar to those required by similar foods existing on the market today. In sensorial terms, the formulation to which marjoram was added showed good sensorial and acceptability attributes, highlighting them from the rest of the treatments. The snack color was maintained after the dehydration process, according to panelists.

Abstract: the extra virgin olive oil is extracted mechanically from the olive fruit (olea europaea l.) by methods of maturation, beating and centrifugation, adding water with the purpose of facilitating the extraction of the oil contained in the pulp of the fruit, and it must have a smaller or equal acidity to 0.8% expressed in oleic acid and one smaller or equal organoleptic score to 6.5 points, thus conserving valuable poliphenolic compounds of the original fruit. that grants a great quality to it, in addition to an excellent taste and aroma, which are transmitted in its bitterness and sharpness. thus it is necessary to determine the quality of the national oil. the present study had the objective of evaluating the effect of the water addition in the elaboration process, on the quality of the finished product, making a chemical and sensorial evaluation. the test was made in the season 2004-2005 in the province of curicó, 7th region, chile. coupage or multivarietal oils were analyzed, coming from different varieties from olives. the evaluation treatments were: t0: 0% of water addition; t1: 20% of water addition; and t2: 30% of water addition. in the treatments t1 and t2, it had a better quality in relation to the control (t0). the treatment t2, with a global index of quality of 8.25 points, presented the best quality, given by a higher organoleptic punctuation and low chemical indexes; differing from treatment t0, that obtained a value of 6.34 points, based on the current regulation (ce n°1989/03, the regulation coi res-4/75- iv/96 and the national regulation nch107of2001 (inn, 2001)).

Abstract: the strawberry (fragaria spp.) is the most common berry fruit consumed in the world, and in chile two species are produced (fragaria chiloensis l. and fragaria ananassa l. duch). its main problem is the short shell life that shows in post-harvest. this hinders the commercialization and export. the use of modified atmosphere (ma) by means of a plastic film arises like an alternative that would allow to extend the post-harvest and the conservation of the sensorial properties of the fruits of fragaria chiloensis l. the present study had as an objective to evaluate the effectiveness of the bags of ma in the preservation of the sensorial properties and to increase the shell life of fragaria chiloensis l. fruits of fragaria chiloensis l. were harvested in curepto near the coast of the seventh region of chile and then analyzed in the science lab of the universidad católica del maule in curicó. two treatments were made with ma using plastic films (ff 604 de 200μ upvc/70μ ldpe), in the t1 and t2, besides a witness t0. (t1): fruits were selected and processed at field temperature (18°c) in ma bags, and then stored at 0°c and 90% rh; (t2): fruits were selected at 18°c, processed and pre-cooled until pulp temperature of 2°c, in ma bags, and stored at 0°c with 90% rh; (t0): fruits selected at 18°c, processed without ma and stored at 0°c with 90% rh. the concentrations of carbon dioxide and oxygen were measured, and also the sensory attributes like flavor, color, texture and general acceptance all of this for a period of 11 days. t1 y t2, allowed to avoid using the pre-cooled in fruits without any significant change in the organoleptic properties they have. t1 y t2 also contributed, according to the panelist, to maintain the aroma and texture of the fruits, but not the color and flavor.

Abstract: El aceite de oliva extravirgen es extraído mecánicamente del fruto del Olivo (Olea europaea L.), por métodos de molturación, batido y centrifugación, agregando agua con la finalidad de facilitar la extracción del aceite contenido en la pulpa del fruto, y debe tener una acidez menor o igual al 0,8% expresada en ácido oleico y una puntuación organoléptica menor o igual a 6,5 puntos, conservando así valiosos compuestos polifenólicos del fruto originario, y que le otorga una gran calidad, además de un excelente gusto y aroma, los que se traducen en su amargor y picor, por lo cual es necesario determinar la calidad del aceite nacional. El presente estudio tuvo como objetivo evaluar el efecto de la adición de agua en el proceso de elaboración, sobre la calidad del producto terminado, realizando una evaluación química y sensorial. El ensayo se realizó en la temporada 2004-2005 en la provincia de Curicó, VII Región, Chile. Se analizaron aceites "coupages o multivarietales", procedentes de diferentes variedades de olivas. Los tratamientos evaluados fueron: T0: 0% de adición de agua; T1: 20% de adición de agua; y T2: 30% de adición de agua. En los tratamientos T1 y T2 existió una mejor calidad respecto al testigo (T0). El tratamiento T2, con un índice global de calidad de 8,25 puntos, presentó la mejor calidad, dado por su mayor puntuación organoléptica y bajos índices químicos, a diferencia del tratamiento T0, que obtuvo un valor de 6,34 puntos, basándose en la reglamentación vigente (CE No 1989/03, la norma COI Res-4/75-IV/96 y la norma NCh107of2001 (INN, 2001)). Abstract: En Chile se producen dos especies de frutillas, Fragaria chiloensis L. y Fragaria ananassa L. Duch. El uso de atmósfera modificada (AM) mediante una película plástica surge como alternativa que permitiría prolongar la postcosecha y conservación de las propiedades organolépticas de los frutos de Fragaria chiloensis L., altamente perecible. El presente estudio evaluó la efectividad de las bolsas de AM (FF 604 de 200μ UPVC/70μ LDPE) en la conservación de las propiedades sensoriales y en la prolongación de la vida de postcosecha de frutos de F. chiloensis L. producidos en Curepto, VII Región, siendo evaluados durante 11 días los tratamientos: (T1) Fruta seleccionada, embalada a To de campo (18 °C) en bolsa AM, almacenada a 0 °C y 90% HR; (T2) Fruta seleccionada a 18 °C, embalada y preenfriada hasta temperatura de pulpa 2 °C, en bolsa AM, almacenada a 0 °C con 90% HR; (T0) Fruta seleccionada a 18 °C, embalada sin bolsa AM y almacenada a 0 °C y 90% HR. Se evaluó la concentración de CO2 y O2, y los atributos sensoriales: sabor, aroma, firmeza, color y aceptación general. El dise o experimental fue completamente al azar, con cuatro repeticiones y la unidad experimental fueron 800 g de fruta provenientes de dos cestillos de 400 g cada uno. T1 y T2 con AM permitieron prescindir del preenfriado, sin que esto afectara significativamente las propiedades organolépticas de la fruta. La bolsa tipo AM en sus tratamientos T1 y T2 contribuyó, según los panelistas, a mantener el aroma y la firmeza de la fruta, no así respecto del color y sabor. Abstract: RESUMEN: Acu a trata los principales lineamientos de la compleja relación entre economía y política en la Argentina de los noventa. Analizando el proceso de toma de decisiones así como la influencia de distintos actores políticos y sociales desde 1989, explica el resultado de estas políticas y las distintas alternativas. Como conclusión, el autor perfila una nueva matriz política en la Argentina de los noventa. Abstract: Los efectos de la estimulación no se limitan a la conducta ostensible de los organismos sino que incluyen el funcionamiento de su medio interno. Tales efectos se encuentran en un continuo, desde los nocivos hasta los benéficos para la salud. El extremo de los efectos nocivos es la muerte súbita de los sujetos. En este trabajo se describen dos experimentos realizados en el laboratorio del primer autor sobre eventos ambientales conducentes a una muerte súbita en ratas, así como sobre algunos eventos involucrados en alargar su expectativa de vida. Alejándose del extremo de los efectos letales de la estimulación se encuentran otros efectos nocivos que involucran la salud de los sujetos. En este trabajo también se describe un estudio con humanos en el que se exploró la influencia negativa o positiva de otras personas sobre su salud física y mental. Mientras que la contribución principal del trabajo con las ratas fue mostrar que existen variables que promueven la supervivencia en una situación amenazante a la vida, en el estudio con sujetos humanos, la contribución principal fue relacionar los hallazgos con el concepto Pavloviano del Efecto de la Persona.

Abstract: feeding habits of 381 specimens of aculeola nigra and 513 specimens of bythalaelurus canescens were studied. in 121 stomachs of a. nigra and 312 of b. canescens preys were found. individuals were collected as by-catch from the deep-sea crustacean fishery, between 25o20's and 35o43's; from january 1997 to july 2000 off the northern-central chilean coast. the most important prey by index of relative importance and by frequency of occurrence in a. nigra was the benthic deep-sea shrimp heterocarpus reedi; while by number the euphausiid euphausia mucronata and by weight the common hake merluccius gayi were the most important. the deep-sea shrimp h. reedi was also the most important prey of b. canescens, for all feeding indices used. significant differences were found in the habitat where these predators consume their prey, a. nigra eating more on pelagic prey; whereas b. canescens feeds more on benthic prey. a. nigra showed a higher trophic niche breadth, because they predate more on benthic, pelagic and mesopelagic resources; whereas b. canescens feeds primarily on benthic prey. the diet of both species significantly overlapped, suggesting a high competition between them.
