Pectinases yeast production using grape skin as carbon source  [PDF]

Abstract: Pectinases are used in Enology for some different utilities. Enzymatic preparations from moulds are a mixed of different enzymes with strong and unspe-cific activities. Some Saccharomyces cerevisiae pro-duce pectinases which can be used instead of com-mercial preparations. The objectives of this work were to study the enzyme secretion by one Saccharo-myces cerevisiae (CECT 11783) for growing on grape skin (industry oenological by-product) as carbon source. Preliminary experiments showed that the strain produced pectinases for growing on grape skin without any other carbon source. Statistical treat-ment (factorial design 25) was applied to evaluate the influences of related factors (agitation, temperature, presence of peptone and detergent in the medium and time of growth) Variables with the most significant interactions for pectinase production were agitation and nitrogen source concentration. Response surface methodology showed that a first order model was not adequate for results. Nevertheless, the built of a sec-ond order model offered a polynomial equation which surface predicted a maximum of activity (52.68 enzymatic units) for specific values of the studied variables (147.8 rpm of agitation and 15.9 g of pep-tone/ L culture medium).
Cambios en factores relacionados con la transición alimentaria y nutricional en México

Abstract: objectives: to describe the demographic and socioeconomic changes, food availability and food expense in mexico during 1980-2000. methods: from official statistics (population census, fao food balance sheets, family income and expense national survey and economic census) we estimated the evolution of population distribution according to locality size, occupational structure, woman participation in the wage-earning labor force, minimum wage, availability of food establishments and expense in food. results: the percentage of the population that lives in urban areas has increased, they are employed in the tertiary sector, womens participation in the labor market has increased but real minimum wages have decreased. vegetables, oleaginous, oils, fish and seafood availability have decreased whereas animal fat, vegetables, fruits, softdrinks, meats and egg availability have increased. the number of inexpensive restaurants (cocinas económicas and fondas) has also increased. food expenses have decreased while amount of money spent in food consumed away from home has increased. conclusions: in mexico, the growth in urban areas and the tertiary job sector shows a parallel growth in the availability of high fat and protein food, a greater diet variety and more opportunities to consume food not prepared in the home. on the other hand, the sale of equipment and places designed for recreational physical activity have increased. by reducing employment in the primary sector it is foreseeable that labor intensive physical activity will become less important overtime.

Abstract:

Mild hydrochloric acid hydrolysis of i-carrageenan from Eucheuma spinosum yielded two oligosaccharides of sulfated tetrasaccharide structure. These were characterized by Fourier Transform Infrared Spectroscopy (FT-IR), Nuclear Magnetic Resonance (NMR) and Electrospray Ionization Mass Spectrometry (ESIMS). Both oligosaccharides have structure of b-D-galactopyranose(Galp)4S-(14)-α-D-AnGalp2S-(13)-b-D-galactopyranose Galp)4S-(14)-α-D-AnGalp2S-(13). Application of the resulting oligosaccharides on protein delivery system in terms of encapsulation efficiency was performed.

Abstract: this article aims at showing that the concept of identity, including its politicization, is no more than the tip of the iceberg for understanding much more complicated processes of individuation and communalization that diversify, and at the same time assemble, what is understood and felt as "being mapuche today". to do so, it explores factors that influence the diverse proposals and responses that arise in mapuche cultural politics, focusing on pu wece, or young people's, reflections and positionalities. for this analysis, i use some specific concepts (national and provincial formations of alterity, state geographies of inclusion/exclusion, structured mobilities, aboriginality) that have been developed in previous works, and introduce the concept of mapuche formations of self as structured and structuring articulations of individuality in terms of subjectivity, identity and agency.

Abstract: this article aims to review some knowledge derived from performative theories of identity to reflect on the performativity of the theories. even though it is vital to critically examine the capacity of agency and materiality that carries scientific discourse - a discourse authorized by excellence, especially when it takes place more in the center than at the margins of the hegemonic activity - one of the questions that i want to offer and share is if the notion of performativity is the best way of doing so. taking constructivism as a quasi posture of common sense in contemporary social investigators, i am interested in revising some of their regulatory fictions - like the one of contrastivity - to point out certain theoretical, political and ethnographic effects that result from basing analysis on a "cliché of performativity".

Abstract: starting with an analysis of avatar, the movie, and its various repercussions, i examine in this paper the feeling and cosmopolitical views this blockbuster seems to have arisen, and i identify the perspectives on indigenous alterity that seem to be implied and displayed by what i call a metropolitan alternativism and an alternative cosmopolitism. after exploring several parallel anthropological debates dividing scholarship when it comes to ponder the collateral effects of the current recognition and politization politics of cultural difference, i reflect on the effects the various policies of translation and critical thought imply, at least from the perspective of those among us who are located, and making anthropology at and for the south of the global south.

Abstract: A partir del análisis de la película Avatar y de sus distintas repercusiones, examino en este artículo las estructuras de sentimiento y cosmopolíticas que este éxito de taquilla parece haber movilizado, e identifico qué perspectivas sobre la alteridad indígena parecen quedar implicadas y desplegadas por lo que defino como Alternativismo Metropolitano y como Cosmopolitismo Alter-nativo. Luego de explorar algunos debates antropológicos que se dan en paralelo y que dividen el campo académico al momento de sopesar los efectos colaterales de las actuales políticas de reconocimiento y de politización de las diferencias culturales, reflexiono sobre las implicaciones de diversas políticas de traducción y de pensamiento crítico conllevan, al menos desde la perspectiva de quienes estamos localizados y hacemos antropología en y para el sur del Sur Global.

Abstract: Este artículo se propone repasar algunos aprendizajes derivados de las teorías performativas de la identidad para reflexionar sobre la performatividad de las teorías. Aún cuando es vital examinar críticamente la capacidad de agencia y materialidad que portan los discursos científicos discursos por excelencia autorizados sobre todo cuando se inscriben en el centro más que en los márgenes del quehacer hegemónico una de las preguntas que busco colocar y compartir es si la noción de performatividad es la mejor manera de hacerlo. Tomando el constructivismo como casi postura de sentido común en los investigadores sociales contemporáneos, me interesa revisar algunas de sus ficciones reguladoras como la de la contrastividad para se alar ciertos efectos teóricos, políticos y etnográficos que resultan de basar los análisis en una performatividad cliché
Rights with Capabilities: Towards a Social Justice Framework for Migrant Activism

Abstract: The paradigm of rights, established throughout the academic, policy and migrant activism arenas, governs the protection of vulnerable migrant workers against abuse. To what extent this approach has achieved social justice for the migrant worker in the current global political economy climate is, however, uncertain. In analyzing the use of rights in migrant activism in Hong Kong, this paper shows the limitation of rights in the migrant experience at the same time as it shows how a new paradigm based on the Capablities Approach could provide a more appropriate framework from which to achieve social justice for the migrant worker.

Abstract: Este artículo apunta a mostrar que el concepto de identidad e incluso el de su politización no son más que una punta de iceberg para entender procesos mucho más complejos de individuación y comunalización que tornan diverso y a la vez ensamblan lo que se entiende y siente en torno a "ser mapuche hoy". Para ello se exploran factores que influyen en la diversificación de propuestas y respuestas al momento de fijar o aceptar políticas culturales para visibilizar al Pueblo Mapuche, haciendo foco en reflexiones y posicionamientos de los pu wece o jóvenes y en los diálogos explícitos e implícitos de crítica o apego que mantienen con otras perspectivas. El análisis se apoya en algunos conceptos explicativos anidados (formaciones nacionales y provinciales de alteridad, geografías estatales de exclusión/inclusión, movilidades estructuradas, aboriginalidad) que se han desarrollado en trabajos anteriores, e introduce el de formaciones Mapuche de sí, en tanto articulaciones no azarosas de individuación en términos de subjetividad, identidad y agencia.
